THE BEST HEALTHY CHOCOLATE GRANOLA

The Best Healthy Chocolate Granola image

This Healthy Chocolate Granola recipe is super-easy to make, naturally sweetened with honey or maple syrup, and soooo chocolatey and delicious.

Provided by Ali

Time 35m

Number Of Ingredients 9

4 cups old-fashioned oats*
1 cup slivered almonds (or your preferred nuts)
1/3 cup unsweetened cocoa powder
1 teaspoon fine sea salt
1/2 cup melted coconut oil
1/2 cup maple syrup
2 teaspoons vanilla extract
2/3 cup unsweetened flaked coconut (or 1/2 cup shredded coconut)
1/2 cup semisweet chocolate chips (optional)

Steps:

  • Heat oven to 350°F. Line a large baking sheet with parchment paper, and set aside.
  • In a large mixing bowl, stir together oats, almonds, cocoa powder and sea salt until evenly combined.
  • In a separate mixing cup, stir together the melted coconut oil, maple syrup and vanilla extract until combined. Pour the coconut oil mixture into the oats mixture, and stir until evenly combined.
  • Spread the granola out evenly on the prepared baking sheet. Bake for 20 minutes, stirring once halfway through. Then remove from the oven, give the mixture a good stir, then sprinkle the coconut evenly on top. Bake for 5 more minutes, until the granola is lightly toasted and golden.
  • Remove baking sheet from the oven and transfer to a wire baking rack. Let cool until the granola reaches room temperature. Then stir in the chocolate chips and/or any other add-ins that you prefer.
  • Serve immediately, or store in an airtight container at room temperature for up to 1 month.

OLIVE OIL, SEA SALT AND LIL' BITS OF CHOCOLATE GRANOLA

Olive Oil, Sea Salt and Lil' Bits of Chocolate Granola image

Before I became a mom, I never craved or even thought about chocolate at breakfast. But somehow, once a second kiddo came along, chocolate became my around-the-clock jam (these kids wear me out!). I'm still cautious about just how decadent I will let things get at breakfast-but this chocolate granola tows the line between responsible and decadent perfectly. The kids, Andras and I are hooked on this just-chocolatey-enough homemade granola, which is loaded with nutrients thanks to the oats, millet, nuts and seeds. And it's responsibly sweetened, too, using maple syrup and coconut sugar instead of loads of white sugar, and olive oil instead of butter. It's crunchy, satisfying and wonderful any time of the day. We keep it in jars on the counter for easy breakfast-it's excellent sprinkled over yogurt with fresh bananas, sliced pears, halved figs or saucy raspberry spoon jam (see below). It's also a great late-night snack eaten right out of the hand (it tastes like crumbled cookies!) or sprinkled over ice cream. Of course, it also makes an excellent gift, so we always make big batches so it's ready for any of the above.

Provided by Sarah Copeland

Time 1h30m

Yield 8 cups

Number Of Ingredients 16

2 3/4 cups old-fashioned rolled oats
1 cup millet
3/4 cup pecan halves or almonds, chopped
1/2 cup cocoa powder
2 tablespoons sesame seeds
6 tablespoons pure maple syrup
6 tablespoons extra-virgin olive oil or coconut oil
1/2 cup packed light or dark brown sugar or coconut sugar
2 teaspoons flaky sea salt
1 cup miniature chocolate chips or bittersweet chocolate, cut into small pieces
1 tablespoon chia seeds
Whole-milk Greek yogurt, for serving
Saucy Raspberry Spoon Jam, for serving, recipe follows
One 12-ounce bag frozen raspberries
3 tablespoons pure maple syrup
One 1-inch coin fresh ginger, optional

Steps:

  • Preheat the oven to 300 degrees F. In a large bowl, stir together the oats, millet, pecans, cocoa powder and sesame seeds. In a small pot, combine the maple syrup, oil, sugar and sea salt and cook over low heat until the sugar dissolves. Pour the syrup mixture into the large bowl with the oat mixture and stir to combine. Spread the mixture out on a parchment-lined baking sheet.
  • Bake, stirring occasionally, until golden and crisp, 35 to 40 minutes. Let the granola cool slightly, stirring and spreading it out on the baking sheet with a spatula to speed the cooling time and to allow the granola to form clumps. Sprinkle over the chocolate and chia seeds and stir (or scooch around on the baking sheet) to let the chocolate melt a little and the granola to continue forming some small clumps. Cool completely, until the chocolate is set and the granola is crunchy and at room temperature, about 30 minutes. Store in an air-tight container (such as a glass jar with tight-fitting lid) at room temperature up to 2 weeks or freeze up to 5 weeks.
  • Combine the berries, maple syrup and ginger in a small pot over medium-high heat. Stir occasionally until the berries soften and weep, releasing their juices (if they are very dry, you may need to add a teaspoon of water). Cook until the berries are just soft and juicy, but not too runny, 15 to 20 minutes, depending on your desired thickness. Remove the ginger and discard. Serve with yogurt and granola, or over warm porridge. Store any leftovers in a clean jar with a lid in the refrigerator up to 1 week. Makes 1 cup.

  • To a food processor (or mixing bowl), add the oats, nuts, coconut, chia seeds, coconut sugar, salt, and cocoa powder. Pulse a few times (or stir) to combine.
  • In a small saucepan over medium-low heat, warm the coconut oil and maple syrup until melted and combined. Pour over the dry ingredients and mix or stir well. If using a food processor, this breaks down the oats and nuts a bit more so it's a finer texture, but this is optional.
  • Spread the mixture evenly onto a baking sheet (or more baking sheets if making a larger batch) and bake for 17-24 minutes (or until fragrant and deep golden brown), stirring a bit near the halfway point to ensure even baking.
