GARLIC OLIVE OIL PASTA WITH TOMATOES AND CHICKEN
This is an easy pasta recipe with tons of flavor. It's an adaptation of simple olive oil, garlic, and pasta but elevated to another level.

- In a medium size skillet add 1 can chicken broth, cubed raw chicken breast, and halved garlic. Cook on med low covered for 15 minutes or until chicken is done. Remove chicken only and place on plate to cool.
- Meanwhile in a pot of boiling water, add 2 handfuls of salt and cook spaghetti. Drain. You can also half the amount of pasta and still use the same amount of the other ingredients and it turns out great if you are serving 2 people.
- In a large skillet over medium low heat saute garlic, parsley, red pepper flakes and tomatoes in olive oil about 10 to 15 minutes or until garlic is golden.
- Melt butter in a bowl in microwave, about 30 seconds.
- Toss pasta with chicken, butter, and garlic oil mixture.
OLIVE OIL CHICKEN SPAGHETTI
came up with this a coupla years ago. it was a few days before payday, and i had to get creative with what i had on hand lol. ended up a favorite meal. amounts are an estimate, because i've always just thrown in whatever looks right.

Steps:
- boil spaghetti in salted water.
- coat bottom of large skillet or wok (i use a wok) with olive oil.
- add minced garlic.
- heat over medium high until hot.
- add chicken.
- sprinkle on italian seasoning, poultry seasoning, and salt.
- cook through, stirring chicken frequently.
- when chicken is cooked through, add the butter, and about 3 tablespoons additional olive oil.
- when the butter and oil have melted together, drain spaghetti and toss with the chicken and oil/butter mixture. serve with hot garlic bread and a salad.

FETTUCCINE WITH CHICKEN AND OLIVES

- Bring a large pot of salted water to a boil. Season the chicken with salt and pepper. Heat the olive oil in another large pot over medium-high heat. Add the chicken and cook, turning once, until browned, about 7 minutes. Move the chicken to one side of the pot.
- Add the onion to the other side of the pot and cook, stirring, until just softened, about 2 minutes. Stir in the garlic; cook 30 seconds. Add the wine, olive brine and rosemary and cook, stirring everything together and scraping up any browned bits, until the liquid is mostly reduced, about 1 minute. Add the tomatoes, 1/2 cup water and a pinch of salt. Bring to a boil, reduce to a simmer and cook until the chicken is cooked through and the sauce is thickened, 8 to 10 minutes. Discard the rosemary; shred the chicken with 2 forks.
- Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
- Add the pasta, olives and 1/2 cup cooking water to the shredded chicken mixture. Cook over medium heat, tossing, until the pasta is well coated, 1 to 2 minutes, adding more cooking water as needed to loosen. Season with salt and pepper and stir in the parsley. Divide among bowls. Drizzle with more olive oil and top with parmesan.

OLIVE OIL CHICKEN
This chicken goes really well with most everything!I usually put it on corn tortillas with cheese,or in a salad,or in pasta with a little more olive oil sprinkled over it.I use cooking spray because its less fatty then using the *real* stuff. Enjoy!

- Put chicken on plate and put in microwave for 3 minutes.
- Turn on stove to medium,pour olive oil into deep frying pan to heat.
- Take chicken breasts out of microwave,rinse off to get rid of excess gook.Cut the chicken breasts into bite-size pieces.
- Throw chicken into pan with the oil,and fry until white on the outside.
- Salt and pepper till you think you've added enough,then sprinkle the chicken with paprika.
- The chicken has the right amount of seasonings when you scrape the spatula on the bottom of the pan little brown bits come off.
- And the chicken is done when you cut the pieces in half and they're done.

GARLIC CHICKEN & PASTA IN OLIVE OIL
Steps:
- Cook pasta based on directions on box.
- In a large skillet, pour some of the olive oil to saute mushrooms and onions (med heat). Cube chicken and add to skillet when onions and mushrooms are almost complete (add more olive oil if needed to stop chicken from sticking). When chicken is almost done cooking, add spinach, minced garlic, garlic gomasio, and the rest of the olive oil. After chicken is cooked, turn heat to low and let sesame seeds and spinach heat up. Stir as needed.
- When the mixture is hot, add the pasta and mix. Serve on a plate and top with favorite cheese.

- Cook spaghetti according to package directions. Meanwhile, in a large resealable plastic bag, combine flour and garlic salt. Add the chicken, a few pieces at a time, and shake to coat., In a large skillet, saute chicken in 1/4 cup oil until no longer pink. Remove and keep warm. Add mushrooms and garlic to the pan; saute until tender. Stir in the wine or broth, tomatoes, parsley, basil, salt, pepper, pepper flakes and reserved chicken; heat through., Drain spaghetti. - Put a pot of salted water on for the pasta. Add the pasta right away and as the water heats up and the pasta softens using a pair of tongs get it all down into the water and stir it a few times with the tongs as it cooks to keep it from sticking together.
- Put a skillet on at medium high and add enough good extra virgin olive oil to coat bottom about 1/8" deep. Cut the chicken into chunks or slices and add it to the skillet. Lightly sprinkle with salt and pepper. Also red pepper flakes if you want it a little spicy. Stir it a few times and cook it until it is browned and firm.
- While the chicken and the pasta are cooking slice or chop the garlic cloves and the parsley if you are using fresh parsley. But if you prefer, using dried parsley flakes works just fine. When the chicken is done push it out to the sides of the skillet and put the garlic in the center. You're going to want enough olive oil to thoroughly coat the pasta when you put in in so if the bottom of the skillet is dry from cooking the chicken then add some more extra virgin olive oil right on to the garlic.
- You don't want the garlic to turn brown let's have it just light golden and translucent - 2-3 minutes. If the pasta is done before the garlic just drain all but about a half cup of the water and put it on the back of the stove. Drizzle a little olive oil and stir it getting the pasta covered with the oil so that it doesn't stick together. As soon as the garlic is ready add the pasta - with the little bit of water that you left in the pot - to the skillet. Put in the grated parmesan and the parsley holding a little back for garnish. Gently stir it all together.
