RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE



Restaurant Style Spaghetti Sauce with Sausage image

It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

4 cloves fresh garlic (chopped)
120 ounces crushed tomato ((four 28-32 ounce cans) San Marzano if possible)
2 pounds sweet Italian sausage
2 bunches fresh basil (finely chopped)
1 medium onion (diced)
1/2 cup olive oil
1 tbsp sea salt (or more to taste)
1/2 tsp black pepper (or more to taste)
1 tbsp sugar (optional)

Steps:

  • In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
  • When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
  • Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
  • add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
  • After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

Steps:

  • 1. In a large stockpot on low-med heat add your olive oil and saute your onions for about 4 minutes,then add your crushed garlic,cook for 2 minutes longer. 2. Then add your water,and tomato products. Be sure to mix everything very well. 3. Add in your spices,and cheese. 4. Cook for 2 1/2 hours covered.Then add in your wine, and cook 30 minutes longer. *Sauce will be thin on first day.* *Also if you use meat it will alter thickness.* *The second day this turns into a nice thick sauce.*

1 tablespoon olive oil
1 small onion (finely chopped)
3 carrots (peeled, chopped)
1 pound ground beef
1/2 pound ground pork ((optional))
1 1/2 pounds tomatoes ((fresh peeled and diced tomatoes or canned San Marzano tomatoes))
6 fresh basil leaves (chopped (or 1-2 tsp. dried basil))
1/2 teaspoon sugar
1 teaspoon Kosher salt
1/2 teaspoon pepper
beef broth ((if needed, to taste))
1 pound spaghetti noodles

Steps:

  • Heat oil on medium heat in a large, deep skillet. Add onion, carrots, and garlic and saute for 1 minute. Add ground beef and pork and continue to cook.
  • When meat is browned and onions are soft, add tomatoes.
  • When tomatoes have softened and have started to release their juices (about 4-5 min) add basil, sugar, salt and pepper (if you are whole tomatoes, mash the them with a potato masher or spatula to release all their juices).
  • Simmer for at least 3 hours (and up to 6 hours), stirring occasionally. The longer you simmer, the better. Important: tomatoes burn easily so keep an eye on them and add beef broth a little at a time to thin sauce if needed.
  • In a large pot, cook spaghetti in salted water to al dente, drain completely and return to pot. Add sauce to the spaghetti noodles and toss until noodles are covered.
  • Serve immediately.

This is a recipe my husband found in a Men's Health Magazine. This is a hearty sauce with lots of flavor. It takes your regular spaghetti sauce and turns it up a notch. My husband loves it!

1 lb extra lean ground beef
2 onions, chopped
1 green bell pepper, chopped
3 garlic cloves, minced
1 cup sliced mushrooms
2 (16 ounce) cans whole tomatoes, undrained
1 (14 ounce) jar spaghetti sauce
2 tablespoons italian seasoning
1 (16 ounce) package spaghetti, cooked as directed

Steps:

  • Brown the meat in a large saucepan. Drain the fat from the meat. Add the chopped onion, green pepper, and garlic to the pot and cook until tender. Pour in the mushrooms, tomatoes, sauce, and seasoning and stir everything together. Simmer for at least 30 minutes. Serve 1/2 c sauce over 1 c spaghetti.

Grandma's sauce is an old recipe that she brought over from Italy. It is a long process with strange ingredients, but they all come together to make the best sauce I have ever had. The long process is worth your trouble the minute you take your first bite.

2 tablespoons olive oil
3 whole garlic cloves, peeled
2 pig's feet
1 pound pork neck bones
2 (6 ounce) cans tomato paste
1 ½ cups water
2 (28 ounce) cans tomato puree
1 tablespoon white sugar
1 teaspoon black pepper
¾ teaspoon baking soda
1 (16 ounce) loaf fresh Italian bread, torn into 2-inch pieces
1 cup water
6 eggs, beaten
1 pound ground pork
1 pound ground veal
1 pound ground beef
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons chopped fresh basil
salt and pepper to taste
6 hard-boiled eggs, peeled

Steps:

  • Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
  • Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
  • Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
  • Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

1 1/2 lb ground beef (i use lean)
1 Tbsp butter
1 Tbsp olive oil
1/2 medium onion chopped
4 clove fresh garlic crushed and chopped
14 oz beef broth reduced sodium
1-28 oz plum canned tomatoes, with liquid, seeds removed
3-8oz can(s) tomato sauce
1-3 inch sprig(s) fresh basil leaves-stem removed
1 tsp fennel seeds
1-2 inch sprig(s) fresh rosemary
1 Tbsp parsley dried
1/4 tsp ground black peppercorns
2 stalk(s) celery minced-pureed
1 bunch red seedless grapes about 50
1-2 Tbsp red wine
1 bell pepper chopped
10 oz jar(s) mushrooms sliced fresh or canned (fresh adds more flavor)
5-6 med clove oven roasted garlic in olive oil crushed and chopped
1 Tbsp dried basil leaves
1 tsp oregano, dried
1 tsp salt to taste
1 bay leaf

Steps:

  • 1. Gather Your Ingredients
  • 2. Saute onion in 1 tbsp of butter on med about 5 minutes or when they start to get brown edges. Add fresh crushed-chopped garlic and saute for 2 min. Don't burn the garlic. Set Aside.
  • 3. Brown 1 pound of the Hamburger in 1 tbsp of olive oil and put in a deep pot or a caldron with onion & garlic and seasoning spices. RESERVE 1/2 POUND OF GROUND BEEF FOR LATER.
  • 4. Crush grapes and remove skins then mince; & mince-puree celery stalks and add to cooked ground beef.
  • 5. Add Chopped Bell pepper
  • 6. Add 2 CANS of the tomato sauce and the de-seeded plum tomatoes with juice and a can of beef broth. Add 1-2 tbsp of red wine. RESERVE 1 CAN OF TOMATO SAUCE FOR LATER.
  • 7. Add mushrooms and cook on a low simmer for 5-6 hours or in a caldron over coals all day long. Stirring every 15-20 minutes.
  • 8. *Important-After 5-6 hours of sauce cooking-Lightly Brown the reserved 1/2 pound of ground beef and add to sauce along with the reserved can of tomato sauce. Add 1/2 tsp of cornstarch and cook for 5 minutes longer.
  • 9. Let the sauce cool & rest over night and then heat & serve any way you want. This is a very meaty sauce that is good with french bread by itself or with spaghetti noodles.

2 tablespoons olive oil
1 onion, chopped

1 (6 ounce) can tomato paste
¾ cup Merlot wine

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
  • Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.
