BBQ BURGERS
Steps:
- Heat a gas or charcoal grill to high. Brush the grill grates with oil.
- For the coleslaw: Combine the carrot, cabbage, onion, vinegar, mayonnaise, oil and sugar in a large bowl. Season with salt and pepper to taste. Let the slaw sit at least 15 minutes before serving.
- For the spice rub: Whisk together the ancho chile powder, paprika, coriander, cumin, mustard powder, oregano, cayenne and 1 teaspoon each salt and pepper in a small bowl.
- For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper. Sprinkle the spice rub on one side of the burgers then brush with oil. Grill, spice rub-side down first, covered, until golden brown and slightly charred, about 4 minutes per side for medium.
- While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
- Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
- Place the burgers on the bottom buns and spoon about 2 tablespoons of the BBQ sauce on each. Top with the sliced pickled jalapenos, some of the coleslaw and the top buns and serve immediately.
ANDREW'S SPICY BBQ BURGERS
This is a hamburger recipe that my partner Andrew came up with one day, just playing in the kitchen. Hope you like it as much as he does.

- Mix all the ingredients together, using breadcrumbs if required, until the meat holds together well.
- Divide into four lumps then gently pack each burger into patties.
- Barbeque for 10-15 minutes or back in a 450F oven for 25 minutes until crispy.
- Serve in a bun with salad.
OLD SCHOOL MEETS NEW -- CHEESY, ONION, SPICY, BBQ BURGER
I call this "Old School" vs "New School" because I use old classic cooking flavors, with some new flavors to make a great burger. Lipton Onion Soup ... yes the classic, then crisp iceberg lettuce (iceberg is a must), frozen onion rings, now make your own if you want - but I cheat and just buy them (Ore Ida). Sharp aged cheddar cheese (if possible, right from the deli), and a jalapeno, BBQ, bacon mayo. And please, get a good burger roll, don't get those skimpy pre-packaged rolls. This recipe will make 8 nice size burgers so you can always cut this in half if you want. It is a great recipe. Serve with chips, dill pickles, potato salad, macaroni salad ... any of your favorites.

- Bacon -- A couple of options for approximately 4-5 slices of bacon. You can either dice and pan saute until golden brown and then let drain on a plate lined with a paper towel; you can oven bake, even buy pre-cooked bacon and then just dice. For that matter, you can buy a bag of real bacon bits cooked and diced. But my favorite is to cook mine on a paper plate lined with a paper towel and topped with a paper towel and cook in the microwave for 3-4 minutes until crisp -- You get the idea. 1/4 cup crispy chopped bacon bits. Use what you like best.
- Burgers -- Make these first. I actually like to freeze mine for a short period. It just firms them up and makes it easy to grill. In a medium size bowl, add the worcestershire, lipton onion soup and water and mix well. Add in the beef and mix (using your hands). Don't over mix. Over mixing can make the burgers tough. Form into 8 patties. Place on a cookie sheet lined with parchment paper or foil. Freeze for about 15-30 minutes. It just firms them up and makes it easier to grill.
- Mayo Dressing -- Burgers are chilling, make the mayo dressing. In a small bowl, mix the mayonnaise, bacon bits (whatever way you made the bacon), BBQ sauce (any brand), and jalapenos. Cover and refrigerate.
- Onion Rings -- Now I cheat - I admit. I hate making them, but if you want to make your own, GO FOR IT! If not, I use frozen Ore Ida rings, just set on the cookie sheet in the oven (follow pkg directions) and bake. Mine took approximately 15 minutes. I started the burgers about half way through cooking the onions so they all came out about the same time. I planned on 3 rings per burger which was about right.
- Grilling -- I use a outdoor grill, but an indoor grill pan would also work great. If not, a large saute pan will be fine. I heat the grill or pan to medium heat drizzled or brushed with the olive oil.
- With your thumb, push in the center of the burger to make an indentation, not all the way through, but a nice indentation. This will prevent the burger from "puffing" up. Grill on side one until golden brown with good grill marks and flip. Finish grilling the burger until medium well or the desired doneness you prefer. I like medium well for burgers. The last minute, add the cheese, cover and remove from the heat. One minute later - the cheese will be melted and you will have the perfect burger.
- Rolls -- The last few seconds I put the rolls on the grill for a light toast. Just a few seconds.
- Burgers -- Slather a little of the BBQ mayo of each side of the rolls, top with a burger, cheese, onion rings, lettuce and the top roll.
- Serve -- Just ENJOY!

RISSOLES
This is an old classic Aussie meal. When I was growing up, we always had Rissoles and onion gravy at last once a week. Give it a try and let me if you like this old favourite. Cook time does not allow for cooking the gravy or the vegetables.

Steps:
- Mix all the ingredients together (except oil), this is best done with your hands.
- Shape into 4 or 6 round balls and dust with the flour.
- Heat the oil on high in a heavy based frying pan until the oil is very hot.
- Place the Rissoles in the hot oil.
- Don't over crowd your pan.
- Make sure the Rissoles do not burn.
- Turn the rissoles over when one side is browned and slightly crispy (make sure they don't burn).
- Cook the other side the same way, turn the heat down to medium and cook through.
- Depending on the thickness of the pan and the size of the rissoles, it may take about 3-4 minutes to cook the Rissoles on each side.
- Do not over cook the Rissoles.
- The cooking time would be similar to cooking American hamburgers.
- Serve with brown meat gravy and mashed potatoes with minted peas.
STUFFED BACON-CHEDDAR BBQ BURGER

- Combine ground round, ground chuck, salt and pepper in a large bowl.
- In another bowl, combine the coarsely shredded sharp cheddar and cooked bacon pieces.
- Let bacon and cheese mixture sit at room temperature for about 20 minutes to get soft.
- Then, shape mixture into balls (for however many burgers you would like to make). Form 2 patties of meat and place one cheese/bacon ball in between them.
- Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
- Cook burgers on grill over medium flame for about 7 minutes on each side.
- While burgers are grilling, slice sweet Vidalia onions and sauté them in a skillet with 1 tablespoon of butter. Once onions become translucent (about 4 minutes), add some sweet barbecue sauce.
- Flip burgers, and baste the cooked side of the patties with the same sweet barbecue sauce used in the onions.
- After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking).
- Baste again with sweet barbecue sauce before removing from grill.
- Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
- To build burger, take toasted bun, add patty, and top with smothered barbecue onions. You can add tomato or lettuce, if you'd like, but the flavors are great without them.
CROATIAN BBQ BURGER (PLJESKAVICA)
This is similar meal like chevapchici but instead of sticks you have a whole burger. There is also little difference in ingredients.

- Take twice grounded beef. Very finely mince garlic and onion and put them into meat. Season it with salt, pepper and paprika. Add water. Mix well with hand and let it stay in refrigerator for 2-3 hours.
- Make burgers and put them on fire. They must be rose inside, do not overdo it.
- Serve with fresh salted onion and bread.
- Grate goat cheese and sprinkle over warm pljeskavica and serve.

- Add first 14 ingredients in large bowl and mix with hands until thoroughly mixed.
- Form into 5 patties and put quarter size dents in the middle of them with your fingers to keep from shrinking.
- In large skillet heat olive oil (divide oil in 2 if you are doing two batches) and place formed patties separated from each other.
- Place onion slices in skillet around the hamburger patties, and cook until tender.
- Cook patties 5 minutes on each side before flipping and continue to cook until done.
- Place hamburger patties on toasted buns and add a sliced tomato to each sandwich. Top burgers with sauteed onion slices. Dress with ketchup and mustard, or horseradish and Dijon.
- Place pickle between zesty oven fries and spicy onion burgers and serve immediately.
