Remember sitting down to Sunday supper of a platter heaped with potatoes, vegetables and meat - all covered with a rich gravy? This recipe for the crock pot makes an old fashioned Sunday Supper a cinch!

Number Of Ingredients 12

1 (2 1/4 ounce) box onion soup mix (2 envelopes)
3 1/2 lbs rump roast, trimmed of fat
2 lbs small red potatoes, scrubbed and halved
3 large carrots, peeled and sliced
2 stalks celery, sliced
7 garlic cloves, minced
1/2 teaspoon garlic pepper seasoning
2 teaspoons dried thyme leaves
1 bay leaf
1 1/2 cups zinfandel or 1 1/2 cups other fruity red wine
1 (14 1/2 ounce) can beef broth
1/4 cup all-purpose flour

Steps:

  • Place contents of both of the dry soup mix envelopes in a small baking dish.
  • Place the roast in the dish and rub or pat the dry soup mix all over it.
  • Place half each of potatoes, carrots, celery, and garlic in crock pot.
  • Season with half each of the garlic pepper and thyme.
  • Tuck the bay leaf into the vegetables.
  • Mix together 1 cup of the wine and the broth.
  • Pour into the crock pot.
  • Add the roast and scrape any dry soup mix left in the baking dish on top.
  • Cover the meat with the remaining vegetables, garlic, garlic pepper and thyme.
  • Cover and cook on low 9-10 hours or until the meat is tender.
  • Remove the meat to a warm serving platter.
  • Remove and discard the bay leaf.
  • Scoop out the vegetables with a slotted spoon and scatter them over and around the roast.
  • Cover with foil to keep warm.
  • Pour the juices into a medium saucepan and bring to a boil on top of the stove over medium-high heat.
  • Whisk together the remaining 1/2 cup wine and flour until well blended.
  • Stir into the juices in a the saucepan and cook stirring constantly, until the gravy is thickened and the flour has lost its raw taste, 3-5 minutes.
  • Pour the gravy over the meat and vegetables and serve.

1 lb lean ground beef
1 onion, chopped
1 (6 ounce) package long grain and wild rice blend
1 3/4 cups water
5 tablespoons soy sauce
2 cups shredded cabbage
1 cup bean sprouts
1 cup carrot, sliced into thin strips
1 cup celery, cut into thin strips
1/2 lb fresh white mushroom, sliced

Steps:

  • In a large skillet brown beef and onion stirring occasionally until crumbly.
  • Drain off fat.
  • Put beef and onion into crock pot.
  • Stir in rice mix including dry seasoning packet, water and 4 TBS of soy sauce.
  • Cover and cook on high setting 2 hours.
  • Stir in vegetables and mushrooms.
  • cover and continue cooking on high about 30 minutes longer or until rice is tender and vegetables are crisp tender.
  • Stir in remaining 1 TBS soy sauce and serve at once.
  • Note: For more pronounce Asian flavor, stir in another tablespoon soy sauce before serving.

JOLEAN'S CROCK POT OLD WORLD SAUERKRAUT SUPPER

This is a German recipe that my Mom made for us every New Year's Day. Although my siblings didn't care for sauerkraut, Mom INSISTED that we eat pork & sauerkraut for good luck on New Year's Day back in the 70's. Well, this is the recipe that we ALL loved, and I handed it down to my kids as well...A true tradition in my family, and a recipe that I found in one of Mom's Crock Pot Cookbooks from 1970, but tweaked just a bit so we all would like it! Truly yummy, totally filling, and the switch-up she made to using "Bavarian" sauerkraut makes all the difference in taste! Both of my ex-DH's love this recipe and brag about it to other people to this day...

3 slices bacon
3 small potatoes, peeled and cubed
2 small granny smith apples, cored, peeled and cubed
1 lb smoked sausage (Eckrich Skinless)
2 teaspoons brown sugar
1 teaspoon flour
2 (14 1/2 ounce) cans Bavarian-style sweet sauerkraut (1 can drained, but keep the liquid in the 2nd can)
1/2 cup water

Steps:

  • Fry bacon until crisp. Drain (reserving drippings in pan) and break into small pieces. Add flour to the bacon drippings and blend well until slightly golden brown.
  • Stir in sauerkraut (and liquid from 1 can). Mix well and saute for 5 minutes.
  • Place sauerkraut mixture, crumbled bacon and sausage pieces in crock pot.
  • Add all other ingredients. Mix together thoroughly.
  • Cover and cook on Low 7 to 9 hours.
  • Salt & pepper to taste, but you may not need it!

3 lbs boneless beef rump roast
3 large garlic cloves, peeled, cut in thirds
2 tablespoons vegetable oil
1 cup celery, corasely chopped
1 cup onion, coarsely chopped
3 large carrots, peeled, halved
4 cups beef stock
2 bay leaves
1/2 green bell pepper
1 tablespoon ketchup
3/4 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
6 small potatoes, peeled, quartered
1/4 cup butter, softened
1/4 cup flour
1/8 teaspoon hot pepper sauce

Steps:

  • preheat the oven to 325*.
  • make 9 deep incisions in the meat and insert the garlic pieces.
  • Heat 1 tbls of oil in a heavy roasting pan; add the meat and brown on all sides over medium heat.
  • transfer the meat to a plate.
  • add the remaining tbls of oil to the pan, add the celery, onion, carrots and saute for about 5 minutes.
  • add the stock, bay leaves green pepper and ketchup.
  • return the meat to the pan, cover and bring to a boil.
  • transfer to the oven and bake for 2 hours covered.
  • set the meat aside and stir in the thyme, salt and pepper.
  • at this point, the meat can be stored in the refrigerator until the next day.
  • place the potatoes on the bottom of the pan and arrange the meat on top.
  • re-cover, and bake 45 minutes or until the meat and potatoes are tender.
  • in a small bowl, mash the butter and flour together to form a smooth paste is formed.
  • transfer the meat to a large heated platter and using a slotted spoon, remove the carrots and potatoes and arrange them around the meat.
  • discard the bell pepper, bay leaves and celery.
  • bring the pan juices to a boil over high heat.
  • then whisk in the butter mixture by tablespoonfuls.
  • cook over high heat until the mixture forms a gravy, then reduce heat and simmer for 3 minutes.
  • add hot pepper sauce to taste.].
  • pour some of the gravy over the meat and pass the remainder with the meat and vegetables at the table.

14 apples (preferably Johnathan, Winesap, Jonamacs or McIntosh)
2 cups apple juice
1 cup sugar, for each pint of sieved cooked fruit (see below)
1 teaspoon cinnamon, for each pint of sieved cooked fruit (see below)
1/2 teaspoon allspice, for each pint of sieved cooked fruit (see below)
1/2 teaspoon clove, for each pint of sieved cooked fruit (see below)
1/2 cup sauterne (optional)

Steps:

  • Wash, core and quarter apple (do not peel).
  • Combine apples and apple juice in lightly oiled crock pot.
  • Cover and cook on low for 10 - 18 hours or high for 2 - 4 hours.
  • When fruit is tender, put through a food mill to remove peel.
  • Measure cooked fruit and return to crock pot.
  • For each pint of sieved cooked fruit, add 1 cup of sugar, 1 teaspoon cinnamon, 1/2 teaspoon allspice and 1/2 teaspoon cloves. Stir well.
  • Cover and cook on high for 6 - 8 hours, stirring about every 2 hours.
  • Remove cover after 3 hours to allow fruit and juice to cook down.
  • Add sauterne for the last hour of cooking.
  • If desired, spoon into hot sterilized jars and process according to standard canning methods.
  • Makes about 5 1/2 pint jars.

1 (7 ounce) can diced green chilies
3 medium zucchini
2 large tomatoes
1 1/2 lbs monterey jack cheese, shredded
2 cups sour cream
1 teaspoon oregano
1 teaspoon garlic salt
2 tablespoons chopped green bell peppers
2 tablespoons chopped green onions
1 tablespoon parsley

Steps:

  • Parboil and thinly slice zucchini.
  • Place rice in a well-buttered casserole.
  • Cover with chiles and half the cheese.
  • Layer zucchini and top with sliced tomato.
  • Mix sour cream with garlic salt, oregano, green pepper and onions and spread over vegetables.
  • Sprinkle remaining cheese on top and top with parsley.
  • Bake at 350 degrees F for 40 minutes.
  • It says on the recipe, "Diced ham, cooked sausage, etc. may be added to give more substance to this dish. This is good hot or at room temperature, and it travels very well.".
