Cheese and potatoes! This wonderful recipe amplifies that great flavor combo into a stellar presentation. Terrific with steak or pork... or, well, anything!

Number Of Ingredients 8

3 Tbsp butter
3 Tbsp flour
1 c half and half (grandma used full cream!)
salt and pepper to taste
5 medium cooked potatoes, cooled and chopped
1 Tbsp chopped fresh parsley
chopped green onion to taste (optional)
1/2 c (or more!) shredded cheddar cheese

Steps:

  • 1. Melt butter. Gradually stir in flour. Slowly add cream, stirring constantly over simmer heat until thickened. Season with salt and pepper.
  • 2. Gently add potatoes, parsley and green onion (if using) to sauce and simmer 2 minutes longer.
  • 3. Turn into a well-oiled oblong pan and press down firmly. Chill for several hours.
  • 4. Half an hour before serving time, turn loaf out onto an oven-proof pan. Sprinkle with cheese. Bake at 350º for 20 to 30 minutes, or until golden brown.

COWBOY MEATLOAF AND POTATO CASSEROLE

1 Pound Lean Ground Beef
3/4 Cup Finely Chopped Onion
1/3 Cup Seasoned Dry Breadcrumbs
1/4 Cup Jack Daniels® Honey Smokehouse Barbecue Sauce
1 Egg, lightly beaten
2 Teaspoons Chili Powder
3/4 Teaspoon Salt
1 Package Ore-Ida® Steam n' Mash Cut Russet Potatoes
2/3 Cup Canned Evaporated Milk
1 Tablespoon Butter
1 Tablespoon Chopped Fresh Flat-Leaf Parsley
1 Teaspoon Garlic Powder
1 Cup Cooked Bacon Crumbles
1/4 Cup Canned Crispy Fried Onions
2/3 Cup Shredded Mexican-style Cheese Blend

Steps:

  • 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
  • 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
  • 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
  • 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.

Number Of Ingredients 10

1 medium potato, peeled and diced
1-1/2 cups water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
2 tablespoons butter, softened
2 tablespoons sugar
2 teaspoons salt
6-1/2 to 7-1/2 cups all-purpose flour
Additional all-purpose flour

Steps:

  • Place potato and 1-1/2 cups water in a small saucepan. Bring to a boil. Reduce heat; cover and simmer until very tender. Drain, reserving 1/2 cup liquid. Mash potatoes (without added milk or butter); set aside. , In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, salt, 4 cups flour, potatoes and reserved cooking liquid; beat until smooth. Stir in enough remaining flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Preheat oven to 375°. Sprinkle lightly with additional flour. Bake 35-40 minutes or until golden brown. Remove from pans to wire racks to cool.

1 1/2 cups Gold Medal™ self-rising flour
1 cup sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup vegetable oil
2 tablespoons milk
2 eggs, slightly beaten
1 cup mashed cooked sweet potatoes
1 cup chopped pecans
1/2 cup golden raisins

Steps:

  • Heat oven to 350°F. Grease bottom only of 8x4-inch loaf pan with shortening or cooking spray. In large bowl, stir together flour, sugar, nutmeg and cinnamon.
  • Add oil, milk and eggs; blend well. Stir in sweet potatoes, pecans and raisins until well mixed. Pour into pan.
  • Bake 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

1 pound lean ground pork
1 pound ground beef round
1 1/2 cups finely chopped onions
1 cup fresh bread crumbs
1 cup tomato sauce or chopped fresh tomatoes
3 eggs, lightly beaten
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Position the oven racks so that one rack is in the center of the oven. Preheat the oven to convection bake at 350°F. Lightly grease a 9 × 5-inch loaf pan.
  • In a large mixing bowl, combine all the ingredients together until well mixed.
  • Turn the mixture into the loaf pan and mound the top slightly. Insert the oven probe into the center of the loaf if desired, and set to 160°F.
  • Bake in the center of the oven until the temperature reaches 160°F in the center of the meat loaf, about 55 minutes. To check, insert an instant-read thermometer into the center of the loaf after 50 minutes and check the temperature. Remove the thermometer if you need to return the loaf to the oven.
  • Remove the pan from the oven, pour off the excess fat, and let the meat loaf stand for 15 minutes before serving.

1 medium russet potato (8-9 oz.) cut into chunks
1 c water
3 Tbsp unsalted butter, cut into pieces
4 c bread flour
1 1/2 Tbsp granulated sugar
2 tsp gluten
2 tsp salt
2 1/4 tsp saf yeast or 2 3/4 tsp bread machine yeast or 1 pkg of fast rising yeast

Steps:

  • 1. Combine potato and water in a small saucepan. Simmer, covered, until the potato is tender, abut 10 minutes;slip off the peels. Mash or puree the potatoe with its water (do not drain; you want the water). Pour the potato-water mixture into a 2 cup glass measuring cup and add additional water to make 1 2/3 cups. Cool to room temperature.
  • 2. Place all the ingredients in order specified by the manufacturer of your machine; adding the potato mixture with the liquid ingredients. Set crust to medium and program for the Basic cycle. This recipe will not work with the Delay Timer function. Immediately remove bread from the bread pan and place it on a rack. Let cool to room temperature before slicing. Yeild 1 (2 lb) loaf.

2/3 cup Italian style breadcrumbs
2/3 cup ketchup, divided

1 1/2 lbs lean ground beef

Steps:

  • Heat oven to 375 degrees.
  • In large bowl, combine potatoes, onion, eggs, bread crumbs, 1/3 cup of the ketchup, salt and pepper; mix well.
  • Add ground beef; mix lightly but thoroughly.
  • On rack set over broiler pan, shape beef mixture in to 8 x 4-inch loaf.
  • Spread remaining 1/3 cup ketchup over top of loaf.
  • Bake 1 1/4 hours or until center is no longer pink and of medium (160ºF) doneness.
  • Let stand 5 minutes; cut into slices.

Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.
