This is one of my mother's recipes. I have never made it but I certainly remember eating it! The pickles are very tart but tasty for anyone who likes mustard.

2 quarts soft water
1/2 cup salt
2 cups peeled pickling onions
2 cups pickling cucumbers
3 large cucumbers
2 cups green tomatoes
1 pint celery, chopped
1 sweet red pepper, chopped and seeded
1 sweet green pepper, chopped and seeded
1 medium cauliflower, cut into florets
1/2 cup flour
1 cup granulated sugar
2 1/2 tablespoons dry mustard
1 1/2 teaspoons turmeric
1 quart cider vinegar
1 1/2 teaspoons celery seeds

Steps:

  • Make a brine by mixing 1/2 cup salt and 2 quarts soft water in a large bowl.
  • In the water, soak the onions, pickling cucumbers, large cucumbers and green tomatoes overnight.
  • The next day, drain the vegetables.
  • Cut the large cucumbers and green tomatoes into thick slices.
  • Cook the onions and cauliflower in boiling water until they are barely tender.
  • Drain and add to bowl.
  • Add celery and sweet peppers to bowl.
  • Now prepare the sauce by mixing the sauce ingredients in a large pot.
  • Cook, stirring until smooth and thickened.
  • When the sauce is boiling, stir in the vegetables.
  • Just heat through-- do not cook the vegetables.
  • Spoon immediately into freshly scrubbed pint jars.
  • Make sure the vegetables are covered in hot mustard sauce and seal.

1/2 cup white mustard seeds
1 tablespoon dry mustard
1/2 cup cold water
1/2 cup white wine vinegar
1/2 cup dry white wine
1 small onions or 1/2 cup shallot, chopped
2 cloves garlic, minced
1 bay leaf
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon dry tarragon
1/8 teaspoon ground allspice
1/8 teaspoon ground turmeric

Steps:

  • Combine mustard seeds, dry mustard and cold water; and soak for 3 hours and set aside.
  • Combine the rest of the ingredients in 1 to 2 quart non reactive pan, and simmer for 10 to 15 minutes, uncovered, over medium heat until reduced by half.
  • Pour liquid through wire strainer into mustard seed mixture then whirl in blender until coarsely ground.
  • Cook in top of double boiler over simmering water for 8 to 12 minutes, stirring occasionally, until thickened. Let cool, pack into jar or crock, and cover tightly.

2 cups milk
4 eggs
1/2 cup stick margarine, melted
1 cup sugar
1/2 cup all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • In a blender, combine all ingredients. Cover and process until smooth. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 50 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack for 1 hour. Refrigerate until serving.

An old fashioned recipe that is different from most pickles. Cucumbers and onions are pickled in a mustard sauce made with turmeric and celery seed.

8 large cucumbers, sliced
4 cups sliced onion
2 tablespoons pickling salt
2 cups white sugar
2 tablespoons all-purpose flour
2 cups white vinegar
1 tablespoon ground dried turmeric
1 tablespoon dry mustard powder
½ teaspoon celery seed
2 quarts cold water, or as needed

Steps:

  • Place the sliced cucumbers and onions into a large bowl and sprinkle the salt over the top. Fill the bowl with enough water to cover the cucumbers. Let stand for 8 to 10 hours.
  • Drain and rinse the cucumbers and onion with fresh water. Sterilize 4 (1 quart) jars and lids.
  • In a 6 quart pot, stir together the sugar and flour. Whisk in the vinegar, turmeric, mustard powder and celery seed to make a smooth paste. Add the cucumbers and onions and fill with enough water to cover. Stir, and bring to a boil. Cook until thickened, about 10 minutes, stirring frequently.
  • Pour into hot sterilized jars filling to within 1/2 inch of the top. Seal with lids and rings. Process for 10 minutes in a simmering water bath. Refrigerate any jars that fail to seal properly.

4 tablespoons unsalted butter
2 large yellow onions, thinly sliced into half moons
⅓ cup rye whiskey
1 teaspoon kosher salt
2 large navel oranges
¼ cup dijon mustard
¼ cup yellow mustard
1 teaspoon orange bitters
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
2 lb ground beef
1 tablespoon olive oil
8 slices american cheese
4 burger buns
1 large egg, beaten
1 tablespoon sesame seed
1 cup iceberg lettuce, shredded
8 slices beefsteak tomatoes

Steps:

  • Make the whiskey-caramelized onions: In a large, high-walled skillet, melt the butter over medium-low heat. Add the onions and cook, stirring occasionally, until they caramelize and turn golden brown, about 45 minutes. Add the whiskey and salt and stir to combine. Remove the pan from the heat and let sit until ready to use.
  • Make the roasted orange mustard: Turn the broiler on high.
  • Use a sharp knife to remove the peel from the orange, then slice the orange crosswise into ½-inch rounds. Arrange the rounds in a single layer on a baking sheet.
  • Broil the orange slices until they begin to brown and crisp on the top, about 10 minutes.
  • Remove the oranges from the oven and transfer to a large bowl to cool slightly. Use a potato masher to mash the juice from the oranges, and then strain through a fine-mesh sieve, pressing on the flesh to extract as much juice as possible. You should have about ¼ cup of roasted orange juice.
  • In a medium bowl, whisk together the orange juice, Dijon mustard, yellow mustard, and bitters until smooth. Refrigerate until ready to use.
  • Make the smash burgers: Reduce the oven temperature to 375°F (190°C).
  • Divide the ground beef into 8 4-ounce portions, being careful not to work the meat too much.
  • In a small bowl, mix together the salt, pepper, and coriander.
  • Heat a large cast-iron skillet over medium-high heat until nearly smoking. Pour the olive oil into the hot pan. Place 2 portions of ground beef, or as many as will fit without overcrowding, in the pan and use a flat metal spatula to flatten into patties. Use the back of a wooden spoon to press the spatula more firmly to flatten each patty even more. Season each patty generously with the salt mixture. Once the patties turn golden brown on the bottoms and the edges are crispy, about 2 minutes, flip and continue cooking until the other side is golden brown, about 2 more minutes. Top each patty with 1 slice of American cheese and let melt, about 30 seconds. Remove from the pan and repeat with the remaining ground beef.
  • Assemble the burgers: Place the intact burger buns on a baking sheet. Brush the top of each bun with beaten egg, then sprinkle with the sesame seeds. Transfer to the oven and bake until the egg wash turns golden brown, about 5 minutes.
  • Open the buns and place ¼ cup of shredded lettuce on each bottom bun, followed by 2 tomato slices, a patty, ¼ cup caramelized onions, and a second patty. Spread 2 tablespoons of the orange mustard over the undersides of the top buns, then place on top of the burgers. Serve with old fashioneds.
