I just adopted this recipe. I have made some changes to make it mine. I love Old Fashioned Beef Hash and this recipe brought back some memories. I think the best hash is made using a meat grinder and grinding equal amounts of leftover roast or steak with equal amounts of raw potatoes and yellow onions. I have my mothers...

Number Of Ingredients 7

olive oil
onion, quartered
potatoes, peeled and quartered
leftover beef, cooked and diced
salt and pepper to taste
ketchup, optional
corn kernel, optional

Steps:

  • 1. Take approximately equal proportions of beef, potatoes, and onions and put them through a meat grinder using a medium grinder attachment so that they are well mixed and ground. NOTE: If you don't have a meat grinder, you can hand chop the ingredients.
  • 2. Heat a large frying pan, preferably a cast iron pan, on medium high to high heat. Add the hash to the frying pan so that a half an inch of hash covers the bottom of the pan. If you have more hash to cook, do so in separate batches. Add several tablespoons of Olive Oil. Brown the hash, stirring only infrequently at first to make sure that the hash has an opportunity to brown well. As you cook the hash, add pinches of salt and fresh ground pepper. Do this a couple of times with each batch of hash. Cook for at least 10 minutes and until the hash is well browned.
  • 3. Served topped with ketsup, if desired. Or, serve over homemade biscuits as Donna mentioned. Or toss in some corn as Shelley suggested with her beautiful photo....Yum!

Traditional roast beef hash! Cooked beef, ground through a meat grinder with onions and potatoes and then fried.

2 cups roughly chopped cooked roast beef or pot roast beef
1 large Russett or 2 smaller Yukon gold potatoes, peeled and quartered
1 large onion, peeled and quartered
3 tablespoons extra virgin olive oil
Salt and pepper
Ketchup

Steps:

  • Grind the beef, potatoes, and onions together: Take approximately equal proportions of beef, potatoes, and onions and put them through a meat grinder using a medium grinder attachment so that they are well mixed and ground. If you don't have a meat grinder, you can pulse a few times in a food processor, or finely chop by hand.

Old Fashioned Turkey Hash image

This is my version of the old fashioned extra to serve over lots of things on the thanksgiving table or for anytime meal.

2 tbs butter
1small onion, finely chopped
3 tbs all purpose flour
2 cups whole milk
1/2 tsp salt and pepper
pinch ground nutmeg
8 ounces cooked turkey cut into small pieces (2 cups)
2 tbs fresh parsley chopped

Steps:

  • 1. In 3 quart saucepan, melt butter over medium heat. Add onion and cook, stirring, until soft, about 4-5 minutes. Stir in flour and cook stirring constant 1 minute. With a wire wisk, gradually whisk in milk, salt and pepper, and nutmeg. Heat to a boil over med-high heat, whisking. Reduce heat and simmer whisking here an there 5 minutes
  • 2. Stir turkey into sauce and heat through, stir in parsley and serve (over noodles, rice, or mashed potatoes)

3 russet potatoes
2 cups 1/2-inch cubes roast beef
1 onion, finely chopped
1 green bell pepper, thinly sliced
½ cup sliced fresh mushrooms
1 tablespoon vegetable oil

Steps:

  • Place potatoes on a microwave-safe plate and prick skins with a fork. Cook in the microwave until slightly tender, 7 to 8 minutes. Cut into 1-inch cubes.
  • Combine potatoes, roast beef, onion, green bell pepper, and mushrooms in a bowl.
  • Preheat an electric skillet to 350 degrees F (175 degrees C). Coat with oil.
  • Spread potato mixture evenly in the skillet. Let cook, without stirring, until browned, about 5 minutes. Flip and continue cooking until second side is crisp, about 5 minutes more.

1 pound finely ground fully cooked ham
1 large onion, finely chopped
3 medium potatoes, peeled and cooked
2 tablespoons butter, melted
2 tablespoons grated Parmesan cheese
1 tablespoon prepared mustard
2 teaspoons Worcestershire sauce
1 teaspoon prepared horseradish
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large bowl, combine ham and onion. Shred potatoes and add to ham mixture. Stir in the butter, Parmesan cheese, mustard, Worcestershire sauce, horseradish and pepper. , Spoon into a greased 11x7-in. baking dish, pressing down firmly. Combine cheeses; sprinkle over top. Bake, uncovered, at 350° for 35-40 minutes or until bubbly and cheese is melted.
