4 pkg 8 oz each cream cheese
6 oz extra sharp cheddar cheese, shredded
1 box 6 oz. zwieback crackers crushed (1 1/2 cups)
1/4 c sugar
1/4 c margarine, melted
1 3/4 c sugar
4 eggs
2 egg yolks
1/3 c beer
1/4 c heavy cream

Steps:

  • 1. Let cheeses soften to room temperature in a large bowl, set aside
  • 2. combine crackers, melted margarine and 1/4 cup sugar and press firmly over bottom and halfway up a springform pan (lightly buttered)
  • 3. beat cheeses with sugar until fluffy.
  • 4. Add eggs and egg yolks one at a time to cheese mixture beating well after each addition.
  • 5. beat in beer and heavy cream at low speed.
  • 6. pour into prepared pan
  • 7. bake in preheated 300 degree oven for 2 hours Turn off oven and leave in there with door ajar another 30 minutes
  • 8. Remove cake from oven and let cool on wire rack. refrigerate several hours or overnight
  • 9. To Serve: Loosen cake with metal spatula around edges remove side of pan
  • 10. Serve at room temperature, but store leftover cake in refrigerator. Garnish with frosted green grapes if you wish.
  • 11. FROSTED GRAPES :dip small clusters of grapes in egg whites and sprinkle with granulated sugar

1 1/4 cups all-purpose flour
1/4 cup sugar
1/3 cup butter
4 tablespoons cold beer
1/2 cup golden raisin, chopped
1/3 cup almonds, finely chopped (2 oz.)
1 tablespoon grated lemon peel
1 lb cottage cheese
1/2 cup flour
4 eggs
1 cup sugar
3/4 cup beer
1/8 teaspoon nutmeg

Steps:

  • For crust, mix flour and sugar; cut in butter until crumbly. Add beer 1 tablespoon at a time, stirring with a fork. Shape dough into a ball. Chill.
  • Roll out on floured surface to a 13- to 14-inch circle. Fold in quarters. Gently unfold in a 8-inch springform pan. Even edge of crust so it extends about 2 inches up sides of pan (1 1/2 inches up sides if using a 10 inch pan). Prick all over with fork.
  • Bake at 425 degrees 10 minutes. Prick again and press to sides. Bake 10 minutes more or until slightly golden.
  • For filling, mix chopped raisins, almonds, and peel.
  • Process cottage cheese, flour and eggs until smooth, using food processor or electric blender. (Do in several batches in blender.).
  • Add sugar, beer, and nutmeg; blend until smooth. Stir in raisin mixture. Pour into cooled shell.
  • Bake at 300 degrees 1 1/4 to 1 1/2 hours, or until set. Cool to room temperature for serving. Dust with confectioners' sugar and top with whole unblanched almonds.

MAIDS OF HONOUR - OLD ENGLISH TUDOR CHEESECAKES

These are the forerunner of modern baked cheesecakes, and this recipe originates from one of the first documented versions of this recipe. Curd cheese was very popular as an ingredient for desserts many hundreds of years ago, and these delightful little tarts have a Royal lineage; the story is that whilst Henry VIII was strolling in the gardens of Hampton Court Palace, he came across a group of ladies in waiting (to his queen, Catherine of Aragon), one of whom was Anne Boleyn - whom subsequently became his second wife; they offered him some of these tarts and he enjoyed them so much, that he named them after the Maids of Honour. I always make these for afternoon tea - they are delightfully light and fragranced with delicate orange flower water or rose water. Use any dried fruits that you have available - I find a mixture of seedless raisins and chopped candied peel works very well.

230 g pre-made puff pastry
110 g curd cheese or 110 g cottage cheese, which has been sieved
50 g soft brown sugar
2 large eggs, beaten
2 tablespoons single cream
1 tablespoon orange flower water or 1 tablespoon rose water
75 g ground almonds
50 g mixed dried fruit, such as seedless raisins and
candied peel, chopped
icing sugar, for sifting

Steps:

  • Pre-heat oven to 220C/450F/gas7 and lightly grease a 12 hole bun or muffin tin.
  • Roll out the pastry and stamp out 12 fluted rounds - try to make sure that they are at least 1/4" bigger than needed, as the puff pastry shrinks during baking.
  • Line the bun tray with the pastry rounds and chill them whilst making the filling.
  • Place the curd cheese or cottage cheese into a large mixing bowl and add the beaten eggs, cream, sugar, orange flower water or rose water and almonds.
  • Mix well and then add the mixed dried fruit, mixing again well.
  • Spoon the filling into the pastry cases and bake the tarts for 15-20 minutes or until well-risen, golden brown & firm to the touch.
  • Allow them to cool a little and then carefully remove them and place them on a wire rack to cool completely.
  • Arrange them on an attractive cake platter and sprinkle with icing sugar to serve.

1 1/2 cups graham cracker crumbs
1/2 cup toasted almond, finely chopped
1/2 cup toffee pieces (I like Skor)
2 tablespoons packed dark brown sugar
1/4 teaspoon salt
6 tablespoons unsalted butter, melted
4 (8 ounce) packages cream cheese, room temp
1 cup packed dark brown sugar
4 large eggs
1 tablespoon vanilla extract
1/4 teaspoon almond extract
8 ounces chocolate-covered english toffee bars, cut into 1/2 inch pieces (Skor)
1 (16 ounce) container sour cream
1/2 cup sugar
1 teaspoon vanilla extract
extra crushed chocolate-covered english toffee bar, for sprinkling

Steps:

  • For Crust: Preheat oven to 350 degrees F.
  • Combine first five ingredients in med bowl.
  • Add butter and stir until moist clumps form.
  • Press into bottom and 1 inch up sides of 10 inch springform pan.
  • Bake 5 mins, or until set.
  • Set aside.
  • Reduce oven temp to 325 degrees F.
  • For Filling: Beat cream cheese and sugar in large bowl until blended.
  • Beat in one egg at a time, until blended.
  • Beat in both extracts.
  • Pour half of mixture into prepared crust.
  • Sprinkle with 1/2 inch toffee pieces.
  • Top with remainder of cream cheese mixture.
  • Bake until edges are puffed but center is barely set- approx 55 minutes.
  • Topping: Mix sour cream, sugar and vanilla in medium bowl until smooth.
  • Pour topping over hot cheesecake and bake another 5 minutes, until just set.
  • Transfer to cooling rack for 10 minutes.
  • Run knife around edges.
  • Chill overnight.
  • Remove pan sides and place on serving platter.
  • Sprinkle with extra crushed toffee.
  • Enjoy!

1-1/3 cups whole almonds, toasted and ground
3/4 cup crushed vanilla wafers
1/3 cup butter, melted
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 large eggs, lightly beaten
2 teaspoons vanilla extract
3/4 teaspoon grated lemon zest
TOPPING:
2 cups sour cream
3 tablespoons sugar
1 teaspoon vanilla extract
Assorted fresh fruit

Steps:

  • In a small bowl, combine almonds and wafer crumbs; stir in butter. Press onto the bottom and 2 in. up the sides of an ungreased 9-in. springform pan. Bake at 350° for 5 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Beat in vanilla and lemon zest just until blended. Pour into crust. Place pan on a baking sheet. Bake at 350° for 40-45 minutes or until center is almost set., Combine the sour cream, sugar and vanilla; carefully spread over filling. Bake 10 minutes longer or until edges appear dry. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Cover and chill overnight. Remove sides of pan. Top with fresh fruit. Refrigerate leftovers.

Most of this is cupboard stock if you cook often
1 pack of ready to roll puff pastry
Jam (Smooth of fruity, whatever your choice is)
200g Icing/Fondant Sugar
Coconut (Shredded if you can find it, desiccated will do!)
I have read that a few people like this with a more textured taste so they add Frangipane, I like it how it is and it is soo simple but if you do?
55g butter or margarine
55g caster sugar
1 free-range egg, beaten
40g ground almonds
1 tbsp plain flour
place the ingredients in a bowl and beat with an electric mixer until smooth and thoroughly combined.

Steps:

  • preheat the oven to 200.c before starting
  • unroll your packet of ready rolled pastry and mark out 12 squares with a knife, on a baking tray with greaseproof paper place 6 and these will be the base
  • on the 6 bottoms, spread a small layer of jam, dont use too much because it will run away, if you are using the frangipane add a small amount in a blob in the middle (if you would like to be more adventurous you can add sliced strawberry, blueberrys, whatever takes your fancy)
  • place the remaining pieces of pastry ontop of the pastry on the tray and squash down a little, then place in the oven for 20 minutes or depending on the oven type until it has a nice golden colour, then take out and set aside to cool
  • whilst the pastry is cooling is the time to make the icing, sift into a bowl and add 4 tablespoons at a time to the sugar and mix, the mixture should then start to thicken up and make a paste, keep stirring this to keep it manageable, when the pastry has cooled down then spoon onto the tops the icing sugar until all have a layer.
  • Now is the time to sprinkle the coconut ontop and here you have very easy cakes that you can do with children
