OLD COUNTRY STORE CHESS PIE

Old Country Store Chess Pie image

I know there are a lot of good, easy, and quick chess pie recipes, but I think this one is my favorite and you don't even have to use a mixer. This recipe comes from The Old Country Store in Jackson TN and we've been making it in our family for at least 30 years. I've used 1.5% milk and apple cider vinegar when that's all I had on hand and you can't tell a difference at all.

THE IMPORTANCE OF USING CORNMEAL IN CHESS PIE - YAHOO NEWS …
Web Oct 30, 2023 Keep in mind that the coarser the grain, the larger the crunch. Most chefs prefer to use finely ground cornmeal so that the texture isn't changed too dramatically. You want a bit of bite, not something so harsh as to break a tooth. Surprisingly, in chess pie, a little cornmeal goes a long way. Most recipes only call for 1 tablespoon of cornmeal.
