My friend Marian Schwartz gave me the idea to roast okra. It's an ingenious strategy: No need to marinate the okra in salt and vinegar beforehand -- it develops a wonderful seared flavor in the hot oven, and it won't be gooey.

1 pound okra
Salt to taste
2 tablespoons extra virgin olive oil
Fresh thyme leaves to taste optional
Freshly ground pepper

Steps:

  • Preheat the oven to 450 degrees. Rinse the okra, and drain on a kitchen towel. The okra should be dry. Trim away the stem ends and the tips, just the very ends, and then place the okra in a large bowl. Salt to taste, and toss with the olive oil until coated.
  • Lift the okra from the bowl, leaving behind any excess oil. Place on a sheet pan in one layer. Roast in the oven for 15 minutes (large okra might take a little longer), shaking the pan every five minutes. The okra should be lightly browned and tender, with a nice seared aroma. If you don't want it to brown as much, set the oven at 400 degrees.
  • Remove from the heat, toss with fresh thyme, if desired, and freshly ground pepper. Transfer to a platter. Serve hot.

MEDITERRANEAN-STYLE OKRA RECIPE

Okra and tomatoes prepared Mediterranean-style with onions, garlic, hot peppers, warm spices and a splash of lime juice. This quick-cooked vegan okra stew is the perfect combination of savory, tangy, and just a little bit spicy. You can use 1 or 2 jalapenos, depending on how spicy you like your food. And if you need it a little more tangy, add more lime juice!

Extra virgin olive oil
1 small onion (chopped (1 cup chopped onion))
4 garlic cloves (minced)
2 small green chiles such as jalapeno (chopped)
1 lb frozen or fresh cut okra (sliced into rounds (or small whole okra, trimmed) )
Salt and pepper
1 tsp ground allspice
½ tsp coriander
½ tsp paprika
1 ½ cup crushed tomatoes
½ cup water
1 tomato (sliced into rounds)
Juice of ½ lime (more to your liking)

Steps:

  • Heat the olive oil in a large skillet (or pan with a lid) over medium-high until shimmering but not smoking. Lower the heat to medium and add the onions, garlic and chopped jalapeno peppers. Cook for 4 to 5 minutes stirring regularly (do not let the garlic burn, if needed adjust heat).
  • Add the okra and sautee for 5 to 7 minutes over medium-high heat.
  • Season with kosher salt, black pepper and spices. Toss to coat.
  • Add the crushed tomatoes and water. Stir to combine. Add the tomato slices on top. Bring to a boil, then turn the heat to low and cover most of the way (leave a little opening at the top). Let the okra simmer on low heat for 20 to 25 minutes or until the okra has softened. Uncover and add juice of ½ lime (more to your liking).
  • Remove from heat and serve over rice or with warm pita bread.

4 cups okra pods (young and tender are best)
3 tablespoons butter, melted
1 tablespoon lemon juice (fresh is best)
salt, to taste

Steps:

  • Wash okra weell; trim stem end, leaving enough on the pod to keep the juice inches.
  • Cover with boiling water and boil gently until tender, approximately 15 minutes.
  • When half done add a little salt.
  • To serve, drain very well, pour into a hot dish and add melted butter and lemon juice.

ROASTED OKRA AND ONIONS

Buy the freshest, firmest okra you can find. Pick pods that are no bigger than your ring finger. Slicing them lengthwise just before you roast them will keep slime to a minimum. This basic technique is very accommodating. You can add quartered yellow squash or zucchini, or even a chopped up fresh tomato. The trick is to roast the vegetables until the edges of the onion begin to turn brown.

1 Vidalia (or other sweet) onion, small, sliced into crescents
Kosher salt and freshly ground pepper
2 tablespoons olive oil
Chopped fresh basil and mint

Steps:

  • Heat the oven to 400 degrees. Combine okra and onion in a bowl. Season with salt and pepper, drizzle with olive oil and toss well to coat. Roast until vegetables are just tender, 10 to 12 minutes. Toss with herbs and serve.

1 tablespoon extra-virgin olive oil, or more as needed
1 pinch paprika, or to taste
1 pinch garlic powder, or to taste
salt and freshly ground black pepper to taste
1 pinch cayenne pepper
1 lemon, juiced
¼ teaspoon chopped fresh rosemary, or to taste
¼ teaspoon chopped fresh thyme, or to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Toss okra with olive oil, paprika, garlic powder, salt, pepper, and cayenne pepper in a bowl.
  • Grill okra on the preheated grill until 1 side is bright green with visible grill marks, about 5 minutes. Turn okra, cover grill, and cook until tender, about 5 minutes.
  • Transfer okra to a serving bowl; sprinkle with lemon juice, rosemary, and thyme.

  • Heat 1 tbsp oil in a (preferably non-stick) pan, when oil is hot, add cumin seeds and fry for 20 secs. Add fine chopped garlic, onion slices and saute till onions are translucent (make sure not to burn the garlic.). Now add sliced okra 1 cup at a time, mixing after each addition to break apart frozen chunks.
  • Once all okra is in the pan and separated, saute for 3-4 minutes stirring frequently on high heat to dry out the moisture. In a small bowl mix, 1/2 tsp salt, turmeric, black pepper and creole seasoning. Sprinkle half of the mixture over cooking okra and mix well. Cover and cook on medium heat until okra is tender (about 5-7 minutes). Now add remaining seasoning, 1 tbsp oil, uncover and cook stirring on high heat for another 3-4 minutes or until okra start caramelizing a bit at the bottom.
  • Taste and adjust the salt, add lemon juice, mix well and remove from heat. Serve hot on the side with meat or enjoy as main dish with steamed rice.
