This LEMON POPPYSEED DRESSING is perfect for spring & summer salads. It's naturally sweetened with honey and uses less oil, for a flavor I find addictive!

1/2 cup freshly squeezed lemon juice
1/2 cup extra-virgin olive oil
1/4 cup honey ((or maple syrup for vegans))
2 teaspoons spicy brown mustard
1/2 teaspoon fine sea salt
1/4 cup diced red onion ((about 2 slices))
1 tablespoon poppy seeds

Steps:

  • In a blender, combine the lemon juice, olive oil, honey, mustard, salt, and red onion, and blend until smooth. Taste the dressing and adjust any seasoning, if needed.
  • Add the poppy seeds and pulse the blender briefly, just enough to disperse them. Pour the dressing into an airtight container and store it in the fridge until ready to serve.
  • Leftover dressing should last in an airtight container in the fridge for up to 5 days.

  • Blend sugar, lemon juice, onion, Dijon mustard, and salt in a blender until smooth. Stream canola oil in a thin stream into the mixture while blender is running. Add poppy seeds and pulse blender a few times, just to mix seeds into the dressing.

1 clove garlic, minced (1 tsp)
1½ tsp fresh ginger, grated
1½ tbsp maple syrup
1 tbsp Dijon mustard
¼ tsp salt
Pepper to taste
⅓ cup water
1 tbsp poppy seeds

Steps:

  • Combine all ingredients except poppy seeds and blend with a mini food processor or immersion blender until smooth. Add poppy seeds. Store in a tightly sealed container in the refrigerator.
  • Hack: Do you know that you can freeze fresh ginger root? Grating it in its frozen state is easier than grating it fresh and, if you choose organic ginger, you don't have to peel it! Simply place it in a sealed freezer bag or container and pop it in the freezer.

3 to 4 Tablespoons freshly squeezed lemon juice *
2 Tablespoons unsweetened plain plant milk
1 Tablespoon water
1 teaspoon distilled white vinegar
1 teaspoon apple cider vinegar
2 teaspoons organic maple syrup
1 teaspoon white miso
½ teaspoon ground mustard powder
½ teaspoon garlic powder
¼ teaspoon sea salt (+/- to taste)
Pinch to ½ teaspoon lemon zest *
1 Tablespoon poppy seeds

Steps:

  • Place the cashews into a small pot, cover with water, and boil for 10 minutes. After boiling, strain and rinse under cold water.
  • Add all the Ingredients into a high-speed blender (except the poppy seeds and lemon zest) and blend on high for one minute or until creamy and smooth. Then stir in the poppy seeds and lemon zest. Serve immediately or refrigerate until ready to serve.
