Refrigerator Sweet Dill Pickles image

SO much better (and cheaper) than store-bought! A sweet and tangy pickle seasoned with dill and celery seed. No canning needed- just marinate for a few days in the fridge!

1 large cucumber (sliced)
1 small onion (thinly sliced)
1 cup packed fresh dill (no need to chop!)
1/4 cup sugar (or more, if you want them very sweet)
1 cup white vinegar
2 cups water
2 teaspoons kosher salt
1 teaspoon celery seed
4 garlic cloves (slivered)

Steps:

  • Combine vinegar, water, sugar, salt, celery seed, and garlic in a small pot and bring to a boil, stirring until the sugar and salt dissolves. Turn off the heat and allow to cool.
  • Meanwhile, mix cucumbers, onion, and dill in a bowl. Stir together and pack into mason jars (I used two).
  • When the liquid is cool, pour over cucumber mixture in jars until completely full. Shake to combine well.
  • Refrigerate for at least one day- three days ideally!

This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. Number Of Ingredients 12

9 cups sliced pickling cucumbers
1 large sweet onion, halved and thinly sliced
1/4 cup canning salt
1 cup sugar
1 cup water
1 cup white vinegar
1/2 cup cider vinegar
2 tablespoons mustard seed
1 teaspoon celery seed
1/2 teaspoon whole peppercorns
12 garlic cloves, crushed
4 bay leaves

Steps:

  • In a large nonreactive bowl, combine cucumbers, onion and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain thoroughly., In a Dutch oven, combine sugar, water, vinegars, mustard seed, celery seed and peppercorns. Bring to a boil, stirring to dissolve sugar. Add cucumber mixture; return to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 4-5 minutes or until heated through., Carefully ladle hot mixture into 4 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Add 3 garlic cloves and 1 bay leaf to each jar. Remove air bubbles and, if necessary, adjust headspace by adding hot pickling liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Oh so Good Sweet Dill Pickles image

from Bon Apetit and tweaked a bit. The pickles are dill but with a sweet taste. You can make these one week ahead of time, and they should keep for 2-3 weeks, but I bet you eat them before that! These are great for summer relish trays by the BBQ.

1 small onion
2 lbs cucumbers
1 bunch dill
1 tablespoon mustard seeds
2 tablespoons whole white peppercorns
1 1/2 cups apple cider vinegar
1 cup water
1 cup sugar
3 tablespoons coarse sea salt
2 teaspoons dill seeds

Steps:

  • Wash and scrub cucumbers, cut into 1/4" rounds.
  • Thinly slice onion and put half in each 1 quart wide mouth jar.
  • Chop fresh dill and add on top of onion in each jar.
  • Use a plastic bag and crush mustard seeds and peppercorns.
  • Place crushed spices in a saucepan.
  • Add vinegar, water, sugar, salt and dill seeds.
  • Boil over medium heat, stirring until sugar dissolves.
  • Put one half cucumbers in each jar.
  • Ladle vinegar mixture over cukes.
  • Leave jars uncovered to cool.
  • Chill in refrigerator for 24 hours.
  • After 24 hours, cover pickle jars with lids.
  • Keep refrigerated.

1 small sweet onion (such as Vidalia or Maui), thinly sliced
2 pounds medium pickling cucumbers, scrubbed, cut into 1/4-inch-thick rounds
1 large bunch dill, coarsely chopped (stems included)
1 tablespoon yellow mustard seeds
2 teaspoons whole white peppercorns
1 1/2 cups apple cider vinegar
1 cup water
1 cup sugar
3 tablespoons coarse kosher salt
2 teaspoons dill seeds

Steps:

  • Divide sliced onion between two 1-quart wide-mouth glass jars. Pack cucumber slices horizontally in jars. Top each jar with dill.
  • Using mortar and pestle or resealable plastic bag and mallet, crush mustard seeds and peppercorns together. Place crushed spices in medium saucepan. Add vinegar, 1 cup water, sugar, coarse salt, and dill seeds. Bring mixture to boil over medium-high heat, stirring until sugar dissolves.
  • Ladle mixture evenly over cucumbers. Leave jars uncovered and chill 24 hours. Cover glass pickle jars tightly with lids. DO AHEAD: Can be made 1 week ahead. Keep refrigerated.

HOMEMADE SWEET DILL YUM-YUM PICKLES



Homemade Sweet Dill Yum-Yum Pickles image

These are made with store-bought dill pickles in the jar and are 100% better than the ones you purchase at the store and they stay crunchy! I use Claussen garlic dills or Vlassic dills but you may use your own favorite brand or use your own homemade dill pickles, I like either brands for the extra crunch, use regular or large size size dills not the small baby dills----plan ahead this needs a few days before the pickles are ready ;-)

2 (32 ounce) jars large-size garlic dill pickles (drained and washed under cold water)
4 cups white sugar, divided (measured exactly)
1/2 cup white vinegar
1/2 cup water
1 tablespoon pickling spices

Steps:

  • Slice the washed pickles into about 1/4 to 1/3-inch slices, then place in a medium bowl.
  • Pour 2 cups sugar over the slices and toss/stir to coat with the pickle slices.
  • Allow to sit out at room temperature for 24 hours tossing several times with a spoon during the 24 hours (I just leave a spoon in the bowl, juice will gather in the bowl, do not drain!).
  • After the 24 hours (do not drain the juice in the bowl) in a medium saucepan combine 2 cups sugar, vinegar, water, pickling spice; bring to a boil over medium heat stirring until the sugar is dissolved (about 2 minutes).
  • Make certain that the bowl is Pyrex or heat-proof or it might crack when you pour the boiling water into it -- pour the water mixture over the sugared pickles and the sugar juice that has gathered in the bowl; mix very well with a spoon.
  • Allow the mixture to stand at room temperature for about 8 hours or overnight.
  • Drain pickles (you don't have to completely drain).
  • Transfer pickles to clean glass jars and store covered or uncovered in refrigerator.
  • Serve cold.

1 1/2 cups sugar
1 cup vinegar

Steps:

  • Drain all existing juice from pickles, cut pickles in chunks & return to jar after washing jar in hot water. Boil the sugar & vinegar until sugar dissolves & liquid is clear.
  • Pour juice over pickles, put lid on & let the pickles set for a while, the lid should "pop" (the lid should seal just like regular canning). Jar should be hot when you refill with the hot liquid.
  • After the jar cools store in refrigerator - give it a few days and then enjoy @ your leisure.

  • In a saucepan, combine sugar, vinegar, water and salt. Bring to a boil and boil 1 minute. In a large nonmetallic container, combine cucumbers, onion and dill. Pour dressing over; cool. Cover and refrigerate at least 3 days before serving. Stir occasionally.

Feeling a little lazy and not wanting to can, I was looking for a good recipe for chilled dill pickles, but couldn't quite find the exact recipe I wanted so I have adapted a recipe from Group Recipes and Epicurious to fit my needs. Number Of Ingredients 12

1 1/2 lbs small pickling cucumbers, sliced 1/4-1/2-inch thick (or regular cucumbers-may cut into spears also)
4 garlic cloves, sliced
4 sprigs fresh dill (optional)
2 cups cold water
1/2 teaspoon celery seed
3 tablespoons kosher salt
1 tablespoon dill seed
2 cups white distilled vinegar
1 cup sugar (or 1 1/2 cups depending on sweetness you desire)
1 tablespoon mustard seeds
1 teaspoon red pepper flakes (more or less depending on heat level you desire)
1 teaspoon whole black peppercorn (optional)

Steps:

  • Evenly divide the garlic, fresh dill and sliced cucumbers among four wide mouthed pint jars.
  • Before adding the mustard seed, red pepper flakes, peppercorns(if using) and dill seed, crush them slightly. You can use your hands, a mortar and pestle, or give then one quick whiz in the food processor(optional).
  • In a saucepan, mix together vinegar, water, sugar, red pepper flakes, celery seed, salt, mustard seed and dill seed. Heat to just dissolve sugar, then remove and let cool. Use a funnel to fill each jar with the cooled brining liquid. The spices may float to the bottom, so use a spoon to evenly divide anything that is leftover into the jars. Cap tightly and refrigerate at least one week before eating. Enjoy!
  • It was suggested you do this over a large bowl. The cucumbers start to float and displace liquid. Add the overflow back into the brining mixture before you fill up the next jar. No mess! :).
