this is the actual recipe which i did a quick translation from dutch, however as usual i never follow it! ------------------------------------------- Ocha-zuke is a quick meal usually served after drinking. in the old days, in the region around Tokyo this meal was offered as a way to say the party is over and it's time to leave! -----------------------------------------

150 g salmon fillets
1/4 sheet nori
250 g japanese rice, cooked in 3 . 5dl water
1 tablespoon japanese green tea (Sencha leaves)
1 teaspoon wasabi paste (from tube)
4 teaspoons japanese soya sauce

Steps:

  • rub the salmon with some salt and let it sit for 30mins.roast 5mins under the pre-heated grill [until cooked through].when done flake flesh with a fork.
  • snip the nori into thin strips.
  • spoon the still warm rice into soup bowls. scatter salmon flakes on top of rice.
  • make the green tea with 6dl boiled water.leave to steep for about 45 secs.
  • pour the tea slowly over the rice. sprinkle on nori strips [and a squeeze of wasabi if desired]. serve immediately.

A really interesting use for green tea and a great way to use up leftovers. A classic light meal or snack in Japan. Typically, this is accompanied by an assortment of bright, crisp pickles (not the American kind!). From "At Home with Japanese Cooking" by Elizabeth Andoh.

3 cups cooked rice (leftovers are perfect)
1 tablespoon sesame seeds
1 sheet nori (sheets of seaweed like sushi are typically wrapped in)
1 steamed chicken breasts (either are fine or whatever other leftovers you'd like to use) (optional) or 1 slice grilled salmon (either are fine or whatever other leftovers you'd like to use) (optional)
2 -3 tablespoons chopped coriander
1/4 teaspoon wasabi or 1/2 teaspoon grated fresh ginger
2 cups green tea (hot and freshly brewed)

Steps:

  • Divide the rice into 4 deep bowls.
  • Dry roast the sesame seeds by stirring them over medium heat in a skillet until golden.
  • You may want to crush them slightly with a mortar once toasted, but this is not completely necessary.
  • Dry roast the nori by waving it back and forth over direct medium heat for about 1 minute (this is typically done just over the flame of a gas stove and I really recommend you use tongs to do this, not just your fingers!) Fold and tear the sheet into 20 small rectangles and place 5 rectangles in each bowl.
  • Add chunks of chicken or salmon if desired.
  • Garnish each portion with corriander and wasabi or ginger.
  • Pour 1/2 cup tea over each bowl and serve immediately.

  • Preheat oven to 425ºF (218ºC). For a convection oven, reduce cooking temperature by 25ºF (15ºC). Bake the salted salmon fillet (Shiojake) for 20-25 minutes until the skin and flesh are blistering and charred (Japanese salted salmon is always cooked till firm). If you’re using regular salmon, season the salmon with salt and set aside for 10 minutes before baking. When it’s cooked, remove the skin and bones and break up the salmon flesh into flakes. Set aside.
  • Ochazuke with Dashi: Combine all the ingredients in a small saucepan and bring it to a boil. Pour the soup into a small teapot.
  • Now serve the cooked rice in the serving bowl. Place the shredded salmon and sprinkle the rice cracker, nori, and sesame seeds on top. Serve with tsukemono, such as Pickled Cucumber, as a part of the meal.
