QUICK COFFEE CAKE WITH CINNAMON-OAT STREUSEL

Quick Coffee Cake With Cinnamon-Oat Streusel image

Our fabulous quick coffee cake takes about 10 minutes to make (bakes in 35) and has a streusel made with oatmeal, brown sugar, and butter.

Provided by Linda Larsen

Categories     Breakfast     Brunch     Snack     Bread     Cake

Time 50m

Number Of Ingredients 14

1/2 cup brown sugar
1 teaspoon cinnamon
2 ounces/1/4 cup butter (softened)
1 cup oatmeal (quick-cooking)
2 large eggs (room-temperature)
1 cup milk
1 cup of sugar
1/4 cup oil (vegetable)
1 teaspoon vanilla
2 cups flour (all-purpose)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg

Steps:

  • In a medium bowl, combine the brown sugar, cinnamon, and butter and mix together with a spoon until blended. Stir in the oatmeal until the mixture is crumbly.
  • Set this topping aside while preparing the batter.
  • Heat the oven to 375 F. Grease a 13 x 9-inch pan with unsalted butter, or solid shortening, or spray with a nonstick cooking spray containing flour, and set aside.
  • Crack the eggs into a large bowl and beat with a fork or wire whisk until combined. Add the milk and mix well until smooth. Add the sugar, oil, and vanilla and mix until blended.
  • Sift together the flour, baking powder, baking soda, salt, and nutmeg. Add the dry ingredients to the egg mixture and mix with a spoon for 20 to 30 strokes just until combined and all the dry ingredients are moistened. The batter will be lumpy but that's OK. That's what makes the cake more tender.
  • Pour the batter into the prepared baking pan. Sprinkle the reserved oatmeal streusel mixture evenly over the batter.
  • Bake the coffee cake for 25 to 35 minutes until it is puffed and golden brown, and a toothpick inserted in the center comes out clean. Let cool for about 15 minutes, and cut into squares to serve.

OATMEAL BREAD

Easy Homemade Oatmeal Bread made with rolled oats, whole wheat flour and sweetened with honey.

Provided by Lauren Allen

Categories     Appetizer     Breakfast     side course

Time 4h

Number Of Ingredients 10

2 cups milk (, brought to a simmer)
1 cup rolled oats ((not quick or instant oats))
4 tablespoons butter (, softened)
1/2 cup honey
4 ½ teaspoons instant yeast
1/2 cup warm water
1 1/2 teaspoons salt
2 1/2 cups whole wheat flour
2 1/4 -3 cups all-purpose flour
egg wash: 1 egg mixed with 1 tablespoon of water

Steps:

  • Add oats and butter to the bowl of a stand mixer or large mixing bowl. Heat milk to a simmer and pour on top, stirring to combine. Set aside for about 1.5 hours. Mixture should be at room temperature.
  • Add honey, warm water, instant yeast, and salt to the bowl and stir well to combine. Add the whole wheat flour and mix on medium-low speed until combined. Add the all-purpose flour, a little at a time, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky (don't add too much flour!). Knead for a few minutes until smooth and elastic and scrape down the sides and bottom of the bowl as needed.
  • First Rise: Transfer dough to a greased bowl and cover with a dish towel or plastic wrap. Allow to rise until double in size, about 1 hour.
  • Punch down the dough and divide into two equal pieces. Shape into loaves and place in two lightly greased loaf pans. Make egg wash and gently brush some over the top of each loaf. Sprinkle a small handful of dry oats on top.
  • Second rise: Cover with a well greased piece of plastic wrap gently laid on top and let rise in a warm place until risen about 1 inch over the loaf pans, 45 minutes to 1 hour. Carefully peel off the plastic wrap.
  • Bake at 350 degrees for 30 - 40 minutes. Loaves are done when tapping lightly on the tops produces hollow sound (or when instant read thermometer registers 200° F). Cool for 15 minutes on wire rack, then turn out of pans and cool completely.

  • Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess., To make the dough: In a large mixing bowl, or in the bowl of a stand mixer, mix together all of the ingredients to form a rough, shaggy dough.
  • Knead the dough, by hand or mixer, until it's springy though still somewhat soft, about 5 to 7 minutes. The dough may feel quite sticky at the beginning; don't be tempted to add more flour, as additional flour will make the loaf dry. If you're kneading by hand, try kneading on a lightly greased work surface rather than a floured surface.
  • Place the dough in a lightly greased bowl, cover, and allow it to rise at room temperature for 1 hour; it'll become quite puffy, though it may not double in bulk. If your kitchen is particularly cold (below 65°F), place the bowl of dough in your turned-off oven with the oven light on.
  • To shape the dough: Transfer the dough to a lightly oiled surface. Flatten the dough into a 6” x 8” rectangle. Fold the top down to the center (like you were folding a letter), pressing it firmly with the heel of your hand to seal. Pull the upper left and right corners into the center, pressing to seal. Repeat the first step (folding the top to the center and sealing) three or four more times, until you’ve created a 9” to 10” log. Tuck the ends under slightly, and turn the log over so its seam is on the bottom.
