These are wonderful, chewy 'brownies' except that they are made with oatmeal instead of chocolate. Add your favorites (nuts, chocolate chips, chocolate candies, toffee chips) and create a truly delicious snack.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- In a large bowl, beat the butter, brown sugar, and white sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, baking soda, baking powder, flour, rolled oats, plus chocolate chips, raisins, and chopped nuts if desired. Mix well to moisten all ingredients, and spread into the prepared baking pan.
- Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the pan for about 5 minutes before cutting into bars.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter, brown sugar, white sugar, eggs, and vanilla extract together in a bowl using an electric mixer until light and fluffy. Stir flour, baking powder, cinnamon, salt, and nutmeg into creamed butter mixture until batter is just combined; fold in oats and 1 cup chocolate chips. Pour batter into a 9x12-inch baking pan; sprinkle with remaining 1/4 cup chocolate chips.
- Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 40 minutes.

- Place dates in a heatproof bowl; cover with boiling water. Let stand until softened, about 10 minutes. Drain, reserving 1/3 cup liquid. Place dates and reserved liquid in a food processor; process until smooth., In a small saucepan, whisk milk, almonds, oats, cocoa and 1/4 cup date puree until blended. - Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom 9-inch square pan with shortening or cooking spray.
- In medium bowl, mix oats, flour, brown sugar and baking soda. Add butter, mix with fork or with fingers until mixture is crumbly. Reserve 1 cup of the oat mixture. Press remaining oat mixture in pan. Bake 10 minutes. Cool 5 minutes.

- Heat oven to 350°F.
- Grease bottom only of 13x9x2 pan.
- For oat mixture:.
- Mix oats, flour, brown sugar and baking soda.
- Stir in butter.
- Reserve 1 cup of the oat mixture and press remaining oat mixture into prepared pan.
- Bake 10 minutes and then let cool for 5 minutes.
- For brownie mixture:.
- Stir brownie mix, chocolate syrup, water, oil and eggs in medium bowl about 50 strokes or until well blended.

- Adjust oven rack to center position and preheat oven to 425 degrees (400 degrees if using a Pyrex pan). Line a 9-inch square pan with foil, leaving excess foil hanging over, and butter foil well.
- Place chocolate and butter in deep heavy saucepan and melt over low heat. Remove from heat and stir in remaining ingredients in order listed; mixture will be thick.
- Pack firmly into prepared pan. (One way to do this is to cover the mixture with a sheet of wax paper or plastic wrap and press with your fingers or with the bottom of another pan.) Bake 15 minutes.
- Cool in pan on rack for 20 minutes. Cover with one rack and invert onto another rack; remove pan.
- Carefully pull off foil and invert again to cool right side up. Wrap in plastic wrap and refrigerate until completely chilled.
- With long sharp knife, cut brownies in half, then cut each half into thirds.
- Cut each third into 4 strips. Store in airtight container with layers separated by wax paper or parchment paper.
