OATMEAL APPLESAUCE COOKIES

In 2005 I had back surgery. My Mom came for a week to watch the kids/take care of the house. She made these for the boys and they devoured them she said. I don't know how many these make. I know at least 3 dozen - so that is the amount I will put. Okay - I have tried at least 2 different times to edit this recipe on the directions. More than one person has wanted to make it so I will finish the directions here! :) Basically - mix all ingredients very well in large bowl. Drop by teaspoons onto greased cookie sheets. Bake at 375 degrees for 11 minutes. If you like them crunchy - let them bake a bit longer. Enjoy!

1 cup sugar
1 cup brown sugar
3/4 cup applesauce
3 eggs
1/8 teaspoon allspice
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups oatmeal
1 (12 ounce) package chocolate chips, any style

1 3/4 cups quick-cooking oats
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup packed light brown sugar
1/2 cup white sugar
1/2 cup butter, softened
1 large egg
3/4 cup applesauce
1 cup chocolate chips
1 cup raisins
1 cup chopped walnuts

Steps:

  • Set oven to 375°.
  • Lightly grease a baking sheet.
  • In a medium bowl mix the first 7 dry ingredients together.
  • In a large bowl combine combine sugars with an electric mixer until combined.
  • Add in butter and beat to form a grainy paste.
  • Add in egg and applesauce; blend until smooth.
  • Add in flour mixture; mix until combined.
  • Add in the chocolate chips, nuts and raisins; mix until combined.
  • Drop by tablespoonfuls onto prepared baking sheet leaving about 2-inches apart.
  • Bake for 12-14 minutes, or until light brown.
  • Immediately transfer to a cool flat surface to cool.

⅔ cup packed brown sugar
½ teaspoon ground cinnamon
¼ teaspoon baking soda
1 egg
½ cup applesauce
1 ¼ cups all-purpose flour
1 ¼ cups rolled oats

Steps:

  • In bowl beat butter till creamy. Add brown sugar, cinnamon, and baking soda. Stir until combined. Mix in applesauce and egg. Add flour, a little at a time. Stir in oats.
  • Drop dough onto ungreased cookie sheets. Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until lightly browned. Enjoy!

1 cup granulated sugar
1 cup applesauce
½ cup butter
1 egg
2 cups flour
1 cup quick oats
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
¼ tsp salt
½ cup raisins
½ cup chopped pecans

Steps:

  • Preheat oven to 375°F. Line a baking tray with parchment paper and set aside.
  • In a large mixing bowl, whisk sugar, applesauce & butter for 2 minutes. Add in the egg and mix again.
  • Combine dry ingredients in a separate bowl and whisk together until well combined.
  • Add dry ingredients into butter mixture, mixing as you add. Whisk until a soft dough forms.
  • Stir in raisins and pecans.
  • Use a medium cookie scoop to measure out 1.5 TBSP portions of dough. Place on baking tray. Bake 11-14 minutes. Do not overcook. Cool cookies on a cooling rack. Enjoy!

½ cup unsalted butter (softened (1 stick))
1 cup unsweetened applesauce
1 large egg (room temperature)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
2 cups old-fashioned oats
1 cup raisins (optional)
1 cup nuts (walnuts or pecans chopped, optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Line the baking sheets with a silicone mat or parchment paper. Set aside.
  • In a large bowl, cream together the sugar and butter.
  • Mix in the applesauce, egg, and vanilla extract.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt and nutmeg.

Steps:

  • Make cookies: Preheat oven to 350. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until combined. Add egg and applesauce, mix until well blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Mix in raisins.

They're sweet, chewy, and just plain GOOD!, and because they're made with whole grains, honey and fruit -- no refined anything -- my dessert-loving brothers and sister can have as much as they want! (Well, within reason, of course.) Oh, and they're egg- and lactose free. :-) I bake these on a Pampered Chef baking stone, so the cooking time will probably be less if you use a regular metal baking sheet. This recipe is the result of playing around with MartiniQueeni's Ginger Oat Cookies -- they're definitely different enough to claim as my own recipe, but a lot of the ingredients and proportions are similar. So if you like these cookies, try hers too!
