OATMEAL NUT WAFFLES
When I found this recipe in a church cookbook early in my marriage, I was eager to try it. It was an immediate success and has been a family favorite ever since. I even serve these hearty waffles for a different kind of supper.

- In a large bowl, combine flour, baking powder and salt. Combine eggs, milk, butter and honey; stir into dry ingredients and mix well. Fold in oats and nuts. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Garnish with peaches if desired.

- In a medium mixing bowl, combine the first 3 ingredients, mixing well.
- Add in the eggs, milk, butter and honey.
- With a electric mixer, on medium speed, beat until smooth.
- Stir in the pecans and oats.
- In a lightly oiled, preheated waffle iron, bake approx 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the shortening, white sugar, brown sugar and honey until light and fluffy. Stir in the milk and vanilla. Sift together the flour, baking soda and salt, stir into the creamed mixture. Then stir in the coconut, oats, dates and pecans.
- Drop dough by rounded teaspoons onto unprepared cookie sheets. Bake for 11 to 12 minutes for soft cookies, 13 to 14 minutes for crispy cookies. Remove cookies from baking sheets to cool on wire racks.

I found this recipe in Taste of Home Parties, Potlucks, and Barbecues from Joan Scott of Dunbar, Wisconsin. She found it in a church cookbook years ago and even occasionally serves them for supper. Taste of Home recommends for a quick waffle topping, sprinkle with fresh berries (strawberries, raspberries, or blueberries). Then melt some jelly with a squirt of lemon juice in the microwave and drizzle over the waffles.

Breakfast is my favorite meal of the day. I often make oatmeal during the week - always with honey. This recipe blends 2 of my favorite ingredients to make one of my favorite breakfast treats -- waffles! Yummy! I generally serve this with a side of cinnamon applesauce. ***Please note -- probably not the best "in a hurry" waffle, should do this when you have plenty of time!

- Preheat oven to 350°. Bake oats in a single layer in a shallow pan 10 minutes or until lightly toasted, stirring after 5 minutes. Let cool on a wire rack 10 minutes. Process oats in a blender or food processor 30 seconds or until finely ground.
- Sift together flour, baking powder, and salt in a large bowl; stir in ground oats.
- Beat egg whites at high speed with an electric mixer until soft peaks form.
- Whisk together egg yolks, milk, butter, and honey in a medium bowl; gently stir into oat mixture. Gently fold in egg whites just until blended.
- Cook batter in a preheated, oiled waffle iron until golden.
- Serve immediately!
