Nonstick cooking spray
2 1/2 cups all-purpose flour
3/4 teaspoon freshly grated nutmeg, plus more for topping
1/2 teaspoon fine salt
2 1/2 sticks unsalted butter, melted
1 3/4 cups granulated sugar
2 large eggs plus 3 egg yolks
2 tablespoons brandy
1 tablespoon pure vanilla extract
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on 2 sides; coat with cooking spray.
  • Whisk the flour, nutmeg and salt in a medium bowl. Whisk the melted butter, granulated sugar, eggs, egg yolks, brandy and vanilla in a large bowl until smooth. Whisk in the flour mixture until smooth. Spread the batter in the prepared baking dish. Bake until the top is shiny and slightly cracked, about 40 minutes. Let cool completely in the pan.
  • Lift the bars out of the pan using the foil overhang; dust with confectioners' sugar and sprinkle with nutmeg. Slice into 1 1/2-inch squares.

1 package spice cake mix (regular size)
2-1/2 cups old-fashioned oats
3/4 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1/8 teaspoon ground nutmeg
1/2 cup eggnog
2 tablespoons all-purpose flour
3 large eggs
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons cornstarch

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides; grease paper., In a large bowl, combine cake mix and oats; stir in melted butter. Reserve 1-1/3 cups crumb mixture for topping; press remaining mixture onto bottom of prepared pan., In a large bowl, beat cream cheese, sugar and nutmeg until smooth. Gradually beat in eggnog and flour. Add eggs; beat on low speed just until blended. Pour over crust., In a small bowl, mix cranberry sauce and cornstarch until blended; spoon over cheesecake layer. Sprinkle with reserved crumb mixture. Bake 50-55 minutes or until edges are brown and center is almost set., Cool 1 hour on a wire rack. Refrigerate at least 2 hours. Lifting with parchment, remove cheesecake from pan. Cut into bars.

1/2 cup butter, softened
1/2 cup sugar
1 cup Gold Medal™ all-purpose flour
5 egg yolks
1/4 cup sugar
1 1/4 cups whipping cream
1 tablespoon rum or 1 teaspoon rum extract
1/4 teaspoon ground nutmeg
1/2 teaspoon ground nutmeg

Steps:

  • Heat oven to 350°F. Line bottom and sides of 9-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. In small bowl, stir together butter, 1/2 cup sugar and the flour. Press in bottom and 1/2 inch up sides of foil-lined pan. Bake 20 minutes.
  • Reduce oven temperature to 300°F. In small bowl, beat egg yolks and 1/4 cup sugar with electric mixer on medium-high speed until thick. Gradually beat in cream, rum and 1/4 teaspoon nutmeg. Pour over baked layer.
  • Bake 40 to 50 minutes at 300°F until custard is set and knife inserted in center comes out clean. Cool completely, about 1 hour.
  • Sprinkle tops of bars evenly with 1/2 teaspoon nutmeg. Using foil handles, lift cooled bars from pan to cutting board; remove foil from sides of bars. With sharp knife, cut into 6 rows by 6 rows. Cover; store in refrigerator.

GLAZE
1 c powdered sugar
1/4 tsp vanilla
1 - 2 Tbsp eggnog

Steps:

  • 2. In a medium saucepan, over medium heat, cook sugar and butter, stirring, until butter is melted. Remove from heat and cool slightly. Stir eggs and vanilla into sugar mixture.
  • 3. Add flour, baking powder, and nutmeg; stir to combine. Stir in nuts. Spread the dough in the prepared pan. Bake at 350°F for 25-30 minutes or until edges begin to pull away from the pan.
  • 4. Cool in the pan on a wire rack. Cut into bars or diamond shapes when cool.
  • 5. In a small bowl combine powdered sugar, vanilla and 1 tablespoon of eggnog. Add additional eggnog, 1 teaspoon at a time, if necessary to make the glaze a piping consistency. Pipe icing over bars or drizzle.

If you like nuts, you will love this. Not as sweet as some squares. I have a walnut tree and have lots of walnuts every year and this is my favorite walnut recipe. It comes from Company's Coming Cookbook.

1 egg
1 cup brown sugar, packed
1 teaspoon vanilla
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 cup chopped walnuts or 1 cup pecans

Steps:

  • Beat eggs slightly in bowl (I use electric mixture).
  • Add sugar and vanilla, mix well.
  • Mix in flour, soda and nuts.
  • Spread in greased 8x8-inch (20x20cm) pan.
  • I line the pan with greased foil wrap and it makes removing them a lot easier.
  • This is very thick and if you wet your hands it is easier to spread around, doesn't have to be pressed evenly flat.
  • Bake in 350°F oven for about 20 minutes.
