FROSTED NUTMEG LOG COOKIES

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and extract. Combine the flour, nutmeg and salt; gradually add to creamed mixture and mix well., Divide dough into three portions. Roll each portion into 3/4-in.-thick logs; chill until firm, about 30 minutes. Cut into 2-in. pieces. Place on ungreased baking sheets; flatten slightly., Bake at 350°, until bottoms are lightly browned, 12-16 minutes. Cool for 2 minutes before removing to wire racks to cool completely., For frosting, in a large bowl, beat butter until fluffy. Beat in the confectioners' sugar, extract and enough milk to achieve desired consistency. Frost cookies. Press down with tines of a fork, making lines down frosting to simulate tree bark. Sprinkle with nutmeg.

This is from a Treasury of Holiday Cookies, a supermarket booklet that I picked up a couple of years ago. I have wanted to make these cookies and keep misplacing the booklet. If I post it, maybe I will make them.

- Preheat the oven to 350 degrees; combine the flour, baking soda, spices and salt in a medium bowl; set aside.
- Beat the sugar, shortening, molasses and vanilla at medium speed until creamy.
- Add eggs, beating well after each; gradually add flour mixture, mixing at low speed until blended.
- Beat at medium speed until thick dough forms; shape into 1 1/2 inch balls.
- Place 3 inches apart on ungreased cookie sheets; flatten with bottom of a glass dipped in sugar.
- Bake for 10 minutes or until cookies look dry, transfer to a wire rack to cool.
CHEWY GINGER MOLASSES COOKIES
Molasses adds sweetness to these cookies and gives chewiness to every bite. Eat at least one warm right off the cooling rack with a tumbler of cold milk.

- Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
- Whisk the flour, ginger, cinnamon, baking soda, cloves and salt together in a medium bowl. Set aside.
- Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed until well combined, about 3 minutes. Add the molasses and egg and beat until lighter in color, about 3 minutes. Add the flour mixture and mix on low until well blended.
- Using a tablespoon, form the dough into 1-inch balls and roll in sugar. Place each ball 2 inches apart on the prepared baking sheets. Bake until golden and crackled, 12 to 15 minutes; the cookies will still be a little soft. Baking these in 3 batches one sheet at a time gets you the nice, crackly top. The second sheet of cookies can stay on the counter until ready to bake. Form the remaining dough, roll the balls in sugar and place on the now cooled first baking sheet. Allow the cookies to cool for 5 minutes on the baking sheet, and then remove to a rack to cool completely.

- Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In a shallow bowl, place 1/2 cup sugar; set aside.
- With an electric mixer, beat butter and remaining cup of sugar until combined. Beat in egg and then molasses until combined. Reduce speed to low; gradually mix in dry ingredients, just until a dough forms.
- Pinch off and roll dough into balls, each equal to 1 tablespoon. Roll balls in reserved sugar to coat.
- Arrange balls on baking sheets, about 3 inches apart. Bake, one sheet at a time, until edges of cookies are just firm, 10 to 15 minutes (cookies can be baked two sheets at a time, but they will not crackle uniformly). Cool 1 minute on baking sheets; transfer to racks to cool completely.

- In the bowl of a stand mixer fitted with the paddle attachment, beat together the sugar and butter until light and fluffy, 3 to 5 minutes. Add the egg and beat until thoroughly combined.

Beat in 1/2 of the remaining flour mixture, then the rest of the molasses, scraping the sides of the bowl as needed. Finally, beat in the last of the flour mixture until combined. Stir in the dried pears and walnuts. Cover the dough and refrigerate until firm, about 1 hour.
- Position racks in the upper and lower thirds of the oven and heat the oven to 350 degrees. Line baking sheets with parchment paper. Scoop about 2 tablespoons of the chilled dough to form each cookie, rolling the dough in sugar. Space the balls about 3 inches apart and press to slightly flatten the balls.
