SPICY RANCH SNACK MIX



Spicy Ranch Snack Mix image

Number Of Ingredients 16

2 tablespoons buttermilk powder
2 teaspoons dried parsley
2 teaspoons dried chives
1 teaspoon dried dill
1 teaspoon dry mustard
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups pretzel snaps
2 cups Cheddar bunny crackers
2 cups oyster crackers
2 cups sriracha peas (or use wasabi peas if the sriracha ones are hard to find)
2 cups white Cheddar cheese balls
4 tablespoons unsalted butter
2 tablespoons sriracha
3 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 250 degrees F. Line a rimmed baking sheet with parchment paper.
  • In a small bowl, stir together the buttermilk powder, dried parsley, dried chives, dried dill, dry mustard, cayenne, garlic powder and onion powder. (This is a homemade dry ranch seasoning mix which you could also treat like the packet and stir into sour cream or Greek yogurt for a quick dip!)
  • In a large bowl, combine the pretzel snaps, Cheddar bunnies, oyster crackers, sriracha peas and white Cheddar balls.
  • Melt the butter in a small skillet (or the microwave) and stir in the sriracha.
  • Drizzle the butter mixture over the snack mix and toss with the seasoning mix and Parmesan. Spread on the prepared baking sheet and bake, tossing once or twice, until everything is dry and toasted, about 25 minutes. Let cool on the baking sheet.

Nut-Free Ranch-Flavored Crispy Cereal Snack Mix image

Roasted green peas make a crunchy and colorful swap-out for nuts in our snack mix, which we change up with a homemade ranch-flavored spice blend. If the buttermilk powder in the blend isn't part of your pantry yet, it should be: It's great to have on hand whenever you need a bit of this recipe staple, and it keeps at room temperature for 9 months.

Number Of Ingredients 14

6 tablespoons buttermilk powder (see Cook's Note)
1 tablespoon garlic powder
1 tablespoon onion powder
Kosher salt
1/8 to 1/4 teaspoon cayenne pepper
4 cups crispy rice cereal
2 cups roasted salted green peas (see Cook's Note)
1 1/2 cups bagel chips, broken into pieces
1 1/2 cups bite-sized pretzels
4 tablespoons unsalted butter
Zest of 3 lemons
2 tablespoons dried chives
2 tablespoons dried parsley
2 tablespoons distilled vinegar

Steps:

  • Combine the buttermilk powder, garlic powder, onion powder, 2 teaspoons salt and the cayenne in a small bowl. Toss together the cereal, peas, bagel chips and pretzels in a large microwave-safe bowl.
  • Microwave the butter, lemon zest, chives and parsley in a microwave-safe small bowl on high for 30 seconds; stir, then microwave until the butter is melted, about 15 seconds more. Stir in the vinegar. Pour the mixture over the cereal mixture, and toss well to coat. Sprinkle the buttermilk powder mixture on top, and toss well to coat.
  • Microwave the snack mix on high for 2 minutes; stir, then microwave for 3 minutes more, stirring well every 45 seconds or so. Spread the mixture on a large rimmed baking sheet, and let cool and dry for 10 minutes before packing into airtight containers. The mix will keep for 2 days at room temperature.

Capturing the creamy tang of ranch in a dry snack mix can be elusive, but it is possible. Adding vinegar to the melted butter that coats the ingredients in this recipe, and hitting it with buttermilk powder both before and after baking infuses everything with both of those flavor notes.

1/4 cup buttermilk powder
2 tablespoons onion powder
5 teaspoons garlic powder
1 tablespoon dried dill
Kosher salt and freshly ground pepper
3 cups rice cereal squares
2 cups square white cheddar crackers
2 cups roughly broken salted pita chips
1 cup roasted salted almonds
1 cup sesame sticks
1 1/2 sticks (12 tablespoons) unsalted butter
2 tablespoons apple cider vinegar
2 cups small pretzels (preferably ranch-flavored)

Steps:

  • Preheat the oven to 250˚ F. Combine the buttermilk, onion and garlic powders, dill, 1 1/2 teaspoons salt and 1 teaspoon pepper in a small bowl and whisk to combine.
  • Combine the cereal, crackers, chips, almonds and sesame sticks in a large bowl and toss.
  • Melt the butter in a medium skillet over medium-low heat. Remove from the heat and stir in the vinegar. Pour about half of the butter mixture over the cereal mixture and toss, then pour in the remaining butter mixture and toss again until everything is well coated and there is no butter at the bottom of the bowl. Add half of the spice mix and toss to coat.
  • Spread the cereal mixture on a rimmed baking sheet. Bake, stirring occasionally, until dry, crisp and lightly toasted but not browned, 50 to 60 minutes. Remove from the oven and toss with the pretzels and remaining spice mix. Set aside to cool, stirring occasionally.

GARLIC-HERB MIXED NUT SNACK MIX



Garlic-Herb Mixed Nut Snack Mix image

Nuts, popcorn, pretzels and cereal are the snack champions in this garlic-herb-flavored mix.

1 tablespoon minced fresh rosemary
1 tablespoon minced fresh sage
1 tablespoon minced fresh thyme
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for the baking sheet
1 large egg white
1 cup unsalted raw almonds
1 cup rice or corn cereal squares
1 cup unsalted raw peanuts
1 cup unsalted raw pecans
1 cup mini pretzels
1/2 cup corn nuts
1 cup cheese popcorn

Steps:

  • Mix together the rosemary, sage, thyme, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Lightly coat a rimmed baking sheet with oil.
  • Put the egg white in a large bowl and whisk until frothy. Add the almonds, cereal, peanuts, pecans, pretzels and corn nuts and toss to coat in the egg white. Add the spice blend and toss to coat.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then stir in the popcorn and transfer to a large bowl.

1 cup Bugles
1 cup pretzel sticks

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine the remaining ingredients. Drizzle over cereal mixture; toss to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 250° for 30 minutes, stirring every 10 minutes. Cool completely on wire racks. Store in an airtight container.

2 tablespoons Worcestershire sauce
¾ teaspoon garlic powder
1 ½ teaspoons seasoning salt
½ teaspoon onion powder
1 cup mixed nuts
1 cup mini pretzels
1 cup bagel chips
3 cups crispy corn cereal squares
3 cups crispy rice cereal squares
3 cups crispy wheat cereal squares

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Melt the margarine in a 9x13 inch baking pan.
  • Remove baking pan from oven. Stir in the Worcestershire sauce, garlic powder, seasoning salt and onion powder. Gradually mix in the nuts, pretzels, bagel chips, crispy corn cereal squares, crispy rice cereal squares, and crispy wheat cereal squares. Evenly coat all ingredients.
  • Bake approximately 1 hour in the preheated oven. Drain on paper towels.

¼ teaspoon garlic powder

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Combine cereal, pretzels, cheese-flavored crackers, oyster crackers, and peanuts in a large bowl.
