SHRIMP AND SCALLOP LASAGNA
Steps:
- Preheat the oven to 375 degrees F. Spray a 13 by 10-inch aluminum foil pan with vegetable oil cooking spray.
- In a large pot of boiling salted water, cook the lasagna noodles until they are just done, about 8 minutes. Drain and set aside.
- Melt the butter in a large, heavy skillet and cook the onion over low heat until very soft, about 5 minutes. Add the garlic and cook about 1 minute more. Over medium-low heat, stir in the flour with a whisk, then gradually add the half-and-half, allowing the sauce to thicken slightly before adding more. When the sauce has thickened to about the consistency of whipping cream, add the cheese and stir well. Add the salt and pepper and stir again. Add the scallops and cook for about 3 to 4 minutes, then add the shrimp and cook for 1 to 2 minutes or just until the shrimp turn pink. Turn off the heat.
- Spoon about 2 tablespoons of the sauce from the skillet into the prepared pan. Cover the bottom of the pan with 4 noodles, placing them side by side. Spoon 1/3 of the sauce over the noodles, distributing half of the seafood evenly. Layer 4 more noodles, 1/3 of the sauce, and remaining seafood. Cover with the last 4 noodles and the remaining sauce. (For the top layer, do not spoon any seafood on top of the noodles; just use the sauce.) Tuck in any edges of the noodles so they're all coated with sauce. Top with the Parmesan.
- Bake for 20 to 25 minutes, uncovered, until bubbly. Allow to sit for 10 minutes before slicing.
NOT-LIKE-THE-OTHERS SEAFOOD LASAGNA
This is a nice, lighter seafood lasagna. No cottage cheese. No mozzarella. No cream-of-anything soup. The secret is the SWISS CHEESE sauce - sounds crazy, but it works really nicely with the other flavors. I am generally not a fan of imitation crab (nothing's as good as the real thing!), but in this case you need the firmer texture to hold its own with everything else. It's 7 WW points/serving.

- For tomato sauce: combine undrained tomatoes, mushrooms, oregano, onion powder, salt & pepper in medium saucepan; bring to boil. Reduce heat and simmer, uncovered about 20 mins or until thickened. Stirm in shrimp. Set aside.
- For cheese sauce: melt butter in medium saucepan. Stir in flour. Add milk all at once. Cook and stir over medium heat till thickened and bubbly. Cook and stir 1 minute more. Stir in Swiss cheese until melted. Stir in imitation crab and wine.
- Layer half of the shrimp sauce, half of the noodles and half of the cheese sauce in 2-qt. rectangular baking dish. Repeat layers. Top with Parmesan cheese.
- Bake uncovered in 350* oven about 25 minutes or until heated through. Let stand for 15 minutes before serving.

MOM'S SEAFOOD LASAGNA
Growing up, I always loved when my mom made this lasagna. I changed a couple of things-no-boil lasagna noodles make assembly much faster. Also, I like the nutty, robust flavor of Romano cheese, so I added that, too.

- For the seafood: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch baking pan with cooking spray.
- Melt the butter in a large skillet over medium heat. Add the shrimp, garlic and seafood seasoning and cook until the shrimp turn pink, 2 to 3 minutes. Remove the shrimp from the skillet.
- Add the wine and lemon juice to the skillet, scraping any browned bits from the bottom of the skillet with a wooden spoon. Bring to a simmer and cook until the mixture is reduced by half, about 2 minutes. Remove from the heat and stir in the shrimp and crabmeat.
- Make the béchamel sauce: Melt the butter in a medium saucepan over medium heat. Whisk in the flour until combined. Gradually add the milk, salt, pepper and nutmeg. Cook, whisking constantly, until the mixture is thickened, about 2 minutes. Remove from the heat and stir in the Romano until melted. Set aside.
- Make the spinach-artichoke ricotta: Stir together the ricotta, spinach, artichoke hearts, mozzarella, breadcrumbs, lemon zest and egg until combined. Season with salt. Fold in 1 cup of the béchamel sauce.
- Assemble the lasagna: Spread about 1/2 cup of the béchamel sauce in the bottom of the prepared baking dish. Top with 3 to 4 lasagna noodles and about 2/3 cup béchamel sauce. Top with half of the spinach-artichoke ricotta and half of the seafood. Repeat the layers once. Top with the remaining 3 to 4 lasagna noodles and béchamel sauce. Sprinkle with the mozzarella and Romano.
- Cover the baking dish with aluminum foil (coat with cooking spray before adding to the top to prevent the cheese from sticking). Bake, covered, until the lasagna is bubbly, about 30 minutes. Uncover and bake until the noodles are tender and the top is golden brown, 10 to 15 minutes longer. Remove from the oven and let stand for 10 minutes before slicing and serving.
LASAGNA LIKE NO OTHER!
Once you taste this lasagna recipe, you'll want it no other way. Since there are a lot of steps, this is may not be a recipe a beginner cook wants to tackle. - 1. In a large pot, brown ground beef. Add salt and pepper to taste. Add one tablespoon of granulated garlic. Drain meat if necessary.
- 2. Add onions and chopped garlic. Cook for a couple of minutes.
- 3. Add both cans of tomatoes and tomato paste. Mix into meat and onion mixture. Cook for a minute.
- 4. Add basil, Italian seasoning, and sugar. Stir.
- 5. At this point, you may need to add about 14 ounces of water. Also, you may want to add more sugar, salt, and pepper to taste. Tomatoes will vary and more seasonings may be necessary. Let is simmer for about an hour while you prepare the other ingredients.
- 6. For ricotta sauce, in a large pan, melt butter. Add flour. Make sure all the flour is absorbed into the butter.
- 7. Cook for two minutes.
- 8. Add milk and whisk together. Bring up to a low simmer.
- 9. Add ricotta cheese and whisk together.
- 10. Add garlic, basil, Parmesan cheese, salt, and pepper. Whisk and bring up to a simmer. Remove from heat and set aside.
- 11. To assemble the lasagna, cook noodles to the point of being pliable yet firm.
- 12. Lay noodles in a pan. You may have to cut to fit your pan. If so, alternate the end where you put cut noodles.
- 13. Spoon ricotta cheese mixture over noodles and spread evenly.
- 14. Sprinkle with mozzarella cheese and Parmesan cheese.
- 15. Then a little meat sauce. Repeat this step. I can usually fit three layers. Save a little meat sauce for the top.
- 16. Top the lasagna with a layer of noodles.
- 17. Then top the noodles with a little meat sauce and a generous layer of mozzarella and Parmesan cheese.
- 18. Bake at 350 for approximately one hour. I recommend placing a pan beneath your lasagna in case it bubbles over.

- In a large skillet, saute onion in oil and 2 tablespoons butter until tender. Stir in broth and clam juice; bring to a boil. Add scallops, shrimp, crab and 1/8 teaspoon pepper; return to a boil. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in cream and 1/4 cup cheese. Stir 3/4 cup white sauce into the seafood mixture., Preheat oven to 350°. Spread 1/2 cup white sauce in a greased 13x9-in. baking dish. Top with three noodles; spread with half of the seafood mixture and 1-1/4 cups sauce. Repeat layers. Top with remaining noodles, sauce and cheese. , Bake, uncovered, at for 35-40 minutes or until golden brown. Let stand for 15 minutes before cutting.
