THE 10 MOST DELICIOUS GAMEBIRDS AND HOW TO COOK THEM

From fieldandstream.com
Author Phil Bourjaily
  • Canada Goose. Not just any Canada goose. It needs to be a corn-fattened, late season giant Canada of the type we very conveniently have in reasonable abundance not far from the house.
  • Ruffed Grouse. Tender, almost sweet, ruffed grouse meat is as good as white meat gets. Recipe Idea for Ruffed Grouse: Pine-Smoked Grouse with Butternut Squash Purée.
  • Bobwhite Quail. Everything true about grouse is true of bobwhites—except quail are smaller and easier to come by where I live. I’d also rather hunt quail than almost anything.
  • Sharptail Grouse. Someone once asked me if my wife was outdoorsy, and I said no, she’s indoorsy, which made it all the more surprising when she took one bite of a sharptail I brought home and said, “I’d hunt for these.”
  • Mallards and Pintails. The one pintail I brought back from a hunt near Sacramento a few years ago was the most delicious and decadently-fat duck I’ve ever eaten.
  • Wood Ducks. Once wood ducks start hitting the acorns or the cornfields, they are pretty hard to beat on the table. Recipe Idea for Wood Ducks: Duck, Date and Rutabaga Pot Pie.
  • Wild Turkey. Having shot all four sub-species, I’d have to say they were uniformly excellent. Turkey is a great “gateway” bird to serve to people who don’t think they like wild game because it tastes just like a domestic turkey, but richer and better.
  • Mourning Dove. Each mourning dove carries with it two delicious bites of steak-like breast meat. Whether you believe the necessity of shooting lots of doves to make a meal is a glitch or a feature of these birds is up to you.
  • Ringneck Pheasant. I want to rate pheasants higher than ninth, because they are the birds I hunt the most, and I like eating them very much, but they can be a bit chewier and coarser than other upland birds.
  • Bluewing and Greenwing Teal. Teal are among the best eating ducks of all. If only they weren’t so tiny they would rank higher. Cinnamon teal, I’m told, are not so good to eat.

25 BEST PHEASANT RECIPES - INSANELY GOOD

Published Dec 8, 2021
Category Recipe Roundup
  • Pheasant in Mushroom and Wine Sauce. The wine sauce in this dish makes the pheasant, which can sometimes come out dry, as juicy and tender as any meat you can cook.
  • Garlic and Wine Pheasant. Even though there’s no soy sauce, peanut sauce, or Sriracha, this dish has a distinctly Asian flair. It’s simple to make, requiring only six ingredients (plus salt and pepper to taste).
  • Pressure Cooker Pheasant. If you’d like to cook pheasant but don’t know how, this recipe for pressure cooker pheasant is an ideal place to start. Want to save this recipe?
  • Oven-Roasted Pheasant. Oven-roasted pheasant is for anyone who loves tender, succulent white meat and perfectly crispy, well-seasoned skin. It’s garlicky and flavorful, and it tastes incredible alongside the chorizo, parsnip sticks, and a fresh garden salad.
  • Pheasant Stew. Pheasant stew is warm and filling, and there’s nothing better on a long, cold winter’s night. It’s thick and chunky, and the meat is so tender that it practically falls off the bone.
  • Pheasant Pot Pie. If you can make a chicken, turkey, beef, or veggie pot pie, then you can whip up this pheasant pot pie just as easily. You’ll use refrigerated pie crusts to get that gorgeous, scrumptious, golden-brown crust, and the broth, butter, and milk combine to make a rich, creamy sauce.
  • Pheasant Pasta. You may use spaghetti noodles in this pheasant pasta, but earthy dinner is about as far from spaghetti as you can get. For one thing, there’s no heavy Ragu or Prego coating all the noodles.
  • Honey-Soy-Glazed Pheasant. For this savory dish, you’ll marinate the pheasant overnight in whatever marinade you like best. (I prefer the homemade marinade – soy sauce, garlic, onion, honey, and vinegar.)
  • Roast Pheasant Masala. If you’re looking for something with a bit more spice and robust flavor, try the roast pheasant masala. It’s simple to make, requiring only 20 minutes to prepare and an hour to cook.
  • Pheasant Sticky Fingers. On the other hand, if you want something spicy, these pheasant sticky fingers will bring the heat! Think of spicy hot wings but made from pheasant instead of chicken.

  • To make the brine, combine 1 gallon water with 1 cup salt, sugar, honey, juice of the lemons, squeezed-out lemon halves, onion, bay leaves, peppercorns, and rosemary or thyme sprigs.
  • Lay the spatchcocked bird in a nonreactive baking dish or roasting pan. Pour the brine over the bird.
  • Cover and refrigerate for at least 1 hour and up to 12 hours (the smallest birds, such as quail, could be brined for as little as 15-20 minutes; larger birds, such as turkeys, benefit from 6-8 hours of brining or more).
