NOR'S SAUSAGE CHEDDAR ZUCCHINI QUICHE

I love sausage. I thought to combine some flavors that are outstanding together. This is a savory Quiche with Sausage,onion,Zucchini, sun dried tomatoes and Cheddar cheese. It has a little kick of heat. Hope you all enjoy my creation.

1 small zucchini cut length wise and sliced
1 medium vahdalia or other onion
4-6 sun dried tomatoes packed in olive oil,or soaked in water if dried
4-5 4-5 links chicken sausage, ot sweet italian sausage ( i use premio)
1/4 tsp crushed red pepper
1/4-1/2 tsp garlic salt
1/4 tsp thyme
1/2 tsp dried basil
1 1/2 c sharp shredded cheddar cheese
3 eggs
1 1/4 c heavy cream
1 pinch ground black pepper
1 dash(es) salt
1 deep dish frozen pie crust baked for 10 minutes

Steps:

  • 1. Heat oven to 400 degree's F Cook sausage on baking sheet until cooked through. Remove from oven to cool,and slice and chop sausage in to chunks,and set aside.
  • 2. Place pie crust in oven. Make sure you poke holes in bottom of crust first. Bake pie shell for 10 minutes,and remove from oven.
  • 3. Cook onion with olive oil for about 5-10 minutes. Add the chopped sun dried tomatoes. Season with the basil,Garlic salt,Thyme,and crushed red pepper saute for 5 minutes.
  • 4. Add the chopped Zucchini and cook for about 5 minutes,and add sausage. Saute to make flavors blend.Remove from heat.
  • 5. In a bowl whisk the eggs and cream together well. Mix in some salt and pepper. Add the cheese to the sausage mixture to combine. Put sausage mixture in baked pie shell. Pour the egg cream mixture evenly over all ingredients in shell.( if some cream egg mixture won't fit in shell. Just discard it.Fill as much as you can)
  • 6. Bake at 400 degree's for 40 minutes. Remove from oven and let sit for 10 minutes before slicing.

2 cups grated zucchini
1 (9 inch) pie shell, unbaked
6 eggs, beaten
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread zucchini on the bottom of the pie shell. Pour eggs over zucchini and top with Cheddar cheese.
  • Bake in preheated oven until eggs are set, about 30 minutes.

This is delicious hot or cold! I love it either way! Nice and creamy with great mild flavor from the garlic. Is great taken for lunch the next day and eaten cold or at room temp.

2 cups zucchini, sliced thin
1 cup onion, sliced
3 tablespoons olive oil
1 garlic clove, crushed
1 1/2 teaspoons salt
4 beaten eggs, beaten
1 cup milk
1 cup heavy cream
1/2 cup mozzarella cheese, shredded
1 (10 inch) pie crusts

Steps:

  • Sauté zucchini, onion and garlic in olive oil until tender.
  • Season with salt.
  • Cover bottom of pie crust with this mixture.
  • Combine remaining ingredients and pour into pie shell.
  • Bake in preheated oven at 375° for 30-35 minutes until custard is set.
  • Serve hot or cold.
  • I have had this hot and cold and is good either way!

  • Preheat oven to 325°F. Coat four 8-ounce shallow ramekins or quiche dishes or one 9-inch pie plate with cooking spray. Set aside.
  • In a medium skillet cook turkey sausage, zucchini, and sweet pepper until turkey is cooked through and sweet pepper is just tender, using a wooden spoon to break up turkey as it cooks. In a medium bowl combine cooked turkey mixture and Parmesan cheese. Divide mixture among the prepared dishes or spoon into the pie plate. In a medium bowl whisk together egg, milk, and black pepper. Divide egg mixture evenly among the ramekins or pour into the pie plate. Sprinkle with mozzarella cheese.
  • Bake individual servings about 25 minutes or pie plate about 35 minutes or until a knife inserted in center(s) comes out clean. Cool on a wire rack 10 minutes before serving.
