Creamy Dairy-free One Pot Pasta Recipe by Tasty image

Here's what you need: olive oil, onion, garlic, tomato paste, grape tomato, salt, pepper, vegetable broth, non-dairy milk, dried pasta, fresh spinach, nutritional yeast

olive oil, to taste
1 onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 pt grape tomato, halved
salt, to taste
pepper, to taste
2 ½ cups vegetable broth
2 ½ cups non-dairy milk
16 oz dried pasta
5 oz fresh spinach
⅓ cup nutritional yeast

Steps:

  • In a large pot over medium heat, add the olive oil and onion and cook for 3-5 minutes until semi-translucent.
  • Add the garlic and tomato paste and cook for 3 more minutes, stirring occasionally.
  • Add the tomatoes and cook for 3-5 more minutes, until the skins begin to wrinkle and tomatoes begin to release liquid.
  • Season with salt and pepper, than add the vegetable broth, non-dairy milk, and pasta and stir until combined.
  • Bring to a boil, then cover, reduce heat, and let simmer for 10 minutes or until most liquid is absorbed.
  • Add the spinach and stir until wilted.
  • Add the nutritional yeast and stir until combined.
  • Remove from heat and serve immediately.
  • Enjoy!

  • Preheat oven to 400 degrees F (204 C) and toss tomatoes in a bit of olive oil and sea salt. Place cut side up on a parchment-lined baking sheet and bake for 20 minutes while you prepare the rest of the dish. Then set aside.
  • Bring a large pot of water to a boil and cook pasta according to package instructions. When done, drain, cover and set aside.
  • In the meantime, prepare the sauce. In a large skillet over medium-low heat, add 1 Tbsp (15 ml // use more, as needed, if increasing batch size) olive oil and the garlic and shallot. Add a pinch of salt and black pepper and stir frequently, cooking for 3-4 minutes until softened and fragrant.
  • Stir in flour (or other thickener of choice – see notes) and mix with a whisk. Once combined, slowly whisk in the almond milk a little at a time so clumps don’t form. Then add nutritional yeast, another healthy pinch of salt and black pepper, and bring to a simmer. Continue cooking for another 4-5 minutes to thicken.

  • Place the raw cashews in a bowl. Cover with boiling water (the 1 cup of water will be used later, just use enough boiling water to cover the cashews) and let sit for 30 minutes. You can make the pasta and tomato-meat sauce in the meantime.
  • Preheat the oven to 350F. Cook the pasta according to package instructions - but subtract a minute or so from the boil time so the pasta is al dente.
  • In a large skillet, add 1 tablespoon olive oil along with the Italian sausage and onion. Cook, breaking up into small pieces until browned and cooked through, about 6-8 minutes. Add the garlic, Italian seasoning, red pepper flakes, marinara sauce and diced tomatoes. Cook until heated through for another 5 minutes or so. Remove from heat and set aside.
  • Drain the cashews and place in a high-speed blender. Add 1 cup of fresh water along with the olive oil, lemon juice, and salt. Blend until completely smooth. Add the eggs and blend until smooth. (The sauce will look very liquidy and runny but will set up in the oven.)
