This is posted per a request. The recipe is from The World Of Jewish Desserts cookbook. This is a traditional Passover and Purim candy. The candy should be chewy since it is cooked to less than 300F, the temperature at which syrup becomes brittle. Also, the candy is sticky since honey absorbs moisture from the air. Therefore, do not make this on a very humid day (unless you have on the air conditioner). The base recipe indicates to cook until soft-crack stage (280F). Cook times do not include cool times.

Number Of Ingredients 4

1 lb honey (1 1/3C)
1 cup sugar
1 tablespoon lemon juice (optional)
1 -1 1/2 lb pecans or 1 -1 1/2 lb walnuts

Steps:

  • In medium-sized heavy-bottomed saucepan, stir honey, sugar and lemon juice over low heat until sugar dissolves, approximately 5 minutes.
  • Stop stirring, increase heat to medium and bring to gentle boil, approximately 5 minutes.
  • Add nuts and reduce heat to low, stirring frequently until thickened and golden-colored, approximately 30 minutes.
  • Pour onto greased marble slab or baking sheet.
  • Spread to 1/2-inch thickness.
  • Let cool until firm but not hard, approximately 10 minutes.
  • Dip sharp knife into hot water and cut into 1-inch pieces (squares or diamonds).
  • Cool completely.

This is a great recipe! It's very easy too. I make mine with almonds, but I have tried pecans and it was equally good.I put pieces of the candy in mini muffin cup papers, go give for gifts. I hope you will try and enjoy! Times are guestimated, as I'm usually too busy to time things around the holidays!

1 cup almonds, lightly toasted and chopped
3/4 cup brown sugar, tightly packed
1/2 cup butter
1/2 cup semi-sweet chocolate chips

Steps:

  • Butter a 9-inch aquare pan.Spread nuts in bottom. In medium saucepqn, heat sugar and butter to boiling. Be careful not top burn. Stir constantly for 7 minutes.
  • Immediately spread mixture over the nuts. Evenly sprinkle chips on top.
  • Cover pan to allow contained heat to melt chocolate. Spread melted chocolate over candy. ut into 1-1/2-inch squares while still hot. Chill until firm.

I found this in the new TOH. This sounds so easy and tasty! Let me know how it is. Cooking time does not include chilling time.

1 cup walnut halves
1 cup pecan halves
1 cup brazil nut, halved
1 teaspoon butter
1 1/2 cups sugar
1 cup heavy whipping cream
1/2 cup light corn syrup

Steps:

  • Place the walnuts, pecans and brazil nuts in a single layer on a baking sheet.
  • Bake at 350 for 4-8 minute or until toasted and golden brown, stirring once.
  • Cool on a wire rack.
  • Line an 8-inch square pan with foil; grease the foil with butter and set aside.
  • In a heavy saucepan, combine sugar, cream and corn syrup.
  • Bring to a boil over medium heat, stirring constantly.
  • Stir in toasted nuts.
  • Cook, without stirring, until a candy thermometer reads 238 degrees (soft ball stage).
  • Remove from heat.
  • Stir with a wooden spoon until creamy and thickened.
  • Quickly spread into prepared pan; cool.
  • Cover; refrigerate for 8 hours or overnight.
  • Using foil, lift candy out of pan; discard foil.
  • Cut candy into squares.
  • Stor in an airtight container in refrigerator.

PASSOVER CHOCOLATE MATZAH CANDY

This candy is positively addictive. It will disappear right before your eyes. The photos of the candy with the nuts were made with white sugar. The photos of the candy with the sprinkles were made with brown sugar which tastes a bit caramelized and (I think) a bit sweeter. Both delicious.

6 sheets matzoh crackers
12 ounces semi-sweet chocolate bits
1/2 lb butter
1 cup white sugar (your choice) or 1 cup brown sugar (your choice)
1 cup walnuts (approximately)

Steps:

  • Grease both sides of aluminum foil and set in the bottom of a cookie sheet.
  • Arrange the matzah on top of the foil breaking them, if necessary, to fit the pan completely.
  • Melt the butter and add the sugar and cook for 3 minutes.
  • Pour mixture over the matzah and spread evenly to cover them all.
  • Put into a 350 degree oven for 5 minutes.
  • Remove from oven and sprinkle the chocolate chips over the top.
  • It will take approximately 3-5 minutes for the chocolate to melt.
  • When melted spread over the top of the matzah.
  • If desired, sprinkle with chopped nuts.
  • Refrigerate till firm.
  • Break into pieces.
