1 3/4 cups flour
1 3/4 cups packed light brown sugar
3/4 cup cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups reduced-fat buttermilk
3 large egg whites
4 tablespoons light margarine, melted
1 1/2 teaspoons vanilla extract
1 cup boiling water
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 350°F Lightly coat a 9-by-12-inch baking pan with cooking spray.
  • In a large bowl, combine next 6 ingredients (flour through salt). Mix well with a fork to break up brown sugar. Set aside.
  • In a large mixing bowl, combine buttermilk, egg whites, melted margarine and vanilla. Mix on low speed until blended.
  • Gradually beat in boiling water.
  • Then slowly add flour mixture and, again, mix on low speed until blended.
  • Pour batter into prepared pan and bake 25 minutes, or until a toothpick inserted in center comes out clean.
  • Cool cake in pan on a wire rack.
  • Sift confectioners' sugar over top just before slicing.

This is a recipe my mother made when we were children. It was so moist it never needed frosting. Mom would use a paper doily to make a pretty powdered sugar design on the top. I have found a couple online, but they just were not as good.

1 1/2 cups flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking soda
3 tablespoons baking cocoa
6 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla
1 cup cold water

Steps:

  • Preheat oven to 350 degrees.
  • Thoroughly mix dry ingredients in an ungreased 8 x 11" pan. Make 3 wells in the dry mixture and pour the vegetable oil in one, the vanilla in a different one and the vinegar in the last one. Pour the cold water over all and stir with fork until well blended.
  • Bake for 30 minutes. Cake is done when center springs back when lightly touched. Do not test with a toothpick or knife.

1 cup boiling water
1/4 cup butter, softened
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup sugar
3 tablespoons baking cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Confectioners' sugar

Steps:

  • In a bowl, beat water and butter until butter is melted. Beat in egg and vanilla. Combine flour, sugar, cocoa, baking powder, baking soda and salt; add to the egg mixture. Beat for 2 minutes. , Pour into a greased 8-in. square baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar.
