EASY PEACH COBBLER

1/2 cup unsalted butter, melted
1 cup all-purpose flour
2 cups sugar
3 teaspoons baking powder
Pinch salt
1 cup milk
4 cups peeled, pitted and thinly sliced fresh peaches (5 to 6 medium peaches)
1 tablespoon fresh lemon juice
Several dashes ground cinnamon or ground nutmeg (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Pour the melted butter into a 13 by 9 by 2-inch baking dish.
  • In a medium bowl, combine the flour, 1 cup sugar, the baking powder, and the salt and mix well. Stir in the milk, mixing until just combined. Pour this batter over the butter but do not stir them together.
  • In a small saucepan, combine the peaches, lemon juice, and remaining cup of sugar and bring to a boil over high heat, stirring constantly. Pour the peaches over the batter but do not stir them together. Sprinkle with cinnamon or nutmeg if desired.
  • Bake in the preheated oven for 40 to 45 minutes or until the top is golden-brown. Serve warm or cold.

I love my mom's Made From Scratch Peach Cobbler, the one she makes where she rolls out the dough and lovingly places it over the cobbler, but ... ain't nobody got time for that, LOL. This is almost as good, and it's quick and easy, my favorite way to cook.

1 stick(s) margarine or butter
1/2 cup(s) sugar
1 cup(s) milk
1 medium can of peaches
1 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/2 t teaspoon(s) salt

Steps:

  • Mix dry ingredients in bowl; add milk. Pour into 9x13" glass baking dish.
  • Melt butter and pour over batter, covering batter well. Dip peaches with a spoon and arrange over batter. Gradually pour peach juice over the top.
  • Sprinkle with 1/4 cup sugar (in addition to the 1/2 cup sugar used in the batter).
  • Bake at 350 degrees for 30 minutes or until dough is done.

4 cups fresh peaches - peeled, pitted, and sliced
2 tablespoons white sugar
1 cup white sugar
¼ teaspoon salt
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pour butter in to the bottom of a large casserole or 9 x 13 inch pan.
  • In the prepared dish, toss together the peaches and 2 tablespoons sugar.
  • In a mixing bowl, combine the 1 cup sugar, salt, baking powder, flour, cinnamon, and milk. Spoon batter over the peaches.
  • Bake for 45 minutes in the preheated oven, or until top is golden brown.

1 cup flour
1 cup sugar
1/2 teaspoon salt
1 egg, beaten
6 tablespoons butter, melted

Steps:

  • Place peaches in bottom of 9x9 pan or casserole.
  • Sprinkle lemon juice over peaches
  • Sift dry ingredients.
  • Beat egg slightly and add to dry ingredients. Toss with fork until crumbly.

I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup room temperature milk
1 room temperature egg
1 (28 ounce) can sliced peaches, drained

1 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Melt butter in a 9 x 13 inch pan.
  • Mix together flour, sugar, baking powder & salt.

1 cup whole wheat pastry flour
1 cup sugar substitute (Splenda)
1/2-1 cup butter, cut into 1 tablespoon sections (1 or 2 sticks.)
1/2 teaspoon cinnamon (optional)

Steps:

  • - Put fruit in bottom of 9x13-inch pan.
  • -Mix together flour, Splenda, and butter until it resembles a course meal (cut in with pastry knife or fork).
  • -Sprinkle on top of fruit. Because whole wheat pastry flour can be grainier than all purpose, I melted 1/2 stick of butter and poured over topping for added moisture.
