CRISPY UN-FRIED CHICKEN

1 cup buttermilk
1 teaspoon hot sauce
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
One 3 1/2- to 4-pound whole chicken, cut into 10 pieces
2 cups panko breadcrumbs
1 teaspoon paprika
1/2 teaspoon cayenne
Freshly ground black pepper
Nonstick cooking spray

Steps:

  • In a large bowl, stir together the buttermilk, hot sauce and 1 teaspoon each of the garlic powder, onion powder and salt. Add the chicken and toss to coat. Refrigerate for at least 1 hour and up to overnight.
  • Preheat the oven to 425 degrees F.
  • Put the breadcrumbs, paprika, cayenne and the remaining teaspoon garlic powder, onion powder and salt in a large resealable plastic bag; shake to combine. Remove the chicken from the brine and add it to the bag. Seal the bag and shake vigorously to coat the chicken.
  • Line a baking sheet with a rack and spray well with nonstick spray. Arrange the chicken on the rack, skin-side up, and spray the chicken very generously.
  • Bake until the chicken is golden brown and cooked through, about 40 minutes.

4 boneless skinless chicken breast halves
1 egg, beaten
3/4 cup Italian seasoned breadcrumbs
1 (26 ounce) jar light pasta sauce
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 400 degrees.
  • Dip chicken in egg, then bread crumbs, coating well.
  • In 13x9 inch glass baking dish, arrange chicken, bake uncovered 20 minutes.
  • Pour pasta sauce over chicken: then top with cheese, bake an additional 10 minutes or until chicken is no longer pink.
  • Serve over hot cooked pasta.

I have had this recipe for 20 years so I have no idea where I got it originally, but i remember why lol. I never could fry chicken just right, and I wanted to make it for my family. Then I got this super easy recipe and we love it!!! I use plain chips but it would probably work with other flavors as well.

1 pkg large bag potato chips
4-6 boneless skinless chicken breast( you could try other parts of the chicken, we only eat the breast)

Steps:

  • 1. pre heat 350 degrees
  • 2. crush your chips in the bag ( My kids loved to help with this )
  • 3. rinse your chicken off then shake each piece in the chip bag till well covered.
  • 4. place on baking sheet. no oil needed cause of the oil from the chips. bake for 20-40 mins, till chicken is fully cooked with no pink meat. enjoy

3/4 cup finely crushed corn flakes
1/2 teaspoon garlic powder
1/4 cup Swanson® Chicken Stock
1/8 teaspoon ground black pepper
1/8 teaspoon ground red pepper
4 skinless, boneless chicken breast half (about 1 pound)

Steps:

  • Heat the oven to 400 degrees F.
  • Stir the corn flakes, garlic powder, black pepper and red pepper in a shallow medium bowl.
  • Dip the chicken into the stock. Coat with the corn flake mixture. Place the chicken onto a baking sheet.
  • Bake for 20 minutes or until the chicken is cooked through.
