They say that these Swedish chocolate balls, known as chokladbollar, are the first thing a Swedish child learns to make, and for good reason; they're easy to do, there's no baking required, and mixing the "dough" together makes for a fun activity. They sure beat snacking on a candy bar during the afternoon slump, as the fats and whole grain keep you satisfied much longer, while the coffee and cocoa provide the perfect pick-me-up.

1 ½ cups quick-cooking rolled oats
½ cup white sugar
3 ½ tablespoons cocoa powder
1 pinch kosher salt
1 pinch cayenne pepper
¼ cup unsalted butter, softened
¼ cup coconut oil, at room temperature
1 teaspoon vanilla extract
2 tablespoons strong brewed coffee
½ cup unsweetened grated coconut, or as needed

Steps:

  • Heat a pan over medium heat and add oats. Toss and shake until fragrant and lightly toasted, 5 to 7 minutes.
  • Combine sugar, cocoa powder, salt, cayenne, butter, coconut oil, vanilla extract, and coffee in a bowl. Add the oats and mix until thoroughly combined.
  • Portion dough into balls using a sorbet scoop. Roll balls in grated coconut and transfer to a parchment-lined baking pan. Let them firm up in the fridge for 15 to 20 minutes.

Posted for ZWT6 - Scandinavian Region. I found this on scandinavianfoods.com and thought what a terrific recipe to make with the kids or when you don't feel like heating up the kitchen. Pearl sugar is like large granulated sugar - or very coarse sugar. A good replacement is to coarsely chop sugar cubes if you can't find this in your locale. This recipe gives two options - one using orange juice or the other using cold brewed coffee - I think both options are great choices!

3 cups quick oats
1/2 cup sugar
6 tablespoons unsweetened cocoa powder
6 tablespoons orange juice
12 tablespoons unsalted butter, softened
flaked coconut (see note in description) or pearl sugar (see note in description)

Steps:

  • Mix together the quick oats, sugar, and cocoa powder. Add up to 6 tablespoons cold orange juice (or use the cold brewed coffee) to moisten. Using your hands, rub in the butter until batter holds together in a soft mass.
  • Shape the batter into walnut-sized balls. Roll each one in coconut or pearl sugar.
  • Place cocoa balls on baking sheet and refrigerate for at least one hour (if you like firmer cookies, place in freezer).

These are so much fun to eat and share with friends around the holidays. Everyone loves them! I found a recipe for homemade Kahlua, so I might try to use it next time. The dried fruit gives it a moist, chewy texture, too.

1/2 cup Kahlua
1/4 cup light corn syrup
1/3 cup chopped candied red cherries
1/3 cup chopped golden raisin
1 cup powdered sugar, sifted
1/2 cup unsweetened cocoa powder
2 1/2 cups fine vanilla wafer crumbs (roughly 1 box)
1 cup finely chopped walnuts or 1 cup pecans
1/4-1/2 cup powdered sugar (optional)
1/4-1/2 cup cocoa powder (optional)
1/4-1/2 cup coconut (optional)
1/4-1/2 cup finely chopped nuts (optional)

Steps:

  • In one bowl, combine Kahlua with syrup and chopped fruits.
  • In another bowl, blend sugar, cocoa, crumbs and nuts.
  • Combine the mixtures well.
  • Roll into balls.
  • Roll the balls in desired coating (sugar, cocoa, coconut, nuts).
  • Freeze or store in airtight container.
