Easy Energy Power Balls image

These easy no bake power balls are quick to make, call for simple ingredients and are one of my go-to homemade energy bites! Use our recipe below as a guide. Many of the ingredients can be substituted (example: quick oats for rolled oats or flaxseed meal for chia seeds). You can also add some extra ingredients based on your needs. Protein powder, for example, is a nice addition (read the article above for all of our tips and variations).

Yield Makes 10 to 12 (1-inch) balls

Number Of Ingredients 8

1 cup rolled oats or substitute quick oats
3 tablespoons ground flax meal, chia seeds or hemp seeds
1/2 cup nut butter or sunflower seed butter
1/3 cup honey, pure maple syrup or agave nectar
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom, optional
1/4 teaspoon fine sea salt
1/4 cup chocolate chips or substitute dried nuts and fruit

Steps:

  • Stir all the ingredients together in a large bowl. The mixture will be a bit tricky to stir at first, but with pressing the nut butter and honey around and into the other ingredients, it will eventually turn into a more cohesive mixture.
  • If the mixture seems too dry and crumbly, add a bit more nut butter or honey. If the mixture seems too wet, sprinkle in some more oats. Form into 1-inch balls or for a slightly easier time forming the balls, place the mixture into the refrigerator for 20 to 30 minutes and then roll into balls.
  • When forming the balls, a medium cookie scoop is useful and helps to keep each ball the same size - we try to make the balls about 1-inch in diameter, but this is up to you.
  • Store energy balls in an airtight container in the refrigerator for up to 2 weeks or freeze (wrapped well) for up to 3 months.

Delicious and filling snacks my friend Danielle told me about. I cannot get enough of these! Nothing processed and jam-packed with nutrition. I took these on a 5-hour flight and they kept me satisfied. Also my mom is on a no-processed-food cancer diet and these are a life-saver for the days she doesn't feel well enough to juice and cook! Store bites in the refrigerator or freezer.

½ cup almond butter
⅓ cup honey
1 teaspoon vanilla extract, or more to taste
1 cup rolled oats
1 cup unsweetened shredded coconut
½ cup chocolate chips
½ cup cocoa nibs
sea salt to taste

Steps:

  • Mix almond butter, honey, and vanilla extract together in a bowl until smooth. Stir oats, coconut, chocolate chips, cocoa nibs, and sea salt into almond butter mixture until well combined; refrigerate for 30 minutes.
  • Roll mixture into balls using your hands.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

These coconut- and oat-studded bites come together in just one bowl (no food processor required!). Keep them on hand for a healthy morning or afternoon pick-me-up or a satisfying after-school snack. If your family or school is nut-free, follow the sunflower butter option instead of using almond or peanut butter.

1/4 cup honey
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 cup quick-cooking old-fashioned oats
1/2 cup unsweetened coconut flakes
3/4 cup coarsely chopped dried cherries or whole raisins or mini chocolate chips
1/2 cup creamy almond, peanut, or sunflower butter

Steps:

  • Stir honey, cinnamon, vanilla, salt, and 3 Tbsp. hot water in a medium bowl until smooth and incorporated. Stir in oats and coconut and let sit 10 minutes.
  • Fold in cherries and almond butter and stir thoroughly to combine.
  • Scoop mixture by the level tablespoon and roll into balls in between your palms. Transfer to a plate or rimmed baking sheet and chill at least 30 minutes before serving.
  • Do Ahead
  • Bites can be made 10 days ahead. Transfer to an airtight container and chill, or freeze up to 3 months.

Number Of Ingredients 10

3/4 cup dark chocolate-covered espresso beans (optional)
1/2 cup unsweetened coconut flakes
1/2 cup raw almonds
1/2 cup raw pumpkin seeds (pepitas)
1 1/2 cups pitted dates (preferably Medjool)
1/4 cup chia seeds
1/2 cup creamy almond butter
1 teaspoon ground ginger
1 teaspoon ground turmeric
1/2 teaspoon kosher salt

Steps:

  • If using, pulse espresso beans in a food processor until very finely ground. Transfer to a rimmed baking sheet or plate; set aside.
  • Pulse coconut, almonds, and pumpkin seeds in food processor until very coarsely chopped. Transfer to a medium bowl.
  • Pulse dates in food processor until finely chopped. Scrape down sides of bowl and add chia seeds. With the motor running, slowly stream in 1/4 cup very hot water and process until a paste forms. Add almond butter, ginger, turmeric, and salt; process until very smooth. Add coconut mixture and pulse until just combined.
  • Scoop date mixture by the level tablespoon, roll into balls in between palms, then roll in reserved chopped espresso beans, pressing slightly to adhere. Transfer to a rimmed baking sheet or plate and chill at least 1 hour.
  • Do Ahead
  • Bites can be made 7 days ahead. Chill in an airtight container, or freeze up to 3 months.
