Perfect for those hot summer days when you don't want to turn on the oven. Also good for the county fair - I got a purple :)

Number Of Ingredients 8

8 tablespoons butter
8 ounces dates, pitted and chopped
2 egg yolks
3/4 cup white sugar
1 cup crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
1/2 cup unbleached cane sugar (for rolling)

Steps:

  • In a saucepan over medium heat combine the butter, dates, egg yolks and sugar. Bring to a boil and cook for 2 minutes. Remove from heat stir in the rice cereal, chopped pecans and vanilla. Stir and let cool.
  • When you can handle roll into small balls then roll in cane sugar.

1 cup brown sugar
1/4 cup cornstarch
1 1/4 cups water
2 egg yolks
1 pinch salt
1 1/2 tablespoons butter (recipe states "butter the size of a hickory nut")
1 teaspoon vanilla
1 1/2 cups pecans, 1 cup in halves, 1/2 cup chopped
1 (9 inch) pie crusts, not deep dish, pre-baked

Steps:

  • Mix cornstarch and brown sugar together in medium saucepan.
  • Beat together egg yolks, water, and pinch of salt. Add to cornstarch and sugar. Add chopped pecans.
  • Simmer on medium stirring constantly until mixture thickens.
  • Boil 1 minute, constantly stirring.
  • Remove from heat, add butter and vanilla.
  • Pour into baked pie shell, decorate top with remaining pecans.
  • Let cool 1/2 hour before serving.

2 cups pecans
2 cups sweetened flaked coconut
1 1/2 cups sugar
1 cup brown sugar
1/2 cup evaporated milk
1/2 cup light corn syrup
1/2 cup unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • In a large saucepan over medium-high heat, stir together sugars, evaporated milk, corn syrup and butter until melted and smooth.
  • Bring to a boil and cook for 3 minutes, then remove from heat and stir in vanilla extract and salt. Fold in shredded coconut and pecans until incorporated, then continue stirring for 3-4 minutes, or until mixture begins to cool.
  • Once thick, use a tablespoon or small ice cream scoop to drop spoonfuls of cookie "dough" onto wax paper-lined baking sheets.
  • Let set completely (freezing if necessary), then enjoy!

3/4 cup shortening
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup finely chopped pecans
1/2 cup packed brown sugar
1/4 cup heavy whipping cream
1 teaspoon vanilla extract
Frosting of choice, optional

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. , Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make a 1/2-in.-deep indentation in the center of each ball. Combine filling ingredients; spoon into cookies., Bake at 350° for 9-11 minutes or until lightly browned. Cool for 1 minute before removing from pans to wire racks. If desired, top with frosting.

  • In a medium saucepan, combine butter, sugar, milk, and egg. Set over moderate heat and cook, stirring constantly, until the mixture comes to a full boil. Remove from heat and stir in the vanilla and salt. Add the graham cracker crumbs and pecans and stir until combined. Set aside and allow to cool for half an hour.
  • Line a small baking sheet with parchment paper. Place 6 of the graham crackers, face down, onto the baking sheet. Line them up to make a large rectangle about 10x7-inches. Two rows of three, making sure they're all touching each other.
  • Once the filling has cooled, add it by spoonfuls to the graham crackers. Carefully spread out the filling into an even layer, making sure that the graham crackers underneath do not move. Top with the remaining graham crackers, aligning them with the bottom pieces. Cover loosely with plastic wrap and chill for at least 4 hours or overnight.
  • Slice into 12 even squares, using the perforations already on the crackers as a guide. Return them to the baking sheet. Place the chocolate in a heat proof bowl and heat in the microwave in short 30 second bursts, stirring in between each, until completely melted and smooth. Dip the side of each sandwich cookie into the chocolate and return to the pan. Let the chocolate set before serving. Store in the fridge in an airtight container. Enjoy!
