JALAPENO POPPER DIP
This jalapeno popper dip is an easy appetizer recipe. You can make it a day in advance and serve it with crackers or chips. Or, use it as a spread to make pinwheels, sandwiches, or wraps. It has all of the flavors of bacon-wrapped jalapeno wrappers but served up cold and creamy as a dip instead.

Steps:
- In a bowl, combine the cream cheese, sour cream and cheese. Add the chopped bacon, chopped jalapeno, cilantro, lime zest, and salt. Stir until well combined.
- Chill the dip for a few hours before serving so the flavors can develop. Let it stand a room temperature for 10 to 15 minutes before serving so it softens and is easier to spread. Serve with chips, crackers or small bread slices.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Remove bacon with a slotted spoon to a plate lined with paper towels to drain.
- Stir bacon, cream cheese, mayonnaise, Cheddar cheese, mozzarella cheese, green onion, and jalapeno peppers together in a bowl; spread into a 9-inch round baking dish.
- Mix crackers, Parmesan cheese, and butter together in a bowl; spread over the top of the cream cheese mixture.
- Bake in preheated oven until bubbly, 20 to 30 minutes.

- In a large bowl, beat the cream cheese, mayonnaise, cheddar, chiles, peppers and 1/4 cup Parmesan until blended. - In a large skillet over medium-low heat, cook the bacon until crispy, about 8-10 minutes, and then set aside on a paper towel-lined plate to soak up any excess oil. Once cooled, finely chop the bacon and place it in a wide shallow bowl.
- In a large bowl, mix together the cream cheese, sour cream, chives, jalapenos, cheddar, shallots, salt, garlic powder, and onion powder until thoroughly combined. Season to taste with salt and then refrigerate for at least 20 minutes.
- Using a tablespoon or small cookie scoop as your guide, portion out a small amount of the filling and form it into a ball. Roll the cheese ball through the bacon and repeat until all of the mixture is gone.
- Refrigerate until you're ready to serve.

- Preheat the broiler. If using fresh jalapeños, cut them in half and remove the seeds, then place cut side down on a baking sheet. Broil them for 1-2 minutes, until the skins blacken and bubble. Remove from the broiler. When cool enough to handle, peel off and discard the outer skin, then dice the peppers. Set aside.
- Turn the oven to 400˚F (200˚C).
- In a medium bowl, mix the cream cheese and sour cream. Add the cheddar cheese, ¾ of the Parmesan, and the diced jalapeños. Mix well.
- In a separate medium bowl, mix the bread crumbs, melted butter, the remaining Parmesan cheese, and the parsley.
- Spoon the jalapeño mixture into an 8x8-inch (20x20-cm) baking dish or a medium cast iron pan, spreading evenly. Sprinkle the bread crumb topping evenly on top.
- Bake for 20 minutes, or until hot and the bread crumbs are golden brown. Serve with bread or crackers.
