NO BAKE CHOCOLATE OAT BARS
I baked about 100 dozen cookies for the holidays and these were everyone's favorite!! These bars can be frozen, just thaw 10 minutes before serving.

Steps:
- Grease a 9x9 inch square pan.
- Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
- Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
- Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

- Line bottom and sides of 8-inch square pan with foil or parchment paper. Spray foil with cooking spray. In large bowl, mix cereal and oats; set aside.
- In large microwavable bowl, microwave cookie butter, honey and brown sugar uncovered on High 2 to 3 minutes, stirring every 30 seconds, until mixture is boiling and slightly thickened.
- Pour over cereal mixture in bowl; stir until evenly coated. Gently stir in chocolate chips. Using buttered back of spoon, press mixture very firmly in pan. Refrigerate about 1 hour or until firm enough to cut.

- 1. Combine peanut butter, honey, coconut oil into a medium sauce pan and stir together over medium heat until melted.
- 2. Add dry ingredients to large bowl: oats, chocolate chips and rice crispy cereal. Mix together
- 3. Pour melted peanut butter mixture over the dry ingredients in the bowl. Mix well and pour the combined ingredients into a 9 x 13 baking dish. This is fairly thick, so you could use a larger dish. I would suggest lining your baking dish with parchment paper as I had to let set out on the counter to soften a bit before I could cut and remove from baking dish. Keep refrigerated. I covered my cut cookie bars with saran wrap to keep them fresher.
