NIF'S EDIBLE AQUARIUM

This is a really cute idea for a kids' party or simply for fish lovers! The prep time includes the time for Jell-O to set. Please note the extra supplies mentioned in the directions that you will need if you want to make it a more authentic aquarium. Enjoy!

3 (3 ounce) boxes jello berry blue gelatin mix
3/4 cup green grape, washed
3/4 cup blueberries, washed
1/2-1 cup gummy fish (you can use a mixture with gummy sharks or frogs)

Steps:

  • Prepare 3 packages of Jell-O gelatin in a large bowl as directed. Refrigerate for 2 hours or until Jell-O is partially set, but still a little "liquidy".
  • Clean a NEW 1/2 gallon glass fish bowl, preferably the kind that is flat on the front and back.
  • Add grapes and blueberries to bottom of fish bowl, spread evenly.
  • Layer gelatin and gummy fish. You can poke gummies down with a spoon or your fingers to look as though they are randomly swimming in the water.
  • Refrigerate 1/2 hour until better set.
  • Display fish bowl with flashlight propped behind it to better see the display of fish.
  • When ready to serve, you can use a washed NEW fish net to scoop the fish and fruit out, along with the Jell-O. Some kids might think this step is "gross", so make sure that your kids are OK with it.

NIF'S DILLED QUAIL EGGS

Before you say "EWWW! Quail eggs!!!", you really have to try these. They are a lot like chicken eggs, but smaller (obviously!) and a little smoother tasting. My grocery store carries them but if you can't find them, check out an Asian market. I don't put a lot of seasoning into the deviled mixture because these little guys don't want to be overpowered. They present beautifully on a nest of persley or dill and taste very good. Enjoy!

18 quail eggs
1/4 cup mayonnaise (I use half fat Helllmann's)
1 teaspoon fresh dill
salt and pepper
fresh dill (to garnish, optional) (optional) or chives (to garnish) (optional)

Steps:

  • Heat water to boiling, gently set eggs into water. Boil 5-6 minutes and then rinse under cold water. Do NOT use a rolling boil or the eggs will break. If your eggs do break, keep their yolks anyway.
  • Let cool completely. Peel eggs and cut in half lengthwise. Pop yolks out into a small bowl.
  • To yolks, add mayo and dill. Mix very well, then salt and pepper to taste.
  • Put yolk mixture into a plastic sandwich bag. Pipe mixture into each egg half.
  • Garnish with fresh dill or chives.

4 tablespoons butter
2 tablespoons sugar
2 egg yolks, well beaten (save the whites, you will need them below)
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup crushed pineapple, drained
2 egg whites
1 cup sugar
1 1/4 cups coconut, shredded

Steps:

  • Cream together butter and sugar in a large bowl. Add egg yolks and mix well.
  • Sift together flour, baking powder and salt. Add to the creamed mixture, mixing well.
  • Press into an 8" x 8" cake pan (lightly greased or sprayed with nonstick spray). Cover with pineapple.
  • Beat the egg whites until stiff; add the sugar and coconut. Spread over the pineapple.
  • Bake at 350F for 30 minutes. Cool and cut into squares.
