CORN FRITTERS



Corn Fritters image

Number Of Ingredients 10

4 ears fresh corn, shucked and silk removed
2 tablespoons granulated sugar
2 teaspoons kosher salt
Pinch of paprika
Freshly ground black pepper to taste
3 cups vegetable oil
3 eggs, separated
1/4 cup sifted all-purpose flour
1/2 teaspoon baking powder
Nectarine sauce (see recipe), maple syrup or creme fraiche and caviar

Steps:

  • Score corn through middle of each kernel with a sharp knife. Grate corn from cob or cut kernels from cob with a very sharp knife (do not cut so deeply as to include part of cob). Put kernels in a 4-cup glass or ceramic bowl. Mash slightly with a potato masher until a milky liquid is exuded. Add sugar, salt, paprika and pepper and stir. Cover tightly with polyvinyl microwave plastic wrap. Cook at 100 percent 1 minute. Uncover and stir. Reserve.
  • In an 8-cup measure, heat oil at 100 percent 15 minutes, until a microwave thermometer registers 375 degrees Fahrenheit. To the corn, add egg yolks, flour and baking powder and stir. Beat egg whites until stiff. Fold into corn mixture.
  • Drop corn mixture by the tablespoon into hot oil. Depending upon shape of measuring cup, you will be able to cook 6 to 10 fritters at a time. Cook, uncovered, 45 seconds at 100 percent. Turn fritters over with a slotted spoon. Cook 45 seconds longer, until fritters are golden brown. Remove and drain on paper towel.
  • Heat oil at 100 percent 5 minutes between batches. Continue making fritters with remaining batter. Do not remove container of oil from microwave oven until it cools. Serve fritters immediately with nectarine sauce, maple syrup or creme fraiche and caviar.

Quick and Easy Corn Fritters image

Celebrate summer with a quick and easy recipe for corn fritters that can be made with fresh or frozen corn kernels.

3 cups corn kernels (See Kelly's Note)
1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Sour cream or garlic aioli, for serving

Steps:

  • In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Stir in the eggs and heavy cream until the batter is well-combined.
  • Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
  • Garnish the corn fritters with scallions and serve them with sour cream or garlic aioli for dipping.

Extra Crispy Corn Fritters image

Recipe video above. Sweet pops of fresh corn on the inside, very crispy on the outside. These heavenly fritters are light on batter, heavy on the corn - just the way they should be! Makes a lovely meal for 2 with a leafy green salad on the side, or a starter for 4.

1/4 cup flour (, plain / all purpose)
1/4 cup cornflour / cornstarch
1/4 tsp baking soda ((or 3/4 tsp baking powder))
1 egg
2 tbsp milk ((any type))
2 cups fresh corn kernels (, raw (2 cobs) (canned or frozen also fine - Note 1))
1/2 cup parmesan (, finely grated)
3/4 cup green onions (, sliced)
1/2 cup coriander/cilantro (, roughly chopped (sub more green onion))
1/2 cup vegetable oil
Oil spray
Avocado sauce
Sour cream, ketchup ((don't judge until you've tried it!))

Steps:

  • Preheat oven to 120°C / 250°F and set a wire rack on a baking tray.
  • Place flour, cornflour and baking soda in a bowl, mix to combine.
  • Add egg and milk, mix until incorporated (batter will be lumpy and thick).
  • Add corn, parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
  • Add enough oil into the skillet so it just covers the base. Heat over medium high heat.
  • Spray the underside of a spatula with oil (so batter won't stick when you flatten).
  • Place 1/4 cup batter into skillet (ice cream scooper with lever is handy), then flatten to 1cm thick. Repeat with 2 or 3 more, but don't crowd the skillet.
  • Cook 3 minutes until deep golden and crisp, then flip and cook the other side for 2 - 3 minutes.
  • Transfer to rack and keep warm in oven. Repeat with remaining fritters, using more oil as necessary.
  • Serve with sauce of choice for dunking!

Savory Corn Fritters image

These corn fritters use fresh, whole kernels, mixed with spices, scallions and a simple batter. Corn fritters come in many types, from the cornmeal-based, deep-fried hush puppies, to the more patty-shaped, pan-fried fritters. Pan-seared in hot oil until crisp, these patty-like fritters contain Cheddar, which adds creaminess while still allowing the crunchy corn kernels to provide a pop of sweet flavor and texture with each bite. Fritters make an excellent side for a cookout, as they stand up to smoky barbecue flavors and can be enjoyed warm or at room temperature. Leftovers make an excellent breakfast, with a dollop of sour cream or plain yogurt on top.

2 large eggs
2/3 cup whole milk
1 teaspoon fine sea salt
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cayenne
1 cup all-purpose flour
2 teaspoons baking powder
3 cups corn kernels, fresh or frozen and thawed (about 1 pound)
1/4 cup chopped scallion greens
1 cup sharp Cheddar, shredded
Vegetable oil, coconut oil or shortening, for frying

Steps:

  • In a large bowl, whisk together the eggs, milk, salt, garlic powder, black pepper and ground cayenne. Whisk in the flour and baking powder until just combined. Stir in the corn, scallions and Cheddar.
  • Heat a cast-iron skillet over medium-low and add enough oil to generously coat the bottom of the skillet.
  • Once the oil is shimmering hot, add a heaping tablespoon of the batter to the skillet. Use the back of the spoon to flatten it into a round patty. Repeat to fry 3 to 4 fritters at once. Fry on each side until golden, about 2 minutes, then cook for an additional 2 minutes. Add more oil as needed.
  • Remove from the skillet and transfer to a paper towel-lined baking sheet. Repeat until all fritters are fried. Serve warm or at room temperature.

  • Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. When fresh corn is available, make sure to pick a few ears up and make this easy corn fritter recipe. They went fast in the Test Kitchen. Outside the fritters are crisp but the inside stays soft. We did drizzle a little balsamic reduction on top and it was perfection. These are easy to prepare and easier to eat.

4 c fresh corn kernels
1/2 c celery, finely diced
1/2 c green onions, finely diced
3 clove garlic, minced
1/2 c all-purpose flour
1/2 tsp white pepper
2 eggs

Steps:

  • 1. In a large mixing bowl, combine the corn, celery, green onion, flour, and white pepper. Mix well. Lightly beat the eggs. Combine with the vegetable mixture.
  • 2. Heat a neutral oil in a wide deep pot to 350 degrees (or use a deep fat fryer).
  • 3. Spoon the corn fritter mix into the hot oil. Using the back of the spoon coated with oil, press down onto the fritter to flatten. Cook until golden brown on one side and carefully flip over to cook the other side.
  • 4. Remove to drain excess oil onto paper napkins. Season with salt immediately after frying.
  • 5. Enjoy hot! Dip in soy sauce or teriyaki sauce. I also think these would be good with a drizzle of balsamic vinegar.

1/3 cup Thai sweet chili sauce
1/3 cup Bango or other kecap manis
4 ears of corn, kernels cut from cob, or one 15 1/4 ounce can of corn, drained
2 cloves garlic, minced
1 tablespoon red bell pepper, julienned into pieces 1/2 inch long, and 1/8 inch wide
1/2 teaspoon ground nutmeg
1/2 teaspoon freshly ground black pepper
1 large egg
1/2 teaspoon sugar
2 tablespoons corn starch
2 tablespoons rice flour
1 tablespoon finely chopped shallot
Salt
Vegetable oil

Steps:

  • For the sauce: In a small bowl, combine sweet chili sauce and kecap manis. Mix and set aside.
  • For the fritters: In a large bowl, combine half the corn kernels, garlic, red bell pepper, nutmeg, ground pepper and egg. Mix well. Place in blender and process at medium speed until pureed. (Variations: For a smooth fritter, add all the corn to the blender; for a very crunchy fritter, reserve all of the corn for Step no. 3)
  • Transfer back to bowl; add corn starch, rice flour, shallot and reserved whole corn kernels. Mix well, and season with salt to taste.
  • In a wok or a deep frying pan over high heat, add vegetable oil to a depth of 1 1/2 to 2 inches. Heat to 350 degrees. Working in batches, scoop up corn mixture 1 tablespoon at a time, and add to hot oil; be careful not to crowd pan. Fry until golden brown, 1 1/2 to 2 1/2 minutes a side; fresh corn may take slightly longer to brown than canned. Drain and place on paper towels. Serve with dipping sauce.

These vegetable-packed fritters are crispy around the edges and tender in the center. Delicata squash has a thin skin that can be left on, adding color and a dose of nuttiness. Corn adds pops of sweetness, while moist zucchini helps bind the patties. Fragrant fried sage leaves do double duty in this dish: First they infuse the oil with herbaceous flavor, then they become a beautiful, crisp garnish. For the best results, fry the fritters and serve immediately; however, they can also be made a few hours ahead and reheated at 350 degrees for about 15 minutes until hot and crisp.

3/4 cup safflower or canola oil
16 large sage leaves
4 ounces zucchini (1 small)
1 pound delicata squash (about 1 large), scrubbed, halved lengthwise and seeded (skin left on)
1 cup fresh corn kernels (from 1 to 2 ears), or thawed from frozen
1/2 cup thinly sliced scallions (from 2 to 3 scallions)
1 teaspoon minced garlic
1 large egg, beaten
Kosher salt and black pepper
3/4 cup (105 grams) all-purpose flour
1 teaspoon baking powder

Steps:

  • Line a plate with a paper towel. In a medium (10-inch) nonstick skillet, heat oil over medium until shimmering. In 2 batches, fry sage leaves, turning, until darker green in color and crisp, about 1 minute. (Be careful not to burn; sage will continue to crisp up as it cools.) Using tongs or a slotted spoon, transfer to the paper towel-lined plate. Pour sage oil into a heatproof bowl and reserve.
  • In a food processor fitted with the grating attachment, or on the large holes of a box grater, shred the zucchini. (You should have ½ cup.) Squeeze to remove excess water and transfer zucchini to a large bowl. Then shred the delicata squash. (You should have 3¼ to 3½ cups.) Add to the bowl.
  • Add the corn, scallions and garlic to the bowl of shredded zucchini and squash, and mix until evenly combined. Add egg, season with salt and pepper, and mix well. Sift flour and baking powder into the bowl, and fold until well combined and no white streaks remain.
  • Line a platter or baking sheet with paper towels. In the skillet, heat 3 tablespoons of the reserved sage oil over medium. Working in batches of four, spoon ¼-cupfuls of the batter into the skillet, flattening the fritters until they're just over 3 inches in diameter each. (They should look lacey.) Cook until fritters are set and golden and crisp underneath, about 3 minutes. Flip and cook until crisp on the second side (adding a little more sage oil if the pan looks dry), about 2 minutes. Transfer to the paper towel-lined platter and season with salt. Repeat with the remaining sage oil and batter, adding about 3 tablespoons of oil with each batch.
  • Transfer fritters to a serving platter and garnish with the crispy sage leaves. Serve warm.

  • In a large saucepan over medium-high heat, add oil to a depth of 1 1/2 inches. When the oil is very hot, working in batches, drop in rounded tablespoons of the batter and fry, turning the fritters occasionally, until browned, about 5 minutes. Using a slotted spoon, transfer to paper towels to drain. Sprinkle with salt and serve hot with corn chowder or clam chowder or on their own as an appetizer.
