2 grapefruits
4 limes
½ cup vodka
grapefruit, for garnish, sliced
lime, for garnish, sliced
½ cup simple syrup
1 bottle champagne, chilled
lime wedge, optional
granulated sugar

Steps:

  • Quarter the grapefruits, then your hands or a citrus press to juice the segments into a liquid measuring cup. You should have ½ cup of grapefruit juice. Halve the limes, then juice into the same measuring cup; you should have 1 cup of juice total.
  • Pour the citrus juice into a pitcher. Add the vodka, sliced grapefruit and lime, if using, and simple syrup. Top with the champagne.
  • If desired, use the lime wedge to wet the rims of champagne flutes, then dip in sugar to coat. Pour the punch into the flutes. Serve chilled.
  • Enjoy!

1 quart orange sherbet
2 quarts fresh orange juice
1 (2 liter) bottle ginger ale, chilled
2 (750 milliliter) bottles champagne, chilled

Steps:

  • Place the orange juice, ginger ale, and champagne in the refrigerator to get them well chilled.
  • In a large punch bowl, place the block of sherbet in the center and pour the orange juice over the top. Next, pour the ginger ale over the sherbet. Finally, pour both bottles of champagne over the sherbet. Stir gently to mix the liquids, resulting in a foamy top. Serve immediately.

1/2 cup sugar
1/2 cup water
1 cup white grape juice
1 1/2 cups fresh grapefruit juice (preferably pink or ruby red)
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1 cup dry white wine
1/4 cup Cognac or other brandy
1/2 cup packed mint leaves
1 navel orange, cut into 1/2-inch pieces
1 lime, cut into 1/2-inch pieces
1 lemon, cut into 1/2-inch pieces
1 (750-ml) bottle Champagne or other sparkling white wine, chilled

Steps:

  • Bring sugar and water to a boil in a small saucepan, stirring until sugar has dissolved, then transfer to a bowl and cool syrup completely (or quick-chill by setting bowl in an ice bath and stirring occasionally until cool).
  • Stir together juices, wine, Cognac, mint, fruit, and cooled syrup in a large pitcher. Chill, covered, until cold, about 1 hour. Stir in Champagne.

New Year's Eve is all about champagne, and this punch is fun for everybody involved. The secret is oleo saccharum-a citrusy, three-ingredient syrup that's hard to pronounce, but easy to make.

1 cup sugar
1 grapefruit
2 lemons
1 c Oleo saccharum
3 ounces fresh lemon juice
3 ounces Pineapple juice (fresh or canned)
4 ounces gin
1 Bottle champagne (Cava)

Steps:

  • For the Oleo Saccharum: In a mixing glass, add sugar. Peel a grapefruit and two lemons in long, thin ribbons and add them to the sugar. Muddle the citrus peels, pushing the oils from the peel into the sugar. Over time, the oils will dissolve the sugar making a thick syrup. Cover and let rest overnight so the syrup can be fully infused with the citrus peels.
  • For the punch: Place the oleo saccharum into a punch bowl along with the lemon and pineapple juice and stir. Add gin and a bottle of champagne.
  • Place a large piece of ice into the punch (fill a plastic container with water, freeze, then unmold). Serve.
