Unless you're familiar with coffee concentrate, New Orleans iced coffee is a puzzling ritual. The first time I had it, I watched skeptically as a friend's mother filled a plastic Mardi Gras cup with ice, poured in an inch of inky coffee from a mayonnaise jar, then topped it off with milk. It was as smooth as a milkshake but had a rich coffee flavor and packed a caffeinated punch. It was easily the best iced coffee I'd ever had, yet another thing that tastes better in New Orleans.

Yield makes 8 cups coffee concentrate

Number Of Ingredients 4

1 pound dark roast coffee and chicory, medium ground
10 cups cold water
Ice
Milk

Steps:

  • Put coffee in a nonreactive container, like a stainless-steel stockpot. Add 2 cups water, stirring gently to wet the grounds, then add remaining 8 cups water, agitating the grounds as little as possible. Cover and let steep at room temperature for 12 hours.
  • Strain coffee concentrate through a medium sieve, then again through a fine-mesh sieve.
  • To make iced coffee, fill a glass with ice, add 1/4 cup coffee concentrate and 3/4 to 1 cup milk, then stir. To make café au lait, warm 3/4 to 1 cup milk in a saucepan or microwave, then pour into a mug and add 1/4 cup coffee concentrate. (Concentrate will keep in the refrigerator for up to two weeks.)

"Real, New Orleans-style coffee must be dark roast, brewed strong, and must include chicory. In fact, most of the coffee drunk in the Crescent City is a coffee-and-chicory blend". Some well-known local coffee-and-chicory brands are French Market (my personal favorite), Community Coffee, Cafe du Monde or Union. 6 tablespoons dark roast french market coffee (Coffee-with-chicory, New Orleans style)
6 cups water
6 cups milk
sugar (optional) or other artificial sweetener (optional)

Steps:

  • Bring the water almost to a boil, to a temperature of 204-208 degrees F.
  • Using a drip-style coffeemaker with filter, pour a small amount of the water over the coffee grounds to dampen them, then wait 30 seconds.
  • Pour more water over the grounds until the upper pot container is full.
  • Allow to drain, then repeat until all the water is used.
  • Scald, do NOT boil, the milk. This means to heat it until JUST below the boiling point.
  • Pour coffee into warmed large mugs, then add the milk.
  • Add sweetener if desired and serve.

  • Pour the coffee into 2 cups and add divide milk between both.
  • Top with a bit of milk foam and sprinkle with cinnamon.

FROZEN IRISH COFFEE



Frozen Irish Coffee image

This drink is inspired by the frozen Irish coffee served at Molly's at the Market in the French Quarter of New Orleans, where it's served from a frozen daiquiri machine. Freezing milk in an ice cube tray gives you a similar creamy consistency to the version at Molly's, which contains no ice. Brandy provides a mellower flavor than Irish whiskey, but feel free to substitute whiskey for the brandy if you prefer.

1/2 cup vanilla ice cream
1 1/4 cups whole milk, frozen in an ice cube tray
4 ounces strong coffee or cold brew, chilled
2 ounces brandy
2 ounces coffee liqueur
1/4 teaspoon fresh coffee grounds, for garnish

Steps:

  • Add ice cream, frozen milk cubes, chilled coffee, brandy and coffee liqueur to a blender. Combine on high until the ice is crushed and the drink is smooth. (It will have the consistency of a thin milkshake.)
  • Divide between highball glasses and swirl 1/8 teaspoon coffee grounds on the top of each drink.
