NINFA'S NACHOS



Ninfa's Nachos image

This is a fabulous recipe from our school secretary where I work. My family loves it. My DD had me make this twice last week.

Number Of Ingredients 16

2 lbs ground beef
2 tablespoons garlic, minced
1 -2 tablespoon olive oil
1 bunch green onion, chopped
1 (6 ounce) can black olives, chopped
1 green bell pepper, chopped finely
1 (1 ounce) package burrito seasoning mix
1 1/2 tablespoons cumin
1 teaspoon oregano
salt, to taste
1 (15 ounce) can pinto beans, drained
3 -4 cups sharp cheddar cheese, grated
6 cups corn chips, nacho cheese
1 -2 cup avocado dip (depending upon taste)
1 -2 cup sour cream (depending upon taste)
salsa (optional)

Steps:

  • Brown hamburger in large skillet and drain off liquid.
  • Make a space in middle of ground beef and put in garlic, then olive oil.
  • Cook for 2 minutes then mix up well with beef.
  • Add burrito mix, cumin, and oregano, and salt to taste.
  • Add green onions, olives, and bell pepper.
  • Last add beans and mix well.
  • Preheat oven to 350 degrees F.
  • Start by putting a thin layer of meat in 9 x 13 pan.
  • Spread 1/2 of nacho cheese chips, pressing down gently to crush slightly.
  • Spread 1/2 of meat mixture across evenly over chips.
  • ***Spread 1/2 of avocado dip and 1/2 of sour cream across meat.
  • Spread 1/2 of cheese across avocado/sour cream mixture.
  • Repeat layers starting with chips.
  • Bake for 20 minutes. Serve with salad on side.
  • ***My DS doesn't like either sour cream or Avocado and I made this without this layer and it turned out just as great. I had avocado dip and sour cream on side.

I found this recipe in my mom's newspaper clipping collection, and know that from having seen various other Ninfa's recipes online that it would be greatly appreciated if posted. :) So, here it is - I hope you enjoy it!

1 (1 1/2 lb) pork butt (or butt end of pork loin)
3 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon paprika
1 cup lard
romaine lettuce leaf, for garnish
sour cream, for garnish
flour tortilla, for serving

Steps:

  • Trim pork butt of most of the fat and then cut into 1-inch cubes- they can be a bit smaller, if you like, but no larger.
  • In a bowl, mix together the flour, salt, pepper, and paprika; pour mixture into a shallow pan.
  • Dredge the pork cubes in the flour mixture (putting all the flour mixture into a Ziplock and then the meat and shaking it thoroughly can work really well, too), patting it well into the meat; try to get all of the flour mixture onto the meat.
  • Using a heavy skillet over high heat, heat the lard until it is smoking hot.
  • With tongs, carefully place the pork cubes into the hot lard piece by piece (take care that it doesn't splatter);; cook, turning frequently, until browned evenly, about 4 to 5 minutes.
  • Place paper towels or napkins on a plate, remove the cubed meat from the lard and put on the towels, then cover with another towel and pat so that the extra oil is absorbed.
  • Transfer the drained pork to a serving dish covered decoratively with lettuce leaves.
  • Serve with bowls of sour cream and Ninfa's Green Sauce (check the RecipeZaar database, there's at least one version posted), so that dinner guests can dip the pork cubes in either or both; make sure to have plenty of warmed, buttered tortillas nearby, too!
