My easy New England Seafood Chowder recipe is ready in just 45 minutes using simple, fresh ingredients!

2 slices bacon
1 yellow onion (diced)
1 stalk celery (diced)
3 medium white potatoes (diced and peeled)
¼ cup all purpose plain flour
4 cups milk
1 cup firm white fish
½ pound shellfish (shrimp, prawns, mussels, or clams)
½ cup corn
1 Tablespoon fresh parsley
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Saute bacon in a large soup pot over medium-high heat until crispy, 3-4 minutes. Remove the bacon from the pot and place on a plate. Drain all but 1 tablespoon bacon grease from the pot. If there is not 1 tablespoon, then don't drain the bacon fat. Add diced onions and celery to the bacon grease in the pot. Saute over medium heat until soft, 3-4 minutes.Add potatoes. Saute 1-2 minutes. Reduce the heat to low.
  • Add the flour and stir, cooking until the flour is completely moistened. Add the milk and increase the heat to medium. Heat the soup until it is steaming, but just before it starts to boil, stirring often.
  • Keep the soup at this point until the potatoes are nearly tender, uncovered, 10 to 15 minutes. (Reduce the heat if the milk starts to foam.) The soup should start to thicken to a nice consistency. Add the fish, shellfish, corn and bacon.
  • Continue to heat, just below boiling for an additional 5 to 10 minutes, until the fish is cooked through. Add salt and pepper. Adjust seasoning if necessary.
  • Serve with the fresh parsley, crackers or good quality bread.

I don't know of a recipe that better represents our area than chowder. I adapted it from my mom's clam chowder recipe, and guests often request it.

1 pound whitefish fillets, skin removed
2 pounds potatoes, peeled and cut into 1-inch cubes (about 5 medium)
2 celery ribs, finely chopped
1 large onion, chopped
3 tablespoons all-purpose flour
1 can (12 ounces) evaporated milk
2 can (6-1/2 ounces each) minced clams, undrained
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1 can (4 ounces) tiny shrimp, rinsed and drained
2 tablespoons butter
1 tablespoon diced pimientos
2 teaspoons salt
1/2 teaspoon pepper
Minced fresh parsley

Steps:

  • Place whitefish in a Dutch oven; add water to cover. Cook, uncovered, over medium heat, 8-10 minutes or until fish just begins to flake with a fork. With a slotted spoon, remove fish and break into bite-size pieces; set aside., Pour cooking liquid into a 4-cup measuring cup. If necessary, add additional water to measure 4 cups; return to pan. Add potatoes, celery and onion; bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until vegetables are tender., In a small bowl, whisk flour and milk until smooth. Stir into chowder. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until slightly thickened. Add clams, crab, shrimp, butter, pimientos, salt, pepper and reserved fish; heat through, stirring occasionally. Sprinkle with parsley.

2 lbs white fish fillets, washed and cut into 2 inch pieces (bass, cod, or haddock)
2 cups fish stock
1/2 cup butter
1/4 cup onion, chopped
1/2 cup celery, chopped
1/2 cup all-purpose flour
1 lb clam, minced
3 cups half-and-half
2 cups red potatoes, cut into 1/2 inch cubes
1 bay leaf
2 tablespoons parsley, chopped
1/2 lb fresh sea scallop, chopped
1/2 lb shrimp, peeled, deveined, chopped
1/2 lb lobster meat
salt
pepper
parsley

Steps:

  • In a large, heavy pot, place the fish and stock and bring to a boil. Cover pot and simmer for 4-5 minutes. Remove fish with a slotted spoon and set aside. Remove and reserve the stock.
  • In the same pot, melt the butter over medium heat. Add the onions and celery and saute until tender. Add the flour and cook, stirring with a wooden spoon, for 4 minutes. Add reserved stock and mix well. Add potatoes, bay leaf and parsley and cook until potatoes are tender, about 8-10 minutes. Add scallops and shrimp. Cook until tender. Add clams and lobster and stir well.
  • In a saucepan, heat half & half over medium heat until hot and add to the seafood mixture. Cook chowder, stirring frequently until slightly thickened and smooth. Season with salt and pepper to taste. Ladle chowder into bowls and garnish with parsley.

6 ounces bacon, cut into 1-inch squares (about 8 slices)
4 medium onions, coarsely chopped (or large onions)
3 medium celery ribs, sliced
3 lbs boiling potatoes, peeled and cut into 1/2-inch dice
3 cups fish stock or 2 (8 ounce) bottles clam juice, mixed with 1 cup water
additional fish stock or water
2 fresh thyme sprigs (or 1/4 teaspoon crumbled dried thyme)
3 parsley sprigs
2 cups milk (or more)
1/2 cup heavy cream
1 dash hot pepper sauce, to taste
salt & freshly ground black pepper (to taste)
2 lbs scrod fillets, cut into 1-1/2-inch cubes (or cod or haddock)
1 1/4 cups canned tomatoes, drained and cut into 3/4-inch pieces
1/2 lb bay scallop, cut into 3 pieces each (or whole sea scallops)
unsalted butter

Steps:

  • Cook bacon in heavy Dutch oven over medium heat until golden brown, stirring frequently, 8-10 minutes.
  • Transfer to paper towel using slotted spoon.
  • Pour off all but 3 T. bacon fat.
  • Add onions and celery to Dutch oven.
  • Cover and cook over medim-low heat, stirring occasionally, until slightly softened, about 10 minutes.
  • Add potatoes, 3 cups fish stock and additional fish stock or water if necessary to almost cover vegetables.
  • Bring to boil.
  • Tie thyme and parsley in a piece of cheesecloth. Add to soup.
  • Reduce heat, cover and simmer until potatoes are just tender, 15-20 minutes.
  • Transfer half of vegetables to food processor, using slotted spoon. Puree until smooth.
  • Return puree to soup.
  • Add 2 cups milk, cream, pepper sauce to taste, salt and generous amount of pepper.
  • Bring soup to boil, stirring until smooth.
  • Thin with more milk if desired.
  • Add fish. Cover and simmer until fish is almost opaque, 2-3 minutes.
  • Discard cheesecloth bag.
  • Add tomatoes, scallops and bacon to soup; stir gently to avoid breaking fish.
  • Adjust seasoning.
  • Cover and simmer until fish and scallops are just opaque, about 1 minute.
  • Ladle soup into bowls.
  • Top each with thin pat of butter.
  • Sprinkle with paprika and serve.

This is a well-known dish from a well-known Boston chain; it was one of my favorites when we lived there, though rich enough that it wasn't exactly my everyday fare. I haven't tried this yet, though; I found it online.

4 quarts littleneck clams, well-scrubbed
1 cup water
1 clove garlic, minced
2 ounces salt pork, finely chopped
2 cups onions, chopped
3 tablespoons all-purpose flour
4 1/2 cups clam broth
3 cups fish stock
1 1/2 lbs potatoes, peeled and diced
2 cups light cream
oyster crackers (optional)

Steps:

  • Bring water to boil in large covered saucepot.
  • Add the clams and garlic Cook 6-10 min over med-high heat, or until the clams have just opened.
  • Drain clams, reserving the broth.
  • Strain the broth through coffee filters/cheesecloth to remove grit.
  • Remove the clams from their shells, chop finely.
  • In a large heavy saucepot, cook the salt pork over low heat until the fat is rendered and becomes liquid.
  • Using a slotted spoon, remove the"cracklings" and reserve them.
  • Add the onions to the fat; cook over med-high heat for 5-7 minutes, til softened but not browned.
  • Add in flour; cook for 3 minutes, stirring constantly.
  • Add the reserved clam broth, the 4-1/2 c.
  • of clam broth and the fish stock; whisk to remove lumps.
  • Bring the liquid to a boil; add potatoes, Reduce heat, simmer for about 15 minutes or until the potatoes are cooked through.
  • Stir in the clams, salt pork and the light cream.
  • Heat chowder to desired temperature.
  • Serve with oyster crackers.

8 ounces red new potatoes, cut in eighths
1 1/2 cups fresh corn or 1 (11 ounce) can corn, drained
1 (10 3/4 ounce) can cream of potato soup
1 1/2 cups water
1 bay leaf
1/4 teaspoon dried thyme
1/8 teaspoon cayenne
8 ounces cod fish fillets, cut into 1-inch chunks
8 ounces raw large shrimp, peeled
1 cup milk
4 slices bacon, cooked and crumbled

Steps:

  • Place leeks, potatoes and corn in a 3 1/2 qt or larger slow-cooker. Add soup, water, bay leaf, thyme and cayenne; mix gently.
  • Cover and cook on low 6 to 8 hours until potatoes are tender.
  • Add seafood about 15 minutes before serving; heat until fish is just cooked through.
  • Stir in milk; remove bay leaf and remove from heat.
  • Serve in bowls with crumbled bacon over top.

1 tablespoon curry powder
4 8-ounce bottles clam juice
4 cups 1/2-inch dice peeled white potatoes (about 3 pounds)
4 cups 1/2-inch dice peeled butternut squash (about 3 pounds)
2 bay leaves
4 cups chopped kale leaves
5 cups milk
1 cup half and half
2 tablespoons minced fresh thyme or 2 teaspoons dried, crumbled
3 pounds mixed fresh fish (a choice of cod, halibut, haddock and/or scrod), cut into 3/4-inch pieces

Steps:

  • To render fat, cook chopped bacon in heavy large saucepan over medium-high heat 5 minutes. Add chopped onions and sauté until onions are translucent, about 8 minutes. Add curry powder and stir 30 seconds. Mix in bottled clam juice, diced potatoes, diced butternut squash and bay leaves. Simmer 5 minutes. Add chopped kale leaves and simmer until vegetables are almost tender, about 10 minutes. Add 5 cups milk, 1 cup half and half and minced thyme. (Chowder can be prepared 1 day ahead. Cover tightly and refrigerate.)
  • Bring chowder to simmer. Add fish and simmer until cooked through, about 3 minutes. Season to taste with salt and pepper. Discard bay leaves. Ladle chowder into bowls and serve.

  • Add 1 inch of water to the bottom of a heavy-bottomed stock pot. Add the clams and lobster tails (if the lobster tails are already cooked, skip this step) to the water. Cover the pot and bring the water to a simmer over medium-high heat. Shake the pot a couple times and after 3 or 4 minutes, check to see if the clams have opened. If most of the clams have opened and a few remain closed, cover the pot and let them cook for another minute. If there are still shells that are completely closed, discard them. Drain the water off, remove the clams and lobster tails, rinse out the pot, and return it to the stove.
  • Remove the clams from their shells by pulling them off the muscle attached to the shell. Remove the outer casings from the clam meat and chop the clams. Remove the lobster meat from the tail shells and roughly chop the meat. Set the clams and lobster aside and discard all of the shells.
  • Meanwhile, set the large stock pot back over medium-high heat and add the bacon. Cook until it is almost crispy and then add the onions; cook until the onions have softened, about 5-7 minutes. Add the thyme and cook for 30 seconds. Whisk in the flour and cook for 1 minute, whisking constantly. Whisk in the warmed seafood stock/water mixture, scraping up any bits on the bottom of the pan. Add the bay leaf and potatoes. Allow the liquid to come to a simmer and thicken, about 5 minutes. Reduce the heat to medium. Add the scallops and shrimp and simmer the soup until the potatoes are fork-tender, about 5 to 7 more minutes. Stir the chopped clams and lobster into the soup.
  • Stir in the cream, sherry, and parsley. Allow the cream to warm through in the soup for a couple of minutes but don't let the soup boil. Season with salt and pepper to taste - my soup needed 2 teaspoons of salt but yours may be different. Remove the bay leaf and serve hot.
