This is a very easy recipe to follow and has an interesting taste - it is without all the spices (cinnamon and nutmeg) that everyone else puts in. This makes it so easy to top with whipped cream, preserves, or dried fruit such as raisins or chopped apricots.

2 cups cooked rice
2 cups milk
1/4 cup sugar, plus
1 tablespoon sugar
3 tablespoons butter
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Steps:

  • Combine rice, milk, sugar, butter, and salt in a medium saucepan. Cook over medium heat, stirring frequently, 35 minutes or until thickened. Remove from heat; stir in vanilla.
  • Spoon into individual serving dishes. Serve hot or cold.

2 cups milk, divided
¼ teaspoon salt
⅔ cup golden raisins
1 egg, beaten
⅓ cup white sugar
1 tablespoon butter
½ teaspoon vanilla extract

Steps:

  • Combine cooked rice, 1 1/2 cups milk, and salt in a saucepan over medium heat; cook and stir until thick and creamy, 15 to 20 minutes. Stir remaining 1/2 cup milk, golden raisins, beaten egg, and white sugar into the rice mixture; stirring continually. Continue cooking until egg is set, 2 to 3 minutes. Remove saucepan from heat; stir butter and vanilla extract into the pudding.

This is comfort food at its sweetest and most gentle: a rice pudding cooked in a medium oven, watched carefully, and flavored with a touch of cinnamon. You can top it off with raisins or currants, some toasted pecans or a bit of brown sugar - or just leave it alone.

1/4 to 1/3 cup rice
1/2 cup sugar
Small pinch kosher salt
4 cups milk
Cinnamon stick

Steps:

  • Preheat the oven to 300. Combine all ingredients in a 3- or 4-quart casserole, stir and place in the oven. Cook for 30 minutes, then stir. Repeat.
  • Cook for 30 more minutes. Return the mixture to the oven and check the pudding every 10 minutes, stirring gently each time.
  • The pudding may be done 10, 20 or 30 minutes later. Invariably, it is done before you believe so.

I am not quite sure where the recipe came from, but it is positively the best cure for a cold winters day.

3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
2 beaten eggs
2 cups cooked rice
1 tablespoon butter
1 teaspoon vanilla
1/2 cup raisins (optional)
1 dash nutmeg (to taste)

Steps:

  • Combine sugar, constarch, and salt in saucepan, add milk.
  • Cook over medium heat, stirring constantly, until thick and bubbly (8 minutes), cook one more minute.
  • Temper eggs by briskly whisking small spoons of hot milk mixture into eggs (best done in a small heavy bowl).
  • Whisk egg mixture into milk mixture.
  • Add rice, raisins, butter and vanilla.
  • Let stand 10 minutes.
  • Stir gently, spoon into dessert dishes and sprinkle with nutmeg.
