Recipe video above. These soft dinner rolls are like magic! Just mix the ingredients in a bowl - no kneading, no stand mixer, no special ingredients required. These are soft, fluffy and moist, nicely salted with a touch of sweet. This requires 2 hrs 15 minutes+ rise time.

Steps:
- Place the yeast and 2 teaspoons of the sugar in a medium bowl, then pour in water. Leave for 5 minutes until it froths.
- Place flour, remaining sugar and salt in a bowl. Mix to combine.
- Make a well in the centre. Add milk, butter, eggs and pour in the yeast liquid, including all froth.
- Mix until combined with wooden spoon - it will be like a thick muffin batter. Not pourable, but thick and sticky.

- Preheat oven to 400*F.
- In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
- With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
- Divide dough into 18 even pieces, and form into balls. Place in a greased pan and cover with parchment paper and a kitchen towel.
- Let rise 10 minutes in a warm place. (You can allow them to rise up to an additional 30 minutes if time allows).
- Lightly brush with milk and bake on the middle rack for 10-12 minutes or just until browned.

- Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.
- Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary.
- Increase speed to medium and beat for 2 minutes.
- Add 1/2 cup flour and blend with the dough hook until incorporated. And another 1/2 cup flour and repeat, mixing at medium speed for another 2 minutes until a ball of dough is formed.
- Add additional flour as necessary. The dough should be slightly sticky and soft and pulling away from the edge of the bowl.
- Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise for 30 minutes at room temperature.
- Remove the towel or plastic wrap and deflate the dough by punching down lightly.
- Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
- Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
- Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
- Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

MIMI'S NEVER FAIL REFRIGERATOR ROLLS
These are one of the types of rolls I make for every holiday. I had very disappointed grandson's when my oven was broken and couldn't make them once. This is a very requested recipe that I have used since the 70s. This dough can be made ahead and kept up to 1 week in the fridge, but it doesn't last that long around here.

- 1. Mix 1st 3 ingredients in a small bowel. Let yeast and sugar dissolve and start bubbling.
- 2. In a large bowl I add water and shortening and then microwave until water is warm enough to melt shortening. I then stir in sugar and salt. When it has cooled down to lukewarm I add the yeast mixture and combine. Beat egg and add to bowl.
- 3. Add flour and mix well. Form into a ball, pour a little bit of oil into bottom of bowl and turn dough to coat on all sides. Cover and let rest untl doubled in size.
- 4. Pre-heat oven to 400. Mash down dough and knead on a flour covered surface until smooth and elastic. At this point dough may be covered and kept in fridge until ready to use. Just remove dough from fridge and allow to warm a little then proceed with recipe.
- 5. In 13 x 9 pan melt 1/2 to 1 stick of butter. Pinch pieces of dough off and form into balls of dough or whatever shape you prefer. Cover and let rise. Bake until golden brown and serve.

- Soften yeast in warm water, 1 teaspoons sugar, 1 cup of flour, then set aside.
- Melt shortening let cool a little.
- Use a mixer and beat shortening, eggs and salt, yeast mixture, sugar & remaining flour.
- Knead well.
- Let rise in greased bowl for 1 hour.
- Sprinkle with flour over top & knead.
- Shape into rolls and place in 9" cake pans and let rise another hour.
- Bake at 350° for 20 minutes.

- In a large mixing bowl, dissolve yeast in warm water.
- Beat in the flour, dry cake mix and salt (do not knead). **When mixing if too dry you might want to add 1-2 tablespoons more of water at a time until you can get dough thoroughly mixed.

- Pour warm water into a large bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes.
- Add sugar, butter, eggs, and salt; whisk to combine. Add flour; mix until incorporated and a sticky dough forms. Brush top of dough with butter; cover bowl with plastic wrap, and set aside in a warm place until dough has doubled in bulk, about 1 hour.
- Turn dough out onto a well-floured work surface. With floured hands, roll dough into a thick log. Cut into 18 equal pieces (halve log, cut each half in thirds, then cut each piece into thirds again).
- Brush a 9-by-13-inch baking pan with butter. One at a time, flatten each piece of dough, then fold edges toward the center, pressing to secure, until a smooth ball forms.
