SWEET ONION CASSEROLE

5 large sweet onions, halved and sliced
1/2 cup butter
1/2 cup crushed butter-flavored crackers (about 12 crackers)
1/2 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large skillet, saute onions in butter until tender. Place half of onions in a greased 2-qt. baking dish; sprinkle with half of the cracker crumbs and cheese. Repeat layers. , Bake, uncovered, until golden brown and bubbly, 25-30 minutes.

8 medium onions, sliced
5 tablespoons butter, divided
2 tablespoons all-purpose flour
Dash pepper
3/4 cup beef broth
1/4 cup sherry or additional beef broth
1-1/2 cups salad croutons
1/2 cup shredded Swiss cheese
3 tablespoons grated Parmesan cheese

Steps:

  • In a large cast-iron or other ovenproof skillet, saute onions in 3 tablespoons butter until tender. Stir in flour and pepper until blended; gradually add broth and sherry. Bring to a boil; cook and stir until thickened, about 2 minutes., In a microwave, melt remaining butter. Add croutons; toss to coat. Spoon over onion mixture. Sprinkle with cheeses. , Broil 3-4 in. from the heat until cheese is melted, 1-2 minutes.

This is truly a simple and wonderful sidedish made with sweet onions in a cream sauce. It can go with just about any meal! (Hint: if you will refrigerate your onions before cutting them, you won't cry!)

5 large sweet onions, cut into 1/4 inch slices and separated into rings
¼ cup margarine
¼ cup sour cream
¾ cup grated Parmesan cheese
10 buttery crackers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt the margarine in a large skillet over medium heat. Add onions; cook and stir until tender. Turn off the heat, and stir in the sour cream and Parmesan cheese. Transfer to the prepared baking dish, and crumble the crackers over the top.
  • Bake uncovered for 30 minutes in the preheated oven, until the top is browned and the sauce is bubbly.

4-6 chicken legs
1 box cornbread mix
4-6 stalk s of celery
1 medium onion
1 can cream of chicken soup
1 egg
1 box Stove Top Stuffing
1 can milk

Steps:

  • Boil 4-6 chicken legs. Debone and chop.
  • Prepare cornbread mix, crumble cornbread into baking dish. Cut up celery and onion and cook in water. Pour over cornbread to soften. Stir in cream of chicken soup, egg, Stove Top Stuffing Mix and chicken. Add milk. Stir until mixture is soupy. Add warm water, if necessary.
  • Bake at 350°F for 1 hour.

My aunt gave me this recipe one year just before thanks giving so I could make a side dish for the family gathering . It worked great for a side dish and been a favorite of mine ever since.. The secret is Vidalia onions but for me, it's sweet memory's of holidays past!

6 medium vidalia onions
1 (12 ounce) can cream of mushroom soup
1/2 teaspoon salt
1 tablespoon butter
1/2 teaspoon pepper
herb flavored salad crouton (to garnish)

Steps:

  • Fill a buttered casserole dish with thinly sliced Vidalia onion rings.
  • add seasonings and soup
  • top with pats of butter and salad croutons.
  • bake at 350°F for 30 minutes.
  • Note: I have also used (captain wafers)crackers as the topping with equal success.
