RACHEL'S FANTABULOUS NESQUIK PEANUT BUTTER CHIP BROWNIES

Rachel's Fantabulous Nesquik Peanut Butter Chip Brownies image

I love how well Nesquik lends itself to baking! This recipe is wonderful for doubling to take to parties and potlucks. Concocted these based off my Pink Brownies recipe, except no additional cocoa powder is needed because there's already chocolate in them. Prep Notes- you can use self-rising flour if you omit the baking soda and salt; AP and cake flours need them or else it won't come out right. If you take out the butter and use all applesauce, use another 2-3 TB or else there won't be enough moisture. If using just one serving of applesauce, those little Mott's single serves are awesome. Can also sub 3 egg whites for the eggs. And of course, the peanut butter chips are what makes it special, but sub regular chocolate chips for traditional brownies.

Time 30m

Yield 12 brownies, 12 serving(s)

Number Of Ingredients 10

4 tablespoons butter
1/2 cup unsweetened applesauce (use dry cup set to measure! Not a liquid measuring cup)
1/2 cup dark brown sugar
2/3 cup chocolate-flavor Nestle Nesquik powder
1 teaspoon vanilla extract
2 large eggs
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup reese's peanut butter chips

Steps:

  • Semi-melt the butter in your microwave-- not completely melted, about halfway with the rest of the butter very malleable.
  • In a large mixing bowl, cream the butter, dark brown sugar, and applesauce together with an electric beater or whisk.
  • Beat in the Nesquik and vanilla.
  • Beat in the eggs or egg whites one at a time, beating well after each addition.
  • Gradually add in the cup of flour. It should have a very thick, creamy, chocolatey consistency like those frosting commercials.
  • Beat in the salt and baking soda-- skip this step and ingredients if you are using self-rising flour.
  • Whisk in the baking chips until well blended, and grease an 8x8 square pan with cooking spray.
  • Pour the mixture into the pan and make sure it is even.
  • Bake for 15-20 minutes at 375F, or until set.
  • **If doubling-- just double all the ingredients and follow the steps exactly the same, except you'll pour the mixture into a greased 11x7 pan and bake for about 25-30 minutes.

I-DON'T-FEEL-SO-GUILTY-EATING-THESE PMS NESQUIK BROWNIES

I-Don't-Feel-So-Guilty-Eating-These Pms Nesquik Brownies image

The title says it all!!!! I was in a furious chocolate fix and whipped these up. These are soft and flat brownies that aren't too cake-like. Why should you not feel as guilty? 1) The Nesquik's got enough sugar, no additional sugar needed. 2) Nesquik has vitamins and nutrients! 3) The egg white has minimal calories and provides protein, none of the cholesterol like using a whole egg. Feel free to use egg substitute or pourable egg whites. 4) Canola oil and unsweetened applesauce are better for you than butter or margarine. 5) No added salt! 6) You're being attacked by spider monkeys from the inside, therefore calories don't count during this time.

Time 25m

Yield 9 brownies (like you'll share these? ;) ), 9 serving(s)

Number Of Ingredients 8

1 1/4 cups chocolate-flavor Nestle Nesquik powder
1 cup unbleached all-purpose flour
1/2 teaspoon baking powder
1 teaspoon vanilla
1 egg white
4 tablespoons canola oil
1/2 cup unsweetened applesauce (use dry cup set to measure, not liquid cup)
1/3 cup chocolate chips (I used peanut butter chips last time)

Steps:

  • Sift the Nesquik, flour, and baking powder together in a large bowl, and make a well in the center.
  • Add all the wet ingredients (vanilla, egg white, oil, and applesauce) into the well and whisk well to fully incorporate, should be a very nice fudgy batter with no dry bits.
  • Add the chocolate chips or other baking chips into the mix, and beat them in well.
  • Grease a 9 x 9 pan with cooking spray, and pour the batter into it. Make sure it's evenly spread.
  • Bake at 375F for 15-20 minutes or until set. Let cool for at least 15 minutes prior to cutting and eating. (As hard as it is to resist the temptation and you've been hunting chocolate like a jungle critter stalking its prey all day!).

EASY MICROWAVE MUG BROWNIE (WITH NESQUIK!)

EASY MICROWAVE MUG BROWNIE (WITH NESQUIK!) image

Categories     Chocolate     Dessert     Quick & Easy

Yield 1

Number Of Ingredients 9

• 4 tbsp flour
• 4 tbsp Nesquik
• 1 tbsp sugar
• A dash of salt
• 1/8 tsp baking powder
• 3 tbsp oil - flavorless, preferably canola oil
• 3 tbsp milk*
• A couple drops of vanilla
• Optional: chocolate chips, nuts, etc; amount of your choice

Steps:

  • 1.) Combine all the dry ingredients in a microwave-safe mug until thoroughly mixed. 2.) Pour in wet ingredients on the dry ingredients and stir until there are no clumps. 3.) Microwave for 1 minute and 20 seconds in a 1000 watt microwave.** Footnotes: * Since I don't drink regular milk, I used soymilk. I prefer it to regular milk since I was lactose intolerant until I was a teenager. Since soymilk has protein, I think it adds body to the brownie since this recipe doesn't use eggs. ** Microwave times may vary according to your own microwave. Microwave your brownie in increments at first try to make sure you don't overcook/undercook your brownie. --- • The less you microwave it, the gooier the brownie. You can even eat the batter itself! Don't worry; the batter has no eggs! • If you add more baking powder, the fluffier the brownie is. The less baking powder, it will rise less. I haven't tried this, but some mug brownie recipes opt out the baking powder to make their brownie gooier. You can try experimenting to your preferences especially if you don't have/want to buy baking powder. (Personally, I keep the baking powder and just microwave my brownie for less time if I want a gooey brownie.)
