SLOPPY JOE BAKE (OLD-FASHIONED)

Sloppy Joe Bake (Old-Fashioned) image

This is based on the original Bisquick Sloppy Joe Bake that you could get in the little yellow cookbook they sent out via postal mail. I looked for it but I couldn't find it so I dug out my copy from my personal cookbook. See my other recipe for baking mix if you do not want to use Bisquick.

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 13

1 lb ground beef
1 cup chopped onion
1 (15 ounce) can tomato sauce
1/2 cup ketchup
2 tablespoons unsalted butter
1/3 cup brown sugar (I use a little more than this, I like it sweet)
1 pinch white sugar
2 teaspoons mustard powder
1 1/2 cups baking mix (Bisquick or make your own)
1 cup milk
2 eggs
2 tablespoons sesame seeds (optional, toasted if desired)
2 teaspoons paprika

Steps:

  • Heat oven to 400°F Caramelize onions in skillet with butter on medium-low until golden and translucent (not brown), adding a pinch of white sugar about halfway through. Remove from heat, pour into ungreased 13x9x2 casserole dish.
  • Add beef to skillet, cook until brown, drain and rinse meat, add to casserole dish and mix well with onions, ketchup, brown sugar, mustard powder, and tomato sauce.
  • In a medium bowl, stir baking mix, milk and eggs with fork until just blended (do not over mix). See my other recipe for baking mix if you don't want to use Bisquick.
  • Carefully pour topping over beef -- VERY SLOWLY -- so it stays on top. Sprinkle with sesame seeds and paprika for garnish.
  • Bake 20-25 minutes or until light golden brown. Cut into squares and serve. Freezes and reheats beautifully.

BEEF STEAMBURGERS

Beef Steamburgers image

This is not a steamed burger but a sloppy joe type of sandwich. I'm sure you could also use ground chicken or pork for this. I'll have to try that myself!!

  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain. Add sloppy joe sauce; cook until heated through. Remove from heat; cool slightly.
  • On large cutting board, unroll dough sheet; cut into 8 squares with sharp knife or pizza cutter. Line each muffin cup by pressing 1 dough square in bottom and up side of cup. On same cutting board, cut cheese slices into quarters, and place one quarter in bottom of each dough-lined cup; divide sloppy joe mixture evenly into each cup, about 1/4 cup each. Top each with remaining quarter of cheese.
  • Bake 14 to 18 minutes or until dough is deep golden brown and filling is heated through. Cool in pan 5 minutes; using metal spatula, run around edge of each muffin cup to remove from pan. Serve with pickle slices.
