WILD RICE SOUP

Steps:
- In a medium saucepan, combine the rice, oil and water; bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Meanwhile, in a Dutch oven, cook the onion, celery and carrot in butter until vegetables are almost tender. Stir in flour until blended; cook and stir for 2 minutes. Slowly stir in broth and undrained rice. Bring to a boil; cook and stir until slightly thickened, 2 minutes. Reduce heat; stir in the cream, rosemary and salt. Simmer, uncovered, until rice is tender, about 20 minutes.

NATIVE AMERICAN RECIPE: WILD RICE SAUTé WITH SWEET POTATO
Steps:
- Cook the wild rice according to the package directions. This will take about an hour.
- While the rice cooks, heat a small skillet over medium-high heat until hot. Add the garlic cloves and cook until they start to blacken. Toss and lightly blacken on all sides. remove from heat and place into a small bowl to cool. Once the garlic cloves are cooled, finely chop them.
- Heat a medium- to large-sized pan. Add the olive oil and add the onions and sauté, stirring for 4 minutes to prevent burning. Add the blackened garlic and sauté for 2 more minutes, stirring constantly to prevent burning. Add the mushrooms and cook, stirring, for 4 to 6 minutes. Add the dried cherries or cranberries and stir. Cook for another few minutes and then add the corn kernels. Stir and cook for an additional 1 to 2 minutes. Add the cooked rice, salt, and pepper. Stir for two minutes more, until completely hot. Ed. Note: I used about 1 1/4 teaspoons of salt.
- Remove from heat, garnish with fresh sliced scallions, and serve immediately. This wild rice sauté can be served on its own, or over a roasted, halved sweet potatoes that have been drizzled with a mixture of 1 cup maple syrup, juice of 1 lime, and 2 teaspoons mild to medium chili powder.
NORTHWOODS WILD RICE
My recipe uses a product native to the north-central United States, wild rice. Wild rice is not a rice at all, but rather a grass seed. It was a staple in the diet of the early American Indians and remains a favorite today because of its crunchy texture. This dish is especially good served with poultry.

- Place rice, water and salt in a heavy saucepan. Bring to a boil. Reduce heat to simmer; cook 45 minutes or until tender. Uncover and fluff with a fork. Simmer for 5 additional minutes. Drain any liquid. While rice is cooking, fry bacon until crisp. Drain on paper towels. In a skillet, melt butter and saute onion, celery and mushrooms until tender. Add rice, seasoned salt and pepper. Heat through. Just before serving, top with cashews and reserved bacon. , For a make-ahead dish, place cooked rice mixture in a 2-qt. casserole; top with cashews and bacon. Refrigerate until ready to reheat. Bake at 350° for 20-30 minutes.

Steps:
- 1. Rinse wild rice under running water. Bring rice and water to a boil. Lower heat, cover and simmer slowly until rice curls and forks at the ends
- 2. While rice is cooking, take a large handful of bacon ends and pieces and fry until bacon is fully cooked. Remove meat and slice into small bits.
- 3. Mix fat and bacon bits into rice at anytime while it is still cooking.

Steps:
- Place water in medium saucepan, add wild rice and bring to boil over medium heat.
- Reduce heat to low, cover and simmer for about 45 minutes.
- Do not drain; set aside.
- Melt butter in 5 quart Dutch oven or kettle over medium heat.
- Add onion and mushrooms and saute about 3 minutes, until vegetables soften.
- Add rosemary.
- Add flour gradually to mushroom mixture, cooking and stirring frequently over medium-high heat, until mixture boils.
- Add chicken broth; bring to a boil, boil 1 minute.
- Stir in reserved wild rice and any remaining liquid, salt and black pepper.
- Stir in whipping cream and sherry; do not let boil.
- Serve immediately.

- Melt the butter in a saucepan, and saute the onions until they are tender.
- Blend in the flour.
- Slowly stir in the broth.
- Cook on med-high heat, stirring constantly until the mixture comes to a boil.
- Boil and stir for 1 minute.
- Add the wild rice, salt, ham, carrots and almonds.
- Simmer 5 minutes.
- Blend in the half and half and the sherry and heat.
- Serve Hot.

- Heat oil in a large pot over medium heat. Stir in garlic, onion, and celery, and cook until the onion has softened and turned translucent, about 5 minutes. Stir in flour, and cook for 3 minutes more. Pour in the vegetable broth, then bring to a boil. Reduce heat to medium-low, and simmer for 10 minutes, stirring frequently.
- Stir in wild rice, carrot, almonds, and red pepper flakes; return to a simmer, and cook until the carrots are tender, about 5 minutes. Stir in half and half, and cook until warmed through. Season to taste with salt and pepper before serving.
