INDIVIDUAL FRUIT PIES

Individual fruit pies image

These little pies are filled with a luscious fruity mix, spiked with a little alcohol. They remind me of the fruit pies my Nan used to make: a real treat, especially when served warm with whipped cream. I've given you three fillings to choose from; each uses the full quantity of pastry.

Yield Makes 12 small pies

Number Of Ingredients 23

200g/7oz plain flour, plus extra for dusting
2 tbsp icing sugar
100g/3½oz unsalted butter, chilled, cut into 1cm/½in cubes
1 free-range egg, lightly beaten
1 tsp lemon juice
7 medium eating apples (approximately 1kg/2lb 4oz), peeled, quartered and cored
25g/1oz unsalted butter
75g/2½oz caster sugar, plus extra for dusting
1 lemon, finely grated zest only
50ml/2fl oz calvados
2 tbsp mascarpone
7 medium pears (approximately 1kg/2lb 4oz), peeled, quartered and cored
25g/1oz unsalted butter
75g/2½oz caster sugar, plus extra for dusting
1 lemon, finely grated zest only
50ml/2fl oz perry
2 tbsp mascarpone
9 apricots (approximately 500g/lb 2oz), halved and stoned
25g/1oz unsalted butter
75g/2½oz caster sugar, plus extra for dusting
50ml/2fl oz amaretto
2-3 tbsp milk, for brushing
granulated sugar, for sprinkling

Steps:

  • For the sweet shortcrust pastry, mix the flour and icing sugar together in a bowl. Add the butter and rub it in lightly with your fingertips until the mixture resembles fine breadcrumbs. Alternatively, do this in a food processor or a mixer and then transfer to a bowl.
  • In a separate bowl or jug, mix the egg with the lemon juice and two tablespoons of water. Make a well in the centre of the flour mixture and pour in the egg mix. Using a table knife, work the liquid into the flour to bring the pastry together. If it seems too dry, add a splash more water. When the dough begins to stick together, use your hands to gently knead it into a ball. Wrap in cling film and rest in the fridge for at least 15 minutes.
  • To make any of the fillings, first cut the fruit into 1cm/½in pieces.
  • Melt the butter in a large frying pan or deep saucepan set over a medium heat. Add the fruit, sugar, lemon zest (if applicable) and the alcohol. Simmer for about 10 minutes, stirring from time to time, until the fruit is tender and most of the liquid has evaporated.
  • Leave the fruit mix to go cold, mix in the mascarpone (if applicable), then chill the mixture.
  • Preheat the oven to 200C/400F/Gas 6.
  • On a lightly floured work surface, roll out the pastry to a thickness of 2-3mm. Using an 8.5cm/3½in plain cutter, cut out 12 circles and use them to line a bun tray (the kind you would use for fairy cakes, not a deep muffin tray). Re-roll the pastry as necessary and cut out 12 smaller circles, 6cm/2½in in diameter, for the lids.
  • Spoon the fruit filling into the pastry cases, taking care not to overfill them. Dampen the rim of the pastry with a little water and top each pie with a lid. Press a smaller cutter over the pie to seal the edge and trim away any excess pastry. Make a couple of small steam holes in the top of each pie.
  • Brush the pastry lid with a little milk and sprinkle with granulated sugar. Bake for 25-30 minutes, or until the pastry is crisp and golden-brown.
  • Leave to cool in the tin for five minutes before removing. Serve warm or at room temperature, within 24 hours of baking (or they'll start to lose their crispness).

MIXED MINI PIES

Time 1h45m

Yield 12 mini pies

Number Of Ingredients 34

Nonstick baking spray, for the muffin pan
2 store-bought, rolled-up refrigerated pie crusts
1/2 cup uncooked rice
2 tablespoons all-purpose flour
2 tablespoons quick-cooking oats
2 tablespoons packed brown sugar
2 tablespoons salted butter, melted
3 ounces cream cheese, softened
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Pinch kosher salt
4 tablespoons cherry pie filling
4 tablespoons blueberry pie filling
3 tablespoons grape jam (not jelly)
Zest of 1/2 lemon
2 teaspoons crushed peanuts
2 large strawberries, diced small
1 teaspoon granulated sugar
Splash vanilla extract
1 tablespoon store-bought caramel sauce
1 tablespoon toasted sliced almonds
1 ounce white chocolate
1/2 teaspoon coconut oil
Canned whipped cream, for topping
1 tablespoon creamy peanut butter
1/2 teaspoon coconut oil
4 tablespoons lemon curd
6 fresh raspberries
Powdered sugar, for dusting
2 fresh mint leaves
4 tablespoons chocolate-hazelnut spread
2 tablespoons graham cracker crumbs
1 tablespoon salted butter, melted
1 large marshmallow

Steps:

  • For the pie crusts: Preheat the oven to 425 degrees F. Coat a 12-cup muffin pan with baking spray.
  • Unroll the pie crusts on a clean surface. Cut 6 circles from each crust (12 total) with a 3 1/2-inch plain-edged round cutter. Press a circle of dough into each of the 12 cups of the muffin pan, lightly pressing the dough up the sides (they will not reach the tops of the cups). These will be your pie crusts.
  • Poke the bottom of 4 of the pie crusts with a fork and place cupcake liners into the poked crust cups only. Fill each liner with 2 tablespoons uncooked rice. Refrigerate the pan while you prepare the fillings.
  • For the crumble topping: Mix together the flour, oats and brown sugar in a small bowl. Stir in the melted butter until well combined. Set aside until ready to use.
  • For the fillings: Begin filling the dough cups. (The 4 cups with the cupcake liners filled with uncooked rice will remain that way during the bake and will be filled after the bake.) Mix together the cream cheese, powdered sugar, vanilla and salt in a small bowl until well combined. Divide the cream cheese mixture between 2 of the empty dough cups. Divide the cherry pie filling between 2 of the remaining empty dough cups. Divide the blueberry pie filling between 2 of the remaining empty dough cups. Divide the grape jam between the remaining 2 empty dough cups.
  • Mix half of the crumble topping with the lemon zest in a bowl. Divide the mixture over the top of the 2 pie dough cups filled with the blueberry pie filling to make blueberry lemon crumble pies. Mix the remaining crumble topping with the crushed peanuts in a bowl. Divide the mixture over the top of the 2 pie dough cups filled with the grape jam.
  • Bake the pies: Transfer the pan to the oven and bake until the crumbs on the 4 crumb-topped pies are golden, about 15 minutes. Allow to cool completely.
  • Finish the pies: Remove the cupcake liners filled with rice from the 4 baked and unfilled crusts.
  • For the strawberry cream pies: Toss the diced strawberries with the granulated sugar and a splash of vanilla in a small bowl. Divide the mixture between the 2 pies filled with the cream cheese mixture. Drizzle the pies with the caramel sauce.
  • For the cherry pies: Divide the toasted almonds over the 2 pies filled with the cherry filling. Microwave the white chocolate and coconut oil together in a microwave-safe bowl for 15 seconds or until warm. Stir well, then drizzle evenly over the 2 pies. Top the center of each pie with a bit of whipped cream.
  • For the PB and J pies: Microwave the peanut butter and coconut oil together in a microwave-safe bowl for 15 seconds or until warm. Stir well, then drizzle evenly over the 2 pies filled with the grape jam and peanut-crumble topping.
  • For the lemon raspberry pies: Divide the lemon curd between 2 of the empty baked pie crusts. Top each pie with 3 raspberries. Dust each pie with a bit of powdered sugar and finish with a mint leaf.
  • For the s'mores pies: Divide the hazelnut spread between the last 2 empty baked pie crusts. Mix the graham cracker crumbs and melted butter together in a small bowl. Sprinkle half of the mixture over each pie. Cut the marshmallow in half crosswise. Top each pie with one half of the marshmallow. Using a kitchen blowtorch (brulee torch), toast each piece of marshmallow to the desired level of toasted-ness.
  • Transfer the pies to a cake stand or platter and enjoy!

NANA'S SMALL FRIED APPLE PIES RECIPE - (4.4/5)

Nana's Small Fried Apple Pies Recipe - (4.4/5) image

Provided by jab120638

Number Of Ingredients 10

PIES:
2 Pillsbury pie crusts
2 apples
1/4 cup sugar optional
1/4 teaspoon cinnamon, optional
ICING:
1 teaspoon softened butter
1 cup powdered sugar
1/2 teaspoon vanilla
1 to 3 tablespoons milk

Steps:

  • Peel the apples and chop them up. Put them in a pot with the sugar and cinnamon. Heat on low until apples are soft and sugar is dissolved. Remove from pot and mash into very small chunks. Roll out the pie crust on a lightly floured board. Using a 3 inch cookie cutter, cut out about 7 circles. Place a scant teaspoon of the cooked apples in the middle of the round. Using very cold water and your fingers, wet all the way around the pie, fold it over and crimp edges with the fork and make a slit in the top. Put a little oil in a skillet and let it get hot first, then place the little pies in the skillet and cook for 2 to 3 minutes on each side. Take them out of the oil when they are cooked and place on a wire rack with paper towels on them so that will take off the excess oil. Whisk icing ingredients together until smooth and drizzle over warm pies. Serve.
