NANA'S POT ROAST

My Nana cooked this on Sunday's in the winter, it has the best flavor. If the gravy isn't thick enough when it's done add a flour slurry to thicken to desired consistency.

1 package French onion soup mix
1 can cream of mushroom soup
1 1/2 cups water
3 lbs bottom beef round rump roast
assorted root vegetables

Steps:

  • Flour and brown Roast on all sides.
  • Mix Water, Soup Mix and Mushroom soup together.
  • Add mixture and roast to dutch oven, cover tightly.
  • Cook at 300deg for 2-2-1/2 hrs or until internal temp reaches 140deg.
  • I add carrots and celery to cook with roast for added flavor, but I cook vegetables for serving separately so they don't get too mushy.

This recipe was basically a throw together dinner that turned out amazingly good. DH said it tasted just like how his Nana used to make pot roast. Even the kids loved it...definitely a keeper! We used vegetables from our garden, surely you can adjust the kind of vegetables to your liking though!

3 -5 lbs boneless pot roast
1 (8 ounce) packet Italian salad dressing mix
2 summer squash, cubed
4 potatoes, cubed
2 cups fresh green beans, snapped
1/2 green pepper

Steps:

  • Place all ingredients in crock pot. Add water until everything is submerged. Cook on low 8 hours.
  • To serve: remove meat to platter, remove vegetables with a slotted spoon to a large bowl.
  • For Gravy: keeping crockpot on low, add gravymaster (approx. 1 tbsp) pepper to taste, and flour to liquid in pot. Mix with wire wisk, adding flour and pepper until desired consistency is reached. Strain through a fine mesh colander into gravy bowl, and serve over meal.

3 lbs chuck arm pot roast
1 (8 ounce) 98% fat-free cream of mushroom soup
1 (8 ounce) can nonfat beef broth
24 ounces dry red wine
8 -12 garlic cloves
1 (8 ounce) bag frozen pearl onions
1 cup sweet red pepper, sliced
20 small red potatoes
2 cups baby carrots
1 (12 ounce) baby portabella mushrooms, halved

Steps:

  • Put all ingredients together and put in the oven covered in tinfoil at 325 degrees for 4-6 hours. The meat should fall apart. Also can be done in crock pot for 8-10 hours. Serve with Crusty warm bread.

1 onion
2 garlic cloves
4 lbs rump roast
2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
3/4 cup red wine
3 tablespoons flour
1/4 cup water

Steps:

  • Chop the onion and the garlic.
  • Put the onions and garlic in the crock pot and set the roast on the top.
  • Sprinkle with the salt, pepper, rosemary and thyme.
  • Pour in the wine.
  • Cover and cook on the High setting until the meat is very tender about 5 hours.
  • Remove the roast to a serving plate.
  • Measure 2 cups of the cooking liquid into a saucepan.
  • Stir together the flour and water and stir it into the cooking liquid.
  • Bring to a boil, stirring, reduce the heat and simmer 10 minutes.
  • Slice the roast and serve with the gravy.

2 tablespoons vegetable oil
3 lbs round roast
salt and pepper
8 garlic cloves
1 large onion
2 stalks celery
3 carrots
4 medium potatoes
8 large mushrooms
1 bay leaf
2 cups beef broth
1/2 cup red wine
4 tablespoons flour

Steps:

  • Chop vegetables into chunks. (Peel the garlic, but leave it whole.).
  • Place half of the vegetables in the crock pot.
  • Heat oil in a large pan over medium high heat.
  • Season the roast on all sides with salt and pepper. Sear each side in the hot pan.
  • Place roast in crock pot, then add the rest of the vegetables and the bay leaf.
  • Combine broth and wine, and pour inches.
  • Cook 8-10 hours on low.
  • About 30 minutes before serving, remove excess liquid, leaving enough in the crock to make gravy.
  • Combine flour with a small amount of water to make a smooth paste, then stir in some of the liquid from the crock. Pour this mixture back into the crock and cover. Continue to cook until thickened.
  • Discard bay leaf and garlic cloves.
