NACHO CHEESELESS SAUCE
This vegan replacement for nacho cheese will be a hit the next time you need a snack or are having a party.It's from the Teen's Vegetarian Cookbook. You can use lemon juice or Dijon mustard if you don't like nutritional yeast.

Steps:
- Mix water and cornstarch.
- In a blender, puree tofu, salsa, salt, turmeric, and water-cornstarch mixture. Add nutritional yeast.
- Heat oil in a skillet and make bottom of pan is coated. Pour in tofu mixture and spread to cover pan.
- Cook tofu mixture on low heat for about 5 minutes, without stirring.
- Use a wooden spoon or spatula to mix up the tofu, stirring to get a creamy consistency.
- Pour/scrape sauce into a bowl and serve with any combination of chips, beans, lettuce, and/or tomato.

- Melt butter in saucepan. Add flour and whisk until combined into paste that bubbles and starts to thicken.
- Add the milk to skillet and continue whisking. Once the milk is incorporated, raise the heat to high and bring to a boil.
- As soon as it boils, lower the heat and reduce to a simmer. Allow the sauce to thicken gently.
- Add the cayenne pepper and salt and whisk to combine.
- Add the cheese and gently stir, allowing the cheese to melt. When the cheese is completely melted and the mixture is smooth in consistency, the nacho cheese sauce is ready to serve.

Creamy smooth and delicious vegan version of nacho cheese sauce. Great for any Mexican dish, but I like this as a dip for cut up veggies. I've used canned tomato when I had no fresh, and it turned out well, too. Found on living-foods.com

- Place the roughly chopped carrot in a small saucepan of water. Bring to a boil and let cook over medium heat for 15-20 minutes, or until carrot pieces are soft and easily piercable with a fork.
- Add the boiled carrot, Soft Tofu (1 cup), onion, and Nutritional Yeast (2 tablespoon) to a blender.
- Next add the Lemon Juice (2 teaspoon), Distilled White Vinegar (1 teaspoon), Garlic Powder (1 teaspoon), Paprika (1 teaspoon), Chili Powder (1/2 teaspoon), Ground Cumin (1/2 teaspoon), Dijon Mustard (1/2 teaspoon), and Salt (1/4 teaspoon).
