MY THEME PARK STYLE TURKEY LEGS
There are many versions out there on how to make those theme park turkey legs that I have found. Some were way too salty or smokey for us. So I experimented and came up with this simple version that was close as we could get to those you get at the parks. We just use a simple back yard smoker, nothing fancy and they tasted so good.

- This is my version that worked well for us. I brine for 24 hours. Heat your smoker to 220 degrees with real charcoal chunks. Add your favorite wood chips if you like. We then smoke the legs until done, it's about 4 hours for nice sized legs. The turkey comes out with a nice "hammy" texture. They may not be exactly like the theme park turkey legs but sure comes close enough for us.
- Heat 1/2 gallon of water or stock to a boil to dissolve the salt, brown sugar and base if using.
- Allow to cool to room temperature.
- Add to your brine pot along with 1 gallon of ice water and brine for 24 hours.
- ***Note: Apple wood or Cherry wood chips are a sweeter milder smoke than Hickory wood.

FESTIVAL AND THEME PARK TURKEY LEGS
We love the turkey legs they serve at the local Flea Market, the Colorado Rennaissance Festival and at our theme parks, so we sought out the recipe and now use this excellent version to indulge in that tasty finger [hand] food.This is supposedly the authentic recipe used by turkey leg vendors at fairs and festivals. Boiling the turkey legs first may seem like cheating but if you have to make thousands of them to sell you don't want to have them sitting on your grill for 20 to 30 minutes before you sell them. Original recipe from the About.com website. For easy serving, after grilling, wrap the bottom end of the legs in aluminum foil and a napkin or paper towel to make a great "holder".

Steps:
- Combine soda, sugar, hot sauce, red pepper flakes, black pepper and onion slices in a large pot.
- Bring to a low boil and add turkey legs.
- Boil over a medium heat for about 30 minutes or until the turkey legs register an internal temperature of 165 degrees F.
- Meanwhile, preheat grill.
- Place onion slices on the heated grill and put the turkey legs on top of the onion slices.
- Brush with honey and sprinkle with steak seasoning and pepper.
- Grill over a medium heat for about 15 minutes watching carefully to avoid burning.
- Turn as needed.
- The skin should be crispy brown when the turkey legs are done.

- Put the turkey legs in a gallon freezer bag and pour the marinade on top. Rub into the turkey legs. Store in the fridge overnight.
- Roast turkey legs in the oven at 325 degrees F for 45 minutes, or until internal temperature reaches 160 degrees F. Remove from oven.

- Make the curing liquid by dissolving the salt, brown sugar, and curing salt (Prague powder) in cool water. Stir in the black peppercorns and the bay laves.
- Place the turkey legs in a gallon zip top bag, and pour the curing liquid over the legs. Put the bag on a place and cure for 24 hours in the refrigerator.
- Remove the turkey legs from the refrigerator and take the legs out of the brine. Give them a quick rinse under cool water and pat them dry.
- Preheat your smoker to 225 degrees F. Place your turkey legs directly on the smoker. Close the lid and smoke the turkey legs for 1 1/2 hours or until the internal temperature of the legs reaches 175 degrees F.
